Steps:
- Cook the pasta in a pan of boiling water as instructed on the packet (usually about 10 minutes). Remove the pasta from the water and drain about 2 minutes BEFORE the end of the cooking time.
- Meanwhile, heat the olive oil in a large pan. I like to use a wok as it's good for frying and cooking the sauce in.
- Fry off the bacon for 5 mins, then add the chicken and fry for about 5 minutes until coloured all over.
- Add the onions, garlic and courgettes and cook until just softened and the chicken is cooked through. About 10 minutes.
- While everything else is cooking, put the cornflour into a mug and mix with a small amount of the measured milk until it forms a paste.
- Put the remaining milk into a sauce pan over a medium heat. Pour in the cornflour 'slurry' and whisk for about 5 minutes until it thickens, whisking often.
- Add half of the cheese to the white sauce, plus salt and pepper, and whisk until it's thick.
- Preheat the grill.
- Add the drained, cooked pasta to the bacon, chicken and vegetables, plus the sauce, and sprinkle the cheese on top.
- Put under the grill for about 10 minutes until crispy and bubbling.

ITALIAN - CHEESY BACON / CHICKEN PASTA BAKE
This is a recipe I threw together out of ingredients I wanted to use up in my pantry. If I must say so it was fantastic. The family loved it. Whats not to love with the use of bacon?...that is what set this dish off...I placed it on the top to bake, so as to stay crunchy. You may add it into the casserole if that's what you...

Steps:
- 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with cooking spray, set aside. Cook and drain your pasta. Set aside.
- 2. In a large skillet fry your bacon crisp, remove to a paper towel to drain.
- 3. Save about 4 tablespoons of bacon grease, and brown your seasoned chicken in the same skillet till juices no longer run pink.
- 4. In another large skillet or you can use the same one as chicken, once removed. Brown your onions and garlic with the olive oil. Till tender.
- 5. Next, add your tomatoes and cream, bring to a slow boil for 3 minutes. Reduce heat and simmer for a few minutes until begins to thicken some. Stir in the cream cheese and half the mozzarella cheese until thoroughly blended. Add the chicken to the sauce.
- 6. In the dutch oven I boiled my pasta in; add the pan of sauce to the pasta, and stir till evenly coated. Spread the pasta into the baking dish. sprinkle with remaining mozzarella. Then top cheese with oregano. And finally top with bacon.
- 7. Place the dish into the oven, and bake for approx 40 - 45 minutes or until bubbly. I then placed under a broiler to brown a bit more ( do not have to ). Let the pasta set for 5 minutes before serving. I served the pasta with buttered Vienna bread. Enjoy!

- Place a large pan of water over high heat and bring to a boil. Lightly season with sea salt, then add the pasta and cook for about 7-9 minutes.
- Look at the instructions on your pasta packaging. See how long it tells you to boil the penne for, and drain the pasta 3-4 minutes before this time.
- Whilst the pasta cooks, heat a skillet to medium heat, add the olive oil and the chicken and stir-fry for about 5 minutes, until the chicken is lightly browned on all sides.
- Heat a small skillet over medium heat, add the bacon and cook until crispy, for about 4-5 minutes, then transfer on a plate covered with kitchen paper to absorb the grease in excess.
- Drain the pasta al dente, and transfer the pasta back into the pan. Add in the tomato sauce, chicken and bacon and mix all the ingredients. Season with sea salt and black pepper to taste.
- Transfer the ingredients in a 6x8 inches baking dish or an oven-friendly pan, and sprinkle the Parmesan cheese and mozzarella all over the top.
- Bake the chicken and bacon pasta for around 15-20 minutes, or until the cheese on top is golden brown. If you want some nice crunchy brown spots, set the baking dish under the grill for 2-3 minutes extra. Remove from the oven, allow to cool slightly, sprinkle with chopped parsley and serve.
