½ cup extra-virgin olive oil
3 cloves garlic, minced
2 lemons, juiced
1 (2 pound) roasted chicken, meat removed from bones and cut into bite-size pieces
1 bulb fennel, cored and cut into thin slices
3 stalks celery, thinly sliced
1 red onion, thinly sliced
½ cup chopped fresh parsley
½ cup mayonnaise
1 lemon, zested
salt and ground black pepper to taste
1 bunch arugula

Steps:

  • Heat olive oil in a skillet over medium heat. Cook and stir garlic until softened and golden brown, 3 to 5 minutes.
  • Stir in lemon juice; set aside to cool.
  • Toss chicken, fennel, celery, red onion, and parsley together in a large bowl.
  • Stir in the cooled garlic and olive oil, mayonnaise, lemon zest, salt, and black pepper.
  • Arrange arugula on a serving platter; serve chicken salad on arugula.

1 lb. Italian Grilled Chicken
8 c. Romaine lettuce, chopped or any other mixed greens
1 pint cherry tomatoes, halved
1 c. (8 oz.) hard salami, diced
1 c. (8 oz.) fresh mini mozzarella balls (pearl or marble sized)
1 c. (8 oz.) kalamata or black olives, pitted
1 c. (8 oz.) jarred yellow banana peppers, sliced
1/2 c. (4 oz.) red onion, diced

Steps:

  • Grill chicken according to directions. Let cool completely and slice.
  • Into four meal prep containers, add two handfuls each (approximately 2 cups, each) of the lettuce to the bottom of each container. To each container add 4 oz of the sliced chicken, 1/2 c. of tomatoes, 1/4 c. salami, 1/4 c. mozzarella, 1/4 c. olives, 1/4 c. peppers, and 2 Tbsp. of red onion.
  • If making dressing, add to separate dressing cups and keep separate of the salads.
  • Place tight fitting lids onto salad containers and refrigerate for up to 5 days.

For vinaigrette
1/4 cup red-wine vinegar
2 teaspoons Dijon mustard
2 tablespoons finely chopped shallot
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup extra-virgin olive oil
For salad
2 cups coarsely shredded cooked chicken (1/2 lb; from a rotisserie chicken)
1 cup bocconcini (small fresh mozzarella balls; 6 oz)
2 hearts of romaine (3/4 lb total), torn into bite-size pieces
1 (8-oz) jar roasted red peppers, rinsed, drained, and cut lengthwise into 1/4-inch-wide strips
1 cup assorted marinated brine-cured olives (5 oz)

Steps:

  • Make croutons:
  • Put oven rack in middle position and preheat oven to 400°F.
  • Toss bread cubes with oil and salt in a large shallow baking pan and spread in 1 layer. Bake, turning over once, until golden and crisp, about 8 minutes. Cool in pan on a rack.
  • Make vinaigrette and begin preparing salad while croutons bake:
  • Whisk together all vinaigrette ingredients except oil in a small bowl until combined. Add oil in a slow stream, whisking until emulsified.
  • Toss chicken and bocconcini together with 1/4 cup vinaigrette in a bowl and let stand 10 minutes to allow flavors to develop.
  • Make salad:
  • Toss together romaine, red peppers, olives, chicken and bocconcini mixture, croutons, and remaining vinaigrette in a large bowl until combined.

2 cups roasted red and yellow bell peppers, drained, patted dry, and coarsely chopped
1 1/4 cups paper-thin slices red onion
3/4 cup chopped fresh Italian parsley leaves
3/4 cup slivered almonds, toasted
1/2 cup drained capers
1 1/2 cups (about) Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
24 butter lettuce leaves (from about 3 large heads)
1 (4-ounce) piece Parmesan, shaved with vegetable peeler

Steps:

  • Toss the chicken, bell peppers, onion, parsley, almonds, and capers in a large bowl with enough vinaigrette to moisten. Season the chicken salad with salt and pepper, to taste.
  • Arrange 1 large lettuce cup and 1 small lettuce cup on each plate, overlapping slightly. Spoon the chicken salad into the lettuce cups. Drizzle more vinaigrette over the salads. Sprinkle with the Parmesan and serve.
  • Do-Ahead Tip: The chicken salad can be prepared 4 hours ahead and refrigerated. Just before serving, spoon the salad into the lettuce cups.

3 cups dried elbow macaroni
1/2 cup plus 2 tablespoons extra-virgin olive oil
1 cup cubed rotisserie chicken
1 cup diced English cucumber (about 1/3 cucumber)
1 cup halved cherry tomatoes
1/2 cup chopped pitted Nicoise olives
1/2 cup chopped roasted red peppers (about 1 whole)
1/2 cup 1/4-inch diced hard salami (about 4 ounces)
1/4 cup diced red onion (about 1/2 small)
1/4 cup chopped fresh flat-leaf parsley
4 ounces ricotta salata, grated, or crumbled feta cheese
1/3 cup red wine vinegar

Steps:

  • Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente, according to the package directions. Drain in a colander, rinse with cold water and shake until very dry. Transfer the pasta to a large mixing bowl, drizzle 2 tablespoons of the olive oil over it and toss well to coat.
  • Add the chicken, cucumber, tomatoes, olives, peppers, salami, onions and parsley. Season with salt and toss well to combine.

  • To Marinate: Pour salad dressing into a large, resealable plastic bag. Add chicken breasts, seal bag and shake to coat. Place in refrigerator for at least 1 hour or overnight (the longer you marinate, the more taste the chicken will absorb).

This is an old favorite of mine from childhood... but nowadays goes great for tea-parties when served on toast wedges or just plain, served stuffed into a tomato for presentation... or my husbands favorite way: sandwich style topped with a few pieces of crisp bacon with a slice of avocado between two pieces of white bread! This is great for using up leftovers from Rotisserie Chicken...

2 -3 cups cooked chicken (I use food processor, but you can also use 2 forks & shred to a consistency similar to tuna or pulle)
1/3 cup Hellmann's mayonnaise
4 ounces Philadelphia Cream Cheese, softened
1/2 cup chopped celery
1/3 cup chopped onion
1/2 cup pitted black olives, drained & chopped
1 (6 ounce) jar marinated artichoke hearts, drained & chopped
1/4 cup pinoli nuts, chopped (pine nuts)
to taste salt
to taste pepper
to taste garlic powder
1 dash oregano

Steps:

  • I use my mini-food processor to chop all of the ingredients except the chicken -- I just give them a few "pulses" per ingredient so they are not pureed in the food processor.
  • Mix mayonnaise, and cream cheese together in bowl until creamy. Stir in chicken & remaining ingredients. Chill until ready to serve.
  • *Can add more or less of the mayonnaise & cream cheese mixture according to taste/texture desired.
  • Note: you can buy the chicken pre-cooked or make it ahead of time. I recommend using all white meat.
  • Also, you can substitute the pinoli nuts with chopped almond slivers if budget-conscious.

4 boneless skinless chicken breast halves
3 tablespoons olive oil
1 cup walnuts, chopped
1 red pepper, cut in 1 inch pieces
6 ounces marinated artichoke hearts
1/2 cup fresh peas or 1/2 cup frozen peas
1 teaspoon dried oregano
lemon, juice of
salt and pepper
2 -3 green onions, diced

Steps:

  • Cook chicken on stovetop by placing in 1/2" boiling water, bring back to a boil and reduce to a simmer, turning after 5 minutes Cook until done, then cool and chop into cubes.
  • Heat oil in skillet over medium-high heat.
  • Add walnuts for 1-2 minutes, stirring as not to burn.
  • Add peppers, stir.
  • Drain juice from jar of artichokes into skillet.
  • Chop artichokes into large pieces and add to skillet.
  • Add peas and oregano.
  • Cook about 3 minutes.
  • Pour into a bowl.
  • Add lemon juice and season with salt and pepper.
  • Add chicken and stir.
  • Sprinkle onions over salad.
  • Serve warm or cold.
