250 g (2 cups) of "00" flour
100 ml (1/3 cup + 1 tablespoon) of whole milk
2 medium whole eggs
100 g (1 stick) of melted unsalted butter
16 g (3 1/2 teaspoon) of baking powder
100 g (1/2 cup) of caster sugar
juice and zest of 1 lemon
3 apples
brown sugar for decoration

Steps:

  • Preheat the oven to 180 ° C (350 F) and prepare a 22 cm springform pan covered with parchment paper, wet and squeezed. Then wash and peel the apples.
  • Cut some apples (about half of them) into small pieces and some into thin slices. Squeeze the lemon juice on both to flavour and keep them from blackening. Set the apples aside.
  • In a large bowl, beat the eggs with the sugar for 5 minutes, until very frothy and well whipped (you can also use an electric mixer). Then add the melted butter and lemon zest.
  • Add the flour, baking powder and milk. Mix and combine the ingredients very well. Finally add the chopped apples (but keep the slices aside) to the mixture and mix well by hand with a wooden spoon.
  • Pour the mixture into the springform pan and then cover it completely with the apple slices arranged in a radial pattern.
  • Before baking, sprinkle the surface of the cake with brown sugar, which during cooking will form a crunchy and delicious crust.
  • Bake at 180° C (350 F) for about 50 minutes. The apple cake will be ready when the apple slices are toasted and golden. Let the cake cool before serving.

½ cup unsalted butter, melted
½ cup white sugar
1 vanilla bean, split and scraped
2 eggs
1 ⅛ cups all-purpose flour

2 pounds Granny Smith apples, peeled, cored and sliced thin
¼ cup unsalted butter, cubed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a pie plate and dust with bread crumbs
  • Combine melted butter, 1/2 cup sugar, and vanilla bean seeds in a bowl. Add eggs and stir to combine. Mix flour, baking powder, and salt in a bowl and add to butter mixture. Add milk if batter is too thick
  • Pour batter into the prepared pie plate. Distribute apple slices in a thick layer on top of the batter. Dot with cubed butter and sprinkle with 1/4 cup sugar.

A very moist, perfectly spiced Apple Cake! This is incredibly easy to make - no mixer required. This must be made with fresh apples, not canned. See note 5 for information about different measures in different countries & different oven types. Also, I do not recommend substituting butter for all or part of the oil - it does not come out as moist and you can't taste buttery flavour anyway because of the spice flavourings! FREEZES great!

  • Preheat oven to 180°C/350°F (all oven types).
  • Grease and line a 21 cm / 9" springform cake pan. (Note 4)
  • Place flour, baking soda, salt and spices in a large bowl and whisk to combine.
  • Whisk oil and sugar in a bowl, then whisk in eggs and vanilla.
  • Pour the wet ingredients into the dry and mix with a wooden spoon until JUST combined. Stir through apple (optional: add 3/4 cup chopped walnuts or other nuts).
  • Pour into cake pan. Sprinkle over almonds.
  • Bake for 50 minutes - 1 hr. Check at 50 minutes - it is cooked when a skewer inserted into the centre comes out clean.
  • Cool for 10 minutes before turning out onto a rack to cool. Dust with icing sugar if using, then serve. This cake doesn't need cream or ice cream because it is so moist, but I wouldn't turn it down!

Steps:

  • Preheat the oven to 375F, and line a 10-inch springform pan with parchment paper.
  • Peel and slice the apples, and toss them with the lemon juice to prevent browning. Set aside.
  • In a medium bowl, whisk together the melted butter and sugar until creamy and light. Mix in the eggs, lemon zest, and vanilla, and beat until well-incorporated.
  • Finally, stir in the baking powder and flour. Stir in the apple slices, and pour the batter into the prepared pan. There will be almost too many apples for the cake batter, this is normal!
  • Bake for 45-50 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  • Serve sprinkled with powdered sugar!

3 medium apples
1 lemon ((zested and juiced))
3 large eggs
1 cup sugar
1 cup milk ((2% or whole))
⅔ cup olive oil
2 teaspoons vanilla
3 cups flour ((455 grams))

2 tablespoons sugar (for sprinkling)

Steps:

  • Preheat oven to 350 degrees. Grease a standard bundt cake pan with melted butter or cooking spray; set aside.
  • Peel and core all three apples. Dice two of the apples into about half inch cubes. Grate one of the apples on a box grater using the larger holes. Place the apples in a medium bowl and toss with two tablespoons of lemon juice and one teaspoon of lemon zest; set aside.
  • In a large bowl, combine the eggs and sugar. Use a handheld mixer to beat until light and fluffy, about 2-3 minutes. The mixture should be pale in color. Add in the milk, olive oil, and vanilla, and mix until combined. Add in the flour, baking powder, and salt and mix until all ingredients are incorporated.

  • Bake on the center rack of the oven for about 40-50 minutes. You'll know the cake is done when it starts to pull away from its sides. Also, a toothpick inserted in the cake will come out mostly clean, except for some crumbs. Let the cake cool on a baking rack for 10 minutes, then remove from pan and let cool completely.
  • Once the cake is completely cooled, dust the top with powdered sugar.

140 g sugar (or fine demerara sugar)
120 ml lightly-flavoured extra-virgin olive oil
1 teaspoon vanilla extract ((or half vanilla pod, scraped))
200 g sifted all-purpose flour
1 tablespoon baking powder ((15 gr))
1/8 teaspoon sea salt
600 g Honeycrisp apples, peeled and cored ((about 3 medium apples))
1 tablespoon fresh lemon zest
1 tbsp confectioner sugar

Steps:

  • Preheat oven to 180C/360F and adjust a baking rack onto the middle shelf. Grease and dust with flour (or line with parchment paper) a 9-inch cake pan and set it aside.
  • In a large bowl, place the eggs and the sugar. Beat the mixture with an electric whisker until light and pale, then gently whisk in the olive oil, followed by the vanilla, and mix until all the ingredients are combined.
  • Slowly incorporate the flour into the batter, mixing until just combined. Sprinkle the baking powder and a pinch on salt over the batter and mix until just combined (do not overmix).
  • Fold into the batter 1-1/2 apples cut into tiny chunks, and lemon zest, and mix until just combined.

2 or 3 large organic apples, about (300g), washed and cut into pieces (do not peel, but remove the core/seeds)
2 Tbsp lemon juice
3 eggs
1 1/8 c (250g) sugar
1 3/4 c (275g) all purpose flour (plain flour in the UK)
2 1/2 tsp baking powder (or 1 packet Italian Paneangeli vanilla baking powder)
1/3 c (100g) butter, softened
1/3 c (110g) plain Greek yogurt
1 Tbsp grated fresh lemon zest/peel

Steps:

  • Prepare an 8″ springform pan by spraying with oil (or butter) and lining in parchment paper (sides optional, if you want really clean sides), then spray the paper, too.
  • In a food processor, or blender, process the apple pieces and lemon juice until it is almost pureed.
  • Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy. Sift the flour with the baking powder then add to the mixture in the bowl a little at a time along with the softened butter. Continue to mix until completely blended, then stir in the yogurt.
  • Add the processed apples and grated lemon rind to the cake batter and stir until evenly combined.
  • Pour into prepared cake tin.
  • Bake for 50-60 minutes (depending on your oven), but test with a cake tester or skewer to make sure the apple cake is done before removing from the oven. If desired, sprinkle lightly with some granulated sugar immediately. Allow to cool for about 15 minutes, then remove the side of the springform pan.
  • Let cool completely before cutting and serving.
  • The cake can stand on its own, but you can also serve it with a fruit sauce, dollop of whipped cream, custard or vanilla ice cream. I prefer it plain with a cup of tea!

This is my first post! Every time I make this cake people beg me for the recipe. Its adapted from an authentic Italian recipe and it's incredibly quick and easy to make. It uses everyday ingredients (omit the Amaretto if you don't have any) and the result is a moist, almost pudding-like cake which is full of flavour. Perfect for a decadent afternoon tea or to serve as a dessert. Hope you like it!

2 cooking apples
1/2 lemon, juice of
1/2 cup raisins
1 cup walnuts
1 tablespoon sugar
1/2 cup shredded coconut (not dessicated)
1 1/2 cups plain flour (all purpose)
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
2 large eggs
3/4 cup sugar
150 g butter, melted
2 tablespoons amaretto liqueur (substitute a couple of drops of almond essence or omit this step if neither is available)
icing sugar, for dusting (confectioner's)

Steps:

  • Set oven to 180C (350F).
  • Grease and lightly flour a 23cm (9 inch) round cake tin.
  • You'll also need three mixing bowls- small, medium and large- for this recipe.
  • DO NOT PEEL the apples.
  • Cut into chunks about 1/2" square- discarding the core.
  • Place apple chunks into the first (medium) mixing bowl.
  • Toss apple in lemon juice to avoid discoloration, then drain off and discard excess juice.
  • Add raisins and coconut to the apples.
  • Tip walnuts onto cutting board and sprinkle over 1 tablespoon sugar.
  • Chop nuts roughly with the sugar, then add nuts and'nut flavoured' sugar to the apple mixture.
  • Mix well.
  • In the second (large) mixing bowl, sift flour, baking powder, cinnamon and nutmeg.
  • In the third (small) bowl, combine eggs and sugar and beat until light and lemon colored.
  • Still beating, add the melted butter and the liqueur (or essence).
  • Make a well in the centre of the flour mixture and add the egg mixture.
  • Stir until well combined.
  • Tip in the apple mixture and mix well.
  • At this stage it may seem you have too much apple and not enough batter- don't worry!
  • Turn the mixture into the prepared cake tin.
  • Bake on the centre shelf of the oven at 180C (350F) for about 45-50 minutes or until the top of the cake has turned a nice golden brown.
  • (Test with a skewer if unsure.) Remove cake from oven, turn onto a rack to cool.
  • Sprinkle with icing (confectioner's) sugar to serve.
  • Serve with thick cream.

2 large Gala apples, peeled and chopped as finely as possible
Orange juice to soak apples in
3 cups all-purpose flour
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp baking powder
1 tsp baking soda
1 cup sugar
1 cup Private Reserve extra virgin olive oil
2 large eggs
2/3 cup gold raisins, soaked in warm water for 15 minutes and then drained well
Confectioner's sugar for dusting

Steps:

  • Preheat oven to 350 degrees F.
  • Place the chopped apples in a bowl and add orange juice; just enough juice to toss and coat apples so as to prevent browning.
  • In a large mixing bowl sift together the flour, cinnamon, nutmeg, baking powder and baking soda. Set aside for now
  • In the bowl of a stand mixer fitted with a whisk, add sugar and extra virgin olive oil. Mix on low for 2 minutes until well-combined
  • While mixer is on, add the eggs, one at a time, and continue to mix another 2 minutes until mixture increases in volume (it should be thicker but still runny)
  • In the large bowl with the dry ingredients, make a well in the middle of the flour mixture. Add the wet mixture (the sugar and olive oil mixture) into the well. Using a wooden spoon, stir until just blended; it will be a thick batter (do not add anything to loosen it).
  • Drain raisins (which have been soaking in water) completely; and rid apples of excess juice. Add both raisins and apples to the batter and mix with spoon until well-combined. Again, batter will be fairly thick.
  • Line a 9-inch cake pan with parchment paper. Spoon thick batter into the pan, and level the top with the back of your wooden spoon.
  • Bake in 350 degrees F for 45 minutes or until an inserted tooth pick or wooden skewer comes out clean.
  • Cool completely in pan. When ready, simply lift parchment up to transfer cake into a serving dish. Dust with confectioner's sugar. Alternatively, heat some dark honey to serve on top (those with a sweeter tooth like this option.)

Juice from half a lemon ((or 1 tablespoon if you want less lemon taste))
2 eggs
1 cup granulated sugar
1 cup regular yogurt ((not flavoured))
1/2 cup vegetable oil ((I use corn oil))
2 cups + 2 tablespoons all purpose flour
2 tablespoons corn starch
2 teaspoons baking powder
1/4 teaspoon baking soda
pinch salt
zest 1/2 lemon
2-3 tablespoons powdered / icing sugar ((for dusting on the cake))

Steps:

  • Pre-heat oven to 350F (180C), grease and flour a nine inch (23 cm) bundt pan (a cake pan would work too).
  • In a medium bowl add the chopped apples and sprinkle with the lemon juice.
  • In a large bowl beat the eggs and sugar until creamy and light approximately 3-4 minutes. Then add the yogurt and oil, sift the flour, corn starch, baking powder, baking soda, salt and zest into the bowl add the zest then beat until combined.
