2 red bell pepper, chopped
1 onion, chopped
1 (14 ounce) can diced tomatoes
1 (14 ounce) can beef broth
½ teaspoon Italian seasoning

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until about halfway cooked, 5 to 6 minutes; drain.
  • Heat olive oil in a skillet over medium heat; cook and stir sausage in the hot oil until browned and cooked through, 5 to 10 minutes. Add red bell pepper and onion; cook and stir until onion is softened, 5 to 10 minutes.
  • Stir tomatoes, beef broth, and Italian seasoning through the sausage mixture; bring to a simmer. Add bow-tie pasta to the sausage-broth mixture; simmer until pasta is cooked yet firm to the bite, 5 to 6 more minutes.

1 cup uncooked bow tie pasta

1-1/2 pounds ground beef
1 cup chopped onion
2 teaspoons minced garlic
4 plum tomatoes, cut into chunks
1/4 cup minced fresh basil
1/2 cup shredded Parmesan cheese

Steps:

  • In a Dutch oven, combine the first seven ingredients. Bring to a boil. With a spoon, press pasta into broth mixture. Reduce heat; cover and simmer for 15 minutes or until pasta is tender, stirring once., Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. , Add the beef mixture, tomatoes and basil to the broth mixture; heat through. Garnish with Parmesan cheese.

A very traditional Italian treat known by lots of different names in Italy. Typically made for Carnevale and Christmas.

3 large eggs
1/4 cup (2 oz) sugar
1/4 cup (2 oz) Scotch whisky (or any similar, clear liquor)
1/4 tsp salt
2 3/4 cups (12 oz) flour
powdered (confectioner's) sugar for dusting
oil, such as sunflower or grapeseed oil

Steps:

  • Using a stand mixer, place eggs, sugar, salt, and whisky in a large bowl and mix for two minutes or so (if making by hand, combine the ingredients, and stir well with a wooden spoon.)
  • Add one cup (in UK, just use a regular cup-no need to measure) of flour and mix well.
  • Add the remaining flour and mix until a slightly sticky dough forms.
  • With hands, shape dough into a ball and refrigerate, covered, for about an hour.
  • Remove from fridge and cut dough in half and roll out one piece very thinly, on floured workspace.
  • Dough will be elastic, but re-roll it if it gets too thick. Using a knife or cutter to cut into strips. Use a pasta rolling machine if you have one.
  • Cut a strip: no size is right or wrong, but about 6 or 7 inches is a good size. Make a little cut towards one end. Now place the opposite end through that slit, and pull through to make a ribbon shape. Repeat, until all of dough is used.
  • Meanwhile, heat some oil in a pot or deep fryer (I use a wok) until hot. Before dropping the pastry in the oil, pull and stretch each one, so that it is thinner (as they shrink after being shaped) then begin frying the pastries until puffed and light brown on each side.
  • Remove with strainer and place on a paper towel lined plate to cool.
  • When cool, sprinkle with powdered sugar (or decorate with icing, or honey.)

1 tablespoon sugar
1 tablespoon Worcestershire sauce
2 teaspoons chicken bouillon granules
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried thyme

Steps:

  • Remove casings from sausage; cut into 1-in. pieces. In a Dutch oven, brown sausage over medium heat. Remove sausage with a slotted spoon; drain, reserving 2 tablespoons drippings. Saute onion and green pepper in drippings until tender. Add garlic; cook 1 minute longer., Return sausage to the pan; stir in the remaining ingredients. Bring to a boil. Reduce heat. Simmer, uncovered, for 15-20 minutes or until pasta is tender, stirring occasionally.

Great unusual fried cookies--the original name is 'Cenci alla Fiorentina.' It came from my Italian cousins. I used these for a bake sale once and ran out before I even got started!

1 ½ cups all-purpose flour
1 ¼ teaspoons baking powder
¼ teaspoon salt
1 tablespoon white sugar
3 tablespoons butter
2 eggs, lightly beaten
1 quart vegetable oil for frying
1 cup confectioners' sugar
1 cup honey

Steps:

  • Mix the flour, baking powder, salt, and sugar together. Cut in the butter until well-blended. Stir in the eggs and mix thoroughly.
  • Knead dough on a floured surface until dough is elastic. Let dough rest for 1 hour.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Divide dough into 4 parts, keeping each piece covered until ready to use. Roll each piece into a thin rectangle, about 8x10 inches. Cut dough into strips about 8 inches long and 3/4 inch wide. Tie each strip into loose knot.
  • Fry cookies in hot oil 3 to 4 at a time, until golden brown. Transfer cookies to a paper towel-lined plate. Drain well and sprinkle with confectioners' sugar and honey, if desired. Serve hot or cold. Store any uneaten cookies in an airtight container (see Editor's Note).

3 tablespoons butter
1 yellow onion, diced
5 cloves garlic, drizzled with olive oil and roasted, skin on, for 30 minutes, or until tender, in the oven preheated to 400 F. Mince the roasted garlic.
8 oz. button mushrooms, sliced
2 tablespoons all-purpose flour
¼ cup white wine
2 cups grilled chicken breast, diced
½ cup sun-dried tomatoes in oil, chopped
2 cups chicken broth
3 cups whole milk
3 cubes chicken or vegetable bouillon (or 3 teaspoons granules)
2 tablespoons fresh parsley, chopped
½ cup grated Parmesan cheese
½ cup heavy cream
2 cups cooked bow-tie pasta, cooked according to package directions
Salt and pepper to taste
Fresh chopped parsley for garnishing

Steps:

  • Heat butter in a large Dutch oven over medium-high heat. Saute the onions until translucent, about 5 minutes. Add the roasted garlic and stir to combine. Add the mushrooms and cook until tender, another 4 minutes.
  • Add flour and stir to combine. Add the wine and simmer for 1 minute.
  • Add the chicken, sun-dried tomatoes and stir to combine. Add the broth, milk, and bouillon cubes. Stir to combine. Bring the soup to a simmer, reduce the heat to low, cover and simmer for 20 minutes, stirring occasionally.
  • Add the parsley, Parmesan cheese, heavy cream and simmer, covered for another 5 minutes. Add the cooked pasta and stir to combine. Add salt and pepper to taste.
  • Serve immediately, garnished with fresh chopped parsley.
