ITALIAN MIXED BEAN SOUP
This is my standard bean soup recipie that I've been using for a couple of years. It's highly adaptable and makes a pot big enough to feed myself and my bf one meal a day for a whole week. Generally I take it to work for an easy lunch. :) It looks like a lot of work to make but it's actually quite simple. The cooking time includes the 8 hours of soaking for the beans.

Steps:
- Pick through the dried beans and discard any shrivled or broken beans. Also watch out for tiny stones. You can use any mix of beans you like but my mix tends to inclue equal parts navy beans, pinto beans, and kidney beans.
- Put the beans in a large pot and add water enough to cover the beans by a good 3 inches. Cover and let soak for at least 8 hours or overnight. (alternately you can put the beans in a pot, cover with water, bring to a boil, cover and remove from heat, let stand for an hour. It yields a differnt texture but still yummy).
- Drain beans.
- Heat the oil in a large pot over medium heat. Saute the onions and garlic until the onion becomes translucent or about 3 minutes. Add the celery and carrots, saute another 2-3 minutes.
- Add the 8 cups of water, bouillon cubes and beans. Bring to a boil. Cover and lower heat to simmer. Simmer for 1 hour and 40 minutes.
- Add lentils, tomatoes, spinach, ground red pepper, oregano, and basil. Cover and simmer 20 minutes more.
- Both beans and lentils should be soft at this point. If they are not let them simmer longer.
- Add salt and pepper to taste.

Steps:
- In a large saucepan, heat oil. Cook onion and celery in oil for 5 to 8 minutes, or until tender. Add garlic, and cook for 30 seconds, continually stirring. Stir in beans, chicken broth, pepper, thyme and 2 cups water. Bring to a boil, reduce heat, and then simmer for 15 minutes.
- With slotted spoon, remove 2 cups of the bean and vegetable mixture from soup and set aside.
- In blender at low speed, blend remaining soup in small batches until smooth, (it helps to remove the center piece of the blender lid to allow steam to escape.) Once blended pour soup back into stock pot and stir in reserved beans.
- Bring to a boil, occasionally stirring. Stir in spinach and cook 1 minute or until spinach is wilted. Stir in lemon juice and remove from heat and serve with fresh grated Parmesan cheese on top.

MY FAVOURITE RIBOLLITA (LA MIA RIBOLLITA PREFERITA)
There's often confusion as to what ribollita should actually be like. It's not like minestrone, as it isn't brothy and it has no pasta in it. It's actually more like pappa al pomodoro, as it's thick and based on bread. It's very much Italian 'peasant food' and would have been eaten a lot in the days of no central heating and lots of hard manual labour. I think this recipe embraces the heart and soul of what peasant cooking is all about - cheap, tasty power food.

Steps:
- Add your fresh or dried and soaked beans to a pan of water with the bay leaf - this will help to flavour the beans and soften their skins. Squash the tomato, peel the potato and add both to the pan. Cook until the beans are tender - taste one to check they're nice and soft. Dried beans can take up to an hour, but check fresh ones after 25 minutes. Drain (reserving about half a glass of the cooking water), and discard the bay leaf, tomato and potato.
- Peel and finely chop your onions, carrots and garlic. Trim and finely chop the celery.
- Heat a saucepan with a splash of olive oil and add the vegetables to the pan with the ground fennel seeds and chilli. Sweat very slowly on a low heat with the lid just ajar for around 15 to 20 minutes until soft, but not brown.
- Add the tomatoes and bring to a gentle simmer for a few minutes.
- Add the cooked and drained beans with a little of the water they were cooked in, and bring back to the boil.
- Finely slice the cavolo nero (stalks and all) and add to the pan - it will look like loads, but don't worry as it will cook down.
- Tear the bread into chunks, then moisten with a little of the cooking water and stir it in too. The soup should be thick but not dry, so add a little more cooking water if you need to loosen it. Continue cooking for about 30 minutes - you want to achieve a silky, thick soup.
- Season the ribollita with sea salt and black pepper, and stir in 4 good lugs of good-quality Tuscan extra virgin olive oil before serving to give it a glossy velvety texture.
- Delicious served on a cold winter's day with lots and lots of Chianti!

- Brown the sausage in a large soup pot. You can add a touch of olive oil first if you like, I don't find it's necessary. Break apart the sausage into small bits as it cooks, and let it cook until nice and browned. Remove the sausage to a paper towel lined plate, but leave the fat behind in the pan.
- Add the onion, carrot, celery and garlic to the pan and sauté for about 5-10 minutes, stirring often, just until they start to soften. Return the sausage to to the pot with the tomatoes, paste, and broth. Season with the Italian seasoning, bay leaves, and a good grinding of black pepper. Hold off on the salting to taste until the end.
- At this point I bring the soup up to a boil, then I turn the heat off and cover. I let it sit for about 30 minutes. I love this technique because the flavor get a chance to develop but the veggies don't get boiled to death.
- When you're ready to eat, add the beans, and greens, and bring back up to a simmer. Taste to add salt, or any extra pepper. The trick with the pasta is to add it individually to each serving, you can put a little at the bottom of each bowl as you ladle out the soup. This is important because if you mix pasta into soup it will eventually soak up all the broth.
