Steps:
- Heat 1 teaspoon olive oil in a skillet over medium heat. Stir in mushrooms; cook and stir until mushrooms are tender, 5 to 7 minutes. Transfer the mushrooms to a bowl and set aside.
- Heat the remaining 2 tablespoons olive oil in the skillet over medium heat. Add the pork chops, browning on both sides, 7 to 10 minutes. Place the pork chops on a plate, then drain all but 1 tablespoon of drippings from the skillet. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Pour in the tomatoes, then season with basil, oregano, salt, and pepper. Transfer the pork chops back to the skillet; cover and simmer until the pork chops are tender and no longer pink in the center, about 45 minutes. Stir in some water if the mixture becomes too dry. Place the bell pepper on top of the pork, then add the reserved mushrooms. Continue to simmer until the bell pepper is tender, 5 to 10 minutes.

- Pre-heat oven to 400°F (200°C). Lightly drizzle a baking pan with olive oil.In a small bowl add 1/4 cup olive oil, garlic, oregano, salt, pepper and chopped rosemary.In a medium bowl add cubed potatoes, broccoli florets, quartered onions, chopped carrots, add olive oil mixture and combine.Place pork chops on baking pan, sprinkle with salt, pepper, oregano, rosemary, turn over and repeat, drizzle with olive oil. Add veggie mixture and bake for approximately 30-35 minutes, (halfway through turn the chops) or until pork is cooked (160°F). Broil for the last 3-5 minutes to brown if desired. Serve immediately. ITALIAN-STYLE PORK CHOPS
Southern cooks love to serve Swiss steak-a dish made with a tougher cut of beef that's been pounded and braised with enough red sauce that it becomes so tender you can eat it without a knife. And that's where the idea for this dish came from-pork chops cooked in marinara sauce and topped with cheese. We like to serve the chops with a bowl of egg noodles tossed with butter and chopped fresh parsley or with our Garlic Mashed Potatoes (page 21)-anything to soak up some of the delicious sauce.

- Heat the olive oil in a large skillet with a lid over medium-high heat. Season the pork with the salt and pepper. Cook, turning once, until brown on both sides, 6 to 8 minutes total.
- Pour the marinara sauce into the skillet and bring to a boil, turning the chops a few times. Reduce the heat to medium, cover the pan, and cook for 5 minutes. Turn the chops over and scatter the mozzarella and oregano on top. Cover again and cook until the cheese is melted and the pork is just cooked through, 4 to 5 minutes more.

- Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.
- Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
- Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.
ITALIAN STYLE PORK CHOPS
When I make these chops, I always have to make extra. Everyone has to eat more than they need. Great with a salad. The chops are baked in a crispy, buttery coating in the oven.

- Preheat oven to 425 degrees F (220 degrees C).
- In a medium bowl, combine the crushed saltines, Parmesan cheese, Italian-style seasoning and garlic powder and mix together well.
- Dip the chops in the melted butter and then dredge each chop in the cracker mixture, coating all sides thoroughly. Place the chops in a 9x13 inch baking dish.
