PIZZA BITES APPETIZER WITH PEPPERONI + VIDEO
Pizza Bites Appetizer with Pepperoni in 30 Minutes are just like your favorite pizza in bite-size! A Simple recipe and a scrumptious game day appetizer. Can't get much more fun than that. They freeze perfectly. Spritz them with water and either microwave them until heated or defrost and pop them in a 350°F oven for about 10 minutes.

Steps:
- Preheat oven to 350°F.
- Reserve a hand full of pepperoni (about 1/4 cup).
- In a large bowl, combine flour, baking powder, seasoning, red pepper flakes, Parmesan cheese, olive oil, sugar, milk, and egg. Stir together with a fork. Mix in the pizza blend cheese and remaining pepperoni. Set aside.
- Prepare (2) 24 cup mini-muffin pans by greasing with olive oil (or spray with cooking spray).
- Mix batter and add 1 heaping tablespoon scoop to each muffin cup. Top each muffin with 2 or 3 of the reserved pepperoni. Bake until golden brown, approximately 20 minutes.
- Allow to cool for 5 minutes, remove from muffin tin and serve with favorite marinara sauce.

When my friend raved about this appetizer recipe I had to have it. It really does get rave reviews and everyone wants to know "what's in it?".

Steps:
- Heat oven to 350°F.
- Spray a 13x9x2-inch glass baking dish with cooking spray.
- Unroll one package of crescent rolls and use them to line the bottom of the dish. Pinch the seams together with your fingers.
- Cover rolls with half of the salami, provolone and ham.
- Lightly beat 6 of the eggs with the parmesan; pour half over top of the deli meat.
- Top with half of the peppers.
- Repeat layering the remaining salami, provolone, ham, egg mixture and peppers.
- Top with remaining package of rolls.
- Lightly beat the remaining egg and brush over top.
- Cover dish with foil; bake for 30 minutes.
- Uncover and bake for 30 minutes more.
- Cool 1 hour; cut into 32 squares and serve.

These are wonderful little appetizers. If you don't have the mini muffin pan, just use the regular size and don't cut the biscuits in half. I also use homemade pesto. From the Hormel site.

Steps:
- Preheat oven to 350 degrees.
- In bowl, combine pepperoni, cheese, mayo and pesto. Cut each biscuit in half. Place biscuit halves into greased miniature muffin cups, pressing gently to fit cups. Spoon 1 tablespoon of filling into each cup. Bake 20-25 minutes. Serve warm.

CHEESY ZUCCHINI BITES
Steps:
- In a medium frying pan add the olive oil, chopped zucchini, minced garlic, salt and water. Cook covered on medium low heat for approximately 10-15 minutes (make sure the zucchini does not brown, you want it tender), remove cover and continue to cook on low until the water has evaporated and zucchini is tender.
- Then remove from heat place in a large bowl and squish with a fork. To the bowl add the shredded mozzarella, parmesan cheese, egg, bread crumbs (1/4 cup + 2 tablespoons), parsley and pepper, combine gently until compact.
- Form into 19 balls, then roll the zucchini balls in the 1/4 cup of bread crumbs, place on a plate, cover with plastic and refrigerate for at least an hour**.
- Remove from the fridge and either deep fry in hot oil (350 F / 180 C) until golden, or pan fry in a little hot oil, turn once or twice until golden, or bake in a pre heated 350F / 180C oven for approximately 25-30 minutes. Sprinkle with a little salt before serving. Enjoy/!

- Preheat the oven to 375° F. In a medium sized bowl, combine the flour, baking powder, salt, dried basil and dried oregano.
- Beat the egg and pour into the dry ingredients along with the milk. Stir. Then add in the diced pepperoni, salami and mozzarella cheese. Let this batter rest for ~10 minutes.
- Spray a mini muffin tin or regular sized muffin tin with non-stick spray and spoon mixture into the cups. Bake for ~20 minutes, or until browned. I'd recommend to start checking in at 15 minutes.
