1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions, optional garnish

Steps:

  • Preheat oven, if using, to 400 degrees F.
  • Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
  • To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

The trick is wrapping bundles of asparagus, instead of individual stalks. As the bundles bake, the bacon drippings infuse the stalks with smoky flavor and transform this sometimes-woody vegetable into a silky smooth and meltingly tender masterpiece which, in our experience, no one can resist!

1 lb fresh asparagus spears, trimmed
8 slices bacon
1 lemon, cut in wedges

Steps:

  • Heat oven to 425°F. Line 18x13-inch rimmed pan with foil. Place large rack in pan; spray rack and foil with cooking spray.
  • In large shallow bowl or pie plate, mix melted butter and pepper flakes. Add asparagus; toss thoroughly to coat. Divide asparagus evenly into 8 bundles. Wrap each bundle in one slice of bacon. 1 pound asparagus, tough ends trimmed and discarded
8 ounces prosciutto, very thinly sliced
1 tablespoon olive oil
1/2 cup Philadelphia Cooking Creme (any flavor, I used Italian Cheese and Herb)
1 tablespoon water

Steps:

  • Preheat the oven to 400F. Wrap 2 asparagus spears with a slice of prosciutto. Place spears on baking sheet. Drizzle olive oil on the tips and ends of the asparagus (avoiding the prosciutto). Roast for 8-10 minutes, until the asparagus is cooked through and the prosciutto becomes crispy.
  • In a small bowl, whisk together the Philadelphia Cooking Cream with the water. Microwave on medium setting for 45 seconds. If you can't find the Philadelphia Cooking Creme, feel free to omit (the Crispy Prosciutto Wrapped Asparagus is great as-is!) or substitute with 1/4 cup Philadelphia Cream Cheese mixed with 2 tablespoons mayonnaise + 2 tablespoons water and your favorite chopped fresh herbs.

Mike came up with this recipe during the first dinner we cooked together in our brand-new apartment! We were inspired by a similar dish we've had at an Italian restaurant, but used it as a side dish instead of an antipasti plate, and substituted the prosciutto with bacon. The cheese, a relatively mild cow's milk cheese, should be relatively easy to find because of its increasing popularity. Super easy to make, and super tasty!

1 tablespoon olive oil
1 clove garlic, thinly sliced
12 spears fresh asparagus, trimmed
1 cup grape tomatoes, halved
1 teaspoon lemon juice
4 slices hardwood smoked bacon
¾ pound Taleggio cheese, cut into 1/4-inch pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a large skillet over medium heat. Cook and stir garlic until fragrant, about 2 minutes.
  • Stir asparagus and grape tomatoes into the garlic and drizzle with lemon juice. Continue to cook and stir until asparagus are tender, 5 to 7 minutes.

1 lb fresh asparagus, bottoms removed
8 ounces Italian salad dressing, I use Kraft Zesty Italian
1 lb bacon, about 10 to 12 slices

Steps:

  • Cut 1 to 2 inches off bottom of asparagus spears.
  • Place in gallon sized zip top plastic bag.
  • Pour 8 ozs Italian Salad Dressing in bag with asparagus.
  • Marinate for at least 1 hour in refrigerator.
  • When ready, preheat oven to 400 degrees.
  • Wrap 3 asparagus stalks with 1 slice of bacon.
  • Place on foil lined cookie sheet.
  • Bake 20-30 minutes on 400 degrees until bacon crisp up. May have to turn over half way through cooking time.
  • Remove from pan to cool slightly.
  • I usually get around 10 to 12 bundles.
  • Enjoy!

There is nothing more addictive than tender asparagus spears wrapped in salty, crispy prosciutto. It only takes 4 ingredients and 30 minutes for this simple and delicious appetizer!

1 pound asparagus ((look for thicker stems that are about 1-ounce each))
4 ounces prosciutto
2 tablespoons olive oil
freshly ground black pepper
Lemon zest (or lemon wedges, for garnish, optional)
shredded Parmesan cheese (for garnish, optional)

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  • Remove the woody, tough ends from the asparagus. To do this, grab a handful of stems (5-6 at a time) and start to fold near the bottom of the stem. Each stem should break at the spot where it starts to toughen.
  • Cut each piece of prosciutto into quarters (you should have about 16 pieces). Working with one asparagus stem at a time, wrap a piece of prosciutto around the middle of the stem. Place on prepared baking sheet and repeat with remaining prosciutto and asparagus.
  • Brush the wrapped stems lightly with olive oil, concentrating most on the flowery tops which dry out easily. Sprinkle with pepper to taste (I like 1/2 teaspoon).
  • Bake until the asparagus stems are tender and the prosciutto is crisp, about 20 minutes. Serve warm or at room temperature.

Place 5 asparagus spears crosswise in the centre of each breast. Roll chicken around the asparagus, starting with the pointed end. Set aside, seam side down. ##Lay 2 slices of bacon on cutting board side by side lengthwise. Roll bacon around one piece of chicken, then place, seam side down, onto prepared sheet. Repeat with remaining bacon and chicken. ##Bake in centre of oven for 30 minutes. Switch oven to broil and transfer sheet to upper rack. Melt butter, then stir in flour. Cook, stirring constantly, for 1 minute. Gradually whisk in milk and mustard. Cook until mixture is thickened, about 2 minutes. 1 1/2 cups zesty Italian dressing (I use Kraft)
12 asparagus spears
12 slices bacon (if your bacon is thick, precook for 5 to ten minutes before wrapping)
2 pinches pepper
1 garlic clove, minced
24 toothpicks (add a few extra in case the break!)

Steps:

  • PREP.
  • Wash then cut the asparagus stalks down a bit (usually 1-2 inches) to remove the tougher parts.
  • Put the asparagus into a large ziploc bag and pour the Zesty Italian Dressing over the asparagus. Make sure all of the spears are going the same way. This will make it easier to mix around in the sauce.
  • After mincing the garlic (bottled minced garlic works too), put it all onto the asparagus in the bag.
  • Roll the dressing and garlic around in the bag and leave in the fridge for at least two hours to 4 hours, longer will let the flavor really get into the asparagus.
  • After marinating is done, pull the asparagus out and wrap, the long way, with a bacon strip. Use a toothpick on the top and bottom of the asparagus to keep it on during cooking.
  • Drop a couple pinches of pepper to taste on the wrapped spears.
  • COOKING - Times depend on thickness of the Asparagus Spear and Bacon.
  • With the temp around 350 for 3 to 4 minutes.Cover closed.
  • Turn each spear over and resume grilling for another 4 minutes. Closed.
  • Move the spears to the top rack and resume cooking for another three to four minutes. Again, with the cover closed.
  • SERVING.
  • Put it on a plate and eat with your favorite main course. Enjoy!
