BAKED ASPARAGUS ITALIAN STYLE (ASPARAGI AL FORNO)
Italians love asparagus like Americans do baked potatoes. They have a quatrillion ways to serve it, and even prepare versions to be served with fried eggs for breakfast. I ran into this recipe years ago when visiting northern Italy. I fell in love with it and have relished it for years. Try it and enjoy.

Steps:
- Preheat oven to 350 degree F.
- Clean the asparagus and trim off the woody ends if necessary.
- Place asparagus in a steamer (or in a pan of lightly salted water) and steam/cook for 8 minutes.
- Be sure not to over cook and make asparagus limpy.
- Place asparagus in a buttered, oven tolerant dish or pan.
- Season with pinch of salt and black pepper.
- Drizzle extra virgin olive oil over the top and sprinkle with Parmigiano Reggiano.
- Bake in preheated oven for about 6-7 minutes until golden brown.
- Enjoy-- mmmmmmm.

PENNE WITH PISTACHIOS, ASPARAGUS, AND CREAM

Steps:
- Cook the asparagus in a stockpot in boiling salted water, uncovered, over medium-high heat until tender, about 3 minutes. Remove the asparagus, saving the water so the pasta can be prepared in the same pot.
- Sauté garlic in butter in a sauté pan over medium heat.
- Meanwhile start cooking the pasta, according to package directions.
- Add the asparagus and pepper.
- Increase heat to high and pour in the wine, stirring for about 1 minute. Reduce heat to medium.
- Pour the half and half and the cream over asparagus mixture and simmer for 2 minutes.
- Season with salt.
- When pasta is done, drain and return to pot.
- Combine asparagus sauce with pasta, stirring over medium heat.
- Add cheese, stirring until it melts; transfer to platter.
- Garnish with pistachio nuts and serve immediately.

PENNE WITH ASPARAGUS RECIPE - LA CUCINA ITALIANA

- Fill a bowl with ice water. Clean the asparagus and remove the fibrous part of the stalks with a potato peeler. Blanch for 4-5 minutes in boiling water. Remove with a slotted spoon and immerse in ice water for 4-5 minutes. Remove and cut stems into rounds, keeping tips whole.
- Melt butter in a large pan; add almonds, sauté for 30 seconds, then add asparagus rounds and chopped marjoram.
- Cook the penne in a pot of boiling salted water until al dente. Drain, reserving 1 cup pasta cooking water, and add to the pan with the asparagus. Sauté for 1-2 minutes. If dry add 1-2 Tbsp. pasta cooking water. Finally, add asparagus tips. Serve immediately. Garnish with grated Parmigiano cheese to taste.

- Trim the asparagus, removing the tough ends. Wash and boil the stalks in salted water. Drain the asparagus and cut off the tips, reserving them for garnish. Purée the rest in a blender with the ricotta.
- Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta.
- Cut prosciutto cotto (ham) into thin strips. Toss the pasta with the asparagus-ricotta purée. Top with Grana Padano, prosciutto, and the asparagus tips. Serve immediately.
