GRILLED ITALIAN SAUSAGE BURGERS

- Heat coals or gas grill for direct heat. Mix beef, sausage and bread crumbs in large bowl. Shape mixture into 6 patties, about 1/2 inch thick and 3 1/2 inches in diameter.
- Cover and grill patties 4 to 6 inches from medium heat 12 to 15 minutes, turning once, until meat thermometer inserted in center reads 160°. Top patties with cheese. Cover and grill about 1 minute longer or until cheese is melted. Add bread slices to side of grill for last 2 to 3 minutes of grilling, turning once, until lightly toasted.
- Spread toasted bread with mayonnaise; top 6 bread slices with lettuce, tomato and patties. Top with remaining bread slices.

GRILLED ITALIAN HAMBURGERS
This is an absolutely wonderful grilled Italian hamburger. You may add a little garlic powder also, and top with a thin slice of Mozzarella cheese as well. I do suggest you make the full recipe as leftovers never last more than two days at my house. These are wonderful with a big slice of very sweet onion and catsup. Some people like to add a slice of Mozzarella cheese before popping them in the foil and before heating again.

- Mix the ground beef, sausage, onion, garlic, Italian seasoning, olive oil, salt, pepper, and anise seed together in a bowl until thoroughly combined. Chill in refrigerator at least 1 hour. Mix again after refrigerating. Divide the mixture into 12 portions and form into oblong burgers with rounded edges, approximately 4 inches wide and 12 inches long. They should be somewhat thin.
- Preheat an outdoor grill for medium heat, and lightly oil the grate. Also, preheat an oven to 250 degrees F (120 degrees C). Lightly brush the butter over the cut sides of the baguettes.
- Cook on the preheated grill until the burgers are cooked through, 7 to 8 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). About 5 minutes before the meat is finished, lay the open baguette halves on the grill and brown each side until toasted. Place each burger into the baguette, close the baguette, and then wrap snugly with aluminum foil.
- Bake the wrapped sandwiches in the preheated oven for 15 minutes before serving.

BEST ITALIAN SAUSAGE PIZZA BURGERS
Steps:
- Preheat grill (or grill pan) to medium/high.
- In a large bowl, mix together the sausage, pepper, garlic powder, oregano, and basil.
- Divide the meat mixture into 8 equal portions and shape each portion into burger patties.
- Grill the patties on a preheated grill (or grill pan) for approximately 7-8 minutes per side (cover for half of the cooking time).
- Meanwhile, in a grill basket (or a large stovetop skillet), season and cook the green peppers and onions with the salt and olive oil until they are slightly wilted and no longer crunchy. Stirring occasionally.
- Place the cheese on the burgers and cook just until the cheese has melted. Remove from the grill and keep warm.
- Spread the softened butter on both sides of the buns and season with garlic powder to taste.
- Place the buns (butter side down) on the grill, or skillet, and cook until they're browned and lightly crispy.
- Place a burger on a bun, top with prepared warmed marinara sauce, and the sauteed green pepper and onions.
- Serve hot.

- In a large bowl combine 1/2 c. Mozzarella cheese and seasonings. Add beef and mix until combines. Shape into four patties about 1/2 in thick.
- Grill burgers over medium heat or broil 4 inches from heat sources of 4-5 minutes on each side or until thermometer reads 160 degrees. Sprinkle with remaining cheese and grill covered 1-2 minutes longer or until cheese is melted. Remove from grill.

- Combine the ground turkey and the first 9 ingredients well - then, divide evenly and shape into burger patties, cover with plastic wrap and set aside.
- Cover a cookie sheet with tin foil, or - place a silpat on a cookie sheet & preheat oven to 325 degrees. Place the salami slices evenly (but not touching) on the covered cookie sheet. Bake salami in the 325 degree oven for 15 minutes - then, transfer salami slices to a plate covered with paper towels to absorb the excess oils.
- Grill burgers either on a hot outdoor grill, or cast iron stove top grill - approximately 5 minutes per side for medium rare - longer for well done (whatever your preference may be). Slice the Italian bread or Ciabatta into even slices - enough for 2 slices per patty & brush or use your 'misto' sprayer on one side with E.V.O.O. (Extra Virgin Olive Oil)& grill (oil side down) to get the grill prints on the bread. Once Burgers are cooked, remove to a platter where they can rest for approximately 5 minutes. - Preheat oven to 350 degrees F (175 degrees C).
- Place mushrooms in a food processor; pulse until finely chopped. Transfer to a roasting pan. Drizzle 2 tablespoons olive oil on top and mix. Sprinkle with salt.
- Bake in the preheated oven until tender, about 10 minutes. Cool to room temperature, about 15 minutes.
- Heat remaining 1 tablespoon olive oil in a large skillet over medium heat. Add kale; cook and stir until just wilted, 2 to 4 minutes. Let cool slightly, about 5 minutes.
- Transfer kale to the food processor; pulse until finely chopped.
- Combine mushrooms, kale, Italian sausage, and harissa in a bowl; mix together by hand. Form into 4 patties, taking care not to pack them too firmly.
- Heat an oven-safe grill pan or cast iron skillet over medium-high heat. Add patties; cook until browned, about 5 minutes. Flip.
- Transfer grill pan to the oven and continue cooking until second side is browned, about 8 minutes. Place a slice of mozzarella cheese on top of each patty and broil until cheese melts, about 1 minute.
- Serve patties on toasted buns with marinara sauce.
