ITALIAN BEEF PATTIES WITH BALSAMIC CREAM SAUCE
Boston's North End is famous for it's Italian markets, restaurants and saint's day weekend festivals and I miss it so much! I was thrilled to find "The North End Italian Cookbook" by Marguerite Buonopane.

Steps:
- In a medium bowl, mix together beef, cheese, egg yolks, salt and pepper and form into 6 patties.
- Heat 2 tbls butter in a heavy skillet over medium high heat, brown patties on both sides, reduce heat to medium and cook until juices are pink.
- Remove patties and cover with foil.
- Add oil, 1 tbls butter and onion to the pan and cook over medium heat until onion is golden brown.
- Add cream and vinegar and cook on low 2 minutes.
- Pour sauce over patties and serve.

- In a bowl, with a whisk, mix egg, breadcrumbs, garlic, water, italian seasoning and half salt and pepper. Add ground beef and stir with a fork. With wet hands, do 4 patties of 1/2 inch thickness.
- In an ovenproof skillet, heat oil at medium high heat. Add beef patties and cook about 6 minutes or until bottom is golden. With a spatula, flip the patties and keep cooking 2 minutes.
- Meanwhile, in another bowl, mix tomatoes, bell pepper, onion, parsley and remaining salt and pepper until homogeneous. With a spoon, spread this mixture on the patties. Add the shredded cheese on top.
- Cook under the preheated broil in oven 4 inches below the heat for about 4 minutes or until cheese begins to brown and beef is not pink inside.
ITALIAN-STYLE GROUND BEEF
Best results come from using a lean ground meat. Add a green salad and your favorite garlic bread and you have one delicious meal. NOTE: because of previous reviews I'm adding another 1/4 cup to the fine dry breadcrumbs.

- Mix together beef, water, seasoned salt, black pepper and parsley. Shape into 4 patties, about 3/4 in thick.
- Coat both sides of patties with flour. Dip into egg, then into crumbs. Brown quickly in hot oil on both sides in skillet.
- Arrange in shallow 1/1/2-quart baking dish. Put a slice of cheese on each patty.
- Pour spaghetti sauce over patties. Sprinkle with Parmesan Cheese.
- Bake at 400° for about 25 minute Garnish with parsley.

- In a saucepan, combine the tomato sauce, basil, pepper flakes and garlic powder. Bring to a boil over medium heat. Reduce heat; simmer for 15 minutes. , Meanwhile, shape sausage into four thin oval patties. In a skillet over medium heat, cook patties until no longer pink; remove and keep warm. , In the drippings, saute onion until tender. Place a slice of cheese on four slices of bread; layer each with a sausage patty, onion and remaining cheese. Top with remaining bread. Butter the outsides of sandwiches. , On a griddle or in a large skillet, toast over medium heat until both sides are golden brown and cheese is melted. Serve with herbed tomato sauce for dipping.

ITALIAN BEEF FLORENTINE
This version of Beef Florentine used chuck patties instead of steak, which makes it easy and quick to prepare. It goes well with a fresh salad and garlic bread or rolls.

- Place flour on a plate. Beat eggs gently, in a shallow bowl, until blended. In another shallow bowl, mix Panko bread crumbs, Italian seasoning, onion powder, salt and pepper.
- Preheat large saute pan on medium-high 2-3 minutes. Dip patties in flour (coating both sides), then dip in egg mixture, allowing excess to drip off. Finally, dip into Panko bread crumb mixture.
- Place oil in pan; swirl to coat. Add patties to pan and cook 2-3 minutes on each side to brown.
- Reduce heat to medium; cook 2-3 more minutes on each side, until cooked through.
- Meanwhile, combine sauce mix and milk in a medium saucepan. Bring to a boil on medium-high heat. Reduce heat to low; stir in butter and spinach. Cook 2-3 minutes, stirring often, or until spinach is wilted. Serve sauce over patties.
ITALIAN BEEF PATTIES
I found this in TOH Quick Cooking. So easy and a great new way to serve hamburger. Serve this over spaghetti noodles and a salad and you have a complete meal.

Steps:
- In a bowl, combine the beef salt and pepper; mix well.
- Shape into six patties.
- Place the flour, eggs and bread crumbs in three separate bowls.
- Dredge beef patties in flour; dip into eggs, then coat with bread crumbs.
- In a large skillet, cook patties in oil over medium heat until meat is no longer pink.
- Arrange in a single layer in a greased 13x9 pan.
- Top each patty with cheese slices, mushrooms, spaghetti sauce and parmesan cheese.
- Bake uncovered, at 400 degrees for 25 minute or until hot and bubbly.
- Serve over cooked spaghetti.
