ITALIAN BEEF PIE DINNER
Bakes like meatloaf, tastes like pizza! Delicious, easy, fast, and low-carb. Prep time does not include shredding or waiting for the zucchini to "sweat."

Steps:
- Mix the salt into the shredded zucchini. Let sit for 15 minutes then drain thoroughly.
- Mix the zucchini and olive oil into the beef, and then shape the beef into a flat circle in a greased 9" pie pan. (Leave a little room between the edge of the pan and the beef, so any extra fat can drain there).
- Sprinkle the mozzarella over the beef, then top the mozzarella in layers with first the tomatos, then the mushrooms or olives if you are using them,then the herbs,then the parmesan. I sometimes use extra dried herbs and parmesan, because I like them (a lot!).
- Bake the dish in a 350 degree oven for appx 40 minutes, or till beef is cooked through and parmesan is slightly browned.
- Slice into wedges and serve.

- Heat oven to 400°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
- Stir 1 1/4 cups pasta sauce into beef. Heat to boiling. Spoon into baking dish; top with mozzarella cheese.
- Meanwhile, in medium bowl, stir Bisquick mix, milk and Parmesan cheese until soft dough forms.
- Drop dough by 12 tablespoonfuls onto beef mixture.
- Bake uncovered 20 to 24 minutes or until topping is golden brown and toothpick inserted in topping comes out clean. Serve topped with additional warm pasta sauce.

ITALIAN PIZZERIA-STYLE MEAT PIE
This recipe was originally posted in my hometown Newspaper (Lawrence, MA), back in the 70s. The original recipe was lost, but with the help of my Mother, we've recreated it here. Note; the use of frozen bread dough is original to the authentic recipe.

Steps:
- Brown beef and pork.
- Add onions and Peppers and saute till onions are slightly browned. Add garlic and saute.
- Add all other ingredients except dough, and simmer till thickened.
- Roll out 1 loaf of dough to fit a lightly greased cookie sheet.
- Using a slotted spoon spread the meat mixture on top.
- Roll out the second loaf.
- Place this sheet on top and seal the edges.
- Poke a few vent holes in the crust.
- Brush the top completely with the fat drippings.
- Bake at the temp reccomended for the bread dough, till golden brown.
- Allow to cool slightly before cutting with a bread knife. (the inside will look slightly doughy).
GROUND BEEF..... ITALIAN GROUND BEEF PIE
The crust for this unusual pie is made of celery, grated Parmesan cheese and croutons! Kids just love this!

- Sauteé the chopped celery in butter for 5 minutes, stirring frequently. Remove from pan, set aside.
- Brown the hamburger and drain off the fat. In a bowl stir in the croutons, Parmesan cheese and the beaten egg.
- Spread this mixture over the bottom of a buttered 9 inch pie pan.
- Mix the ground beef, garlic, onion, oregano, catsup, salt and pepper. (Please Note! You can use your favorite spaghetti sauce instead of catsup if you prefer). Place this mixture on top of the crust in the pie pan.
- Bake in oven for 30 minutes at 350°F
- Remove from the oven and turn up the temperature to 400°F
- Cover the pie with the sliced mozzarella cheese slices and bake for 5 minutes until cheese is bubbling or melted.

- Brown ground beef and drain.
- Add green pepper and cook 2 minutes.
- Add water, tomato paste and spaghetti sauce mix; cover and simmer 10 minutes.
- Sprinkle 1/4 cup Parmesean cheese on bottom of pie shell.
- Spread 1/2 meat mixture on top of parmesean and then layer 1 cup Mozarella.
- Layer remaining meat mixture.
- Top with 1/4 cup Parmesean.
- Bake on cookie sheet in 400-degree oven for 15-20 minutes.
- Sprinkle with 1 cup Mozarella and heat until melted (10 minutes).
DEEP DISH ITALIAN MEAT PIE
Found at Cooks.com for a recipe request. I had to fix the directions as a step was missing. It is delicious and very rich. You could easily halve the Parmesan cheese and have a very tasty dish. Next time, I plan on making the meat filling alone and serving it on a roll with a slice of provolone as sort of an Italian Sloppy Joe.

- Preheat oven to 350ºF.
- Brown beef in large skillet.
- Drain, add green pepper and cook 2 minutes.
- Dissolve cornstarch in water and add to skillet along with tomatoes and all seasonings.
- Cover and simmer 10 minutes.
- Sprinkle half of Parmesan cheese over bottom of pie crust.

- 1. Preheat oven to 375.
- 2. In a large skillet, add ground beef, chopped onion and 1 clove of garlic, finely chopped. Brown ground beef on medium heat. Drain grease. Return browned ground beef to large skillet.
- 3. Add jar of spaghetti sauce, stir well.
- 4. Simmer on low for 2-3 minutes.
- 5. Grease a 13x9 pan, add ground beef and spaghetti sauce mixture to bottom of pan. Spread evenly.
- 6. In a separate bowl, combine ricotta cheese, shredded mozzarella, and grated Parmesan. Mix well.
- 7. Spread evenly on top of ground beef mixture.
- 8. Sprinkle cheddar cheese on top.
- 9. Align evenly 1.5 - 2 cans of crescent rolls (depending on your preference) on top of cheese mixture. Crescent triangles will rise evenly to create a crust on top while baking.
- 10. In a small saucepan, melt butter and garlic. Saute on medium heat for 3-4 minutes.
- 11. Brush butter and garlic mixture on top of crescent rolls.
- 12. Sprinkle with 1/2 cup of freshly grated Parmesan cheese.
- 13. Bake uncovered in oven for 35 minutes at 375 degrees, until crust is golden brown.
- 14. Let stand for 10 minutes to cool. Serve and enjoy!
OUR FAVORITE ITALIAN MEAT PIE
Just a little something that came together one night years ago when my kiddos were actually smaller than me! I was trying to come up with something new and relatively quick that would please everyone. They still love and request this dinner on a regular basis!

- Preheat oven to 375*.
- Brown ground beef and onions, seasoning with salt and pepper. Drain well.
- Put meat back into pan and add enough spaghetti sauce to coat the meat well but not make it soupy (usually about half a jar for me). I like Ragu Old World Style, Mushroom Flavor.
- Stir in the mushrooms if your family will eat them!
- Line an 8x8 pan with about 6 of the crescent rolls (I use Pillsbury Reduced Fat crescent rolls and they work fine!), sealing the seams by smooshing them together and making the rolls go about an inch up the sides of the pan.
- Mix the beaten egg with one cup of shredded mozzarella (I use the 2% shredded cheese and that works well!), then spread it evenly over the top of the crescent rolls.
- Top egg and cheese layer with ground beef mixture.
- Sprinkle remaining cup of cheese over the top of the meat layer.
- Bake for 25-30 minutes, or until cheese is nicely melted and lightly browned and crescent rolls crust is done.
- Roll up remaining crescent rolls and bake along side the meat pie.
- Let meat pie rest on the counter or table for about 5 minutes or so to make it easier to serve.
- Serve the meat pie with the crescent rolls and a great salad. Enjoy!
SKILLET SHEPHERD'S PIE

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the corn, peas, ketchup, Worcestershire sauce and garlic. Reduce heat to medium-low; cover and cook for 5 minutes., Combine the cornstarch, bouillon and water until well blended; stir into beef mixture. Bring to a boil over medium heat; cook and stir until thickened, 2 minutes. Stir in sour cream and heat through (do not boil)., Spread mashed potatoes over the top; sprinkle with cheese. - Heat oven to 375°F. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Cook beef in 10-inch skillet over medium-high heat 5 to 7 minutes, stirring occasionally, until brown; drain. Stir in pasta sauce.
- Mix cream cheese, sour cream, 1/2 cup of the Parmesan cheese and 1/4 teaspoon of the Italian seasoning in small bowl until smooth and creamy.
- Spoon half of the beef mixture (about 2 cups) into baking dish. Drop spoonfuls of cream cheese mixture evenly onto beef mixture. Spoon remaining beef mixture over cream cheese mixture.
- Stir 1 cup of the Parmesan cheese, the Bisquick mix and milk in medium bowl until blended. Pour over beef mixture.
- Bake uncovered 30 to 35 minutes or until light golden brown. Sprinkle with remaining 1/2 cup Parmesan cheese and 1/2 teaspoon Italian seasoning. Bake 5 minutes longer. Let stand at least 10 minutes before cutting.

- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 2-quart casserole dish.
- Heat olive oil in a skillet over medium heat; cook and stir Italian sausage until browned and crumbly, about 10 minutes. Use a slotted spoon to transfer sausage to prepared casserole dish. Drain drippings and reserve 2 tablespoons drippings in the skillet.
