KIBBUTZ VEGETABLE SALAD

Kibbutz Vegetable Salad image

_**Editor's note:** The recipe and introductory text below are excerpted from Joan Nathan's book [](http://www.ecookbooks.com/products.html?affiliateID=16283&item=01347)_[The Foods of Israel Today](http://www.ecookbooks.com/products.html?affiliateID=16283&item=01347). _Nathan also shared some helpful cooking tips exclusively with Epicurious, which we've added at the bottom of the page._ _To read more about Nathan and Israeli cuisine, [click here.](/features/going_global/israeli/intro)_ Sometimes called Turkish Salad, this typical Israeli salad, served at almost every meal, has many variations. But one thing remains the same: the tomatoes, onions, peppers, and cucumbers must be cut into tiny pieces, a practice of the Ottoman Empire. Two types of cucumber are common in Israel: one, like the Kirby cucumber, goes by the name of _melafofon_ in Hebrew and _khiyar_ in Arabic; the other, called _fakus_ in Arabic, is thinner, longer, and fuzzy, and is eaten without peeling.

Provided by Joan Nathan

Yield Yield: 4 to 6 servings

Number Of Ingredients 11

1 green bell pepper
1 red bell pepper
1 yellow bell pepper
2 tomatoes
1 onion
1 cucumber
Salt and freshly ground pepper to taste
Juice of 1 lemon
2 cloves garlic, minced
3 tablespoons olive oil
1/2 teaspoon ground sumac or za'atar (optional)

Steps:

  • 1. Remove the pith and seeds from the peppers and dice them along with the tomatoes, onion, and cucumber. Toss together in a wooden or ceramic bowl.
  • 2. In a separate small bowl, stir together the salt, pepper, lemon juice, and garlic. Slowly whisk in the olive oil. Pour over the vegetables, mix, sprinkle with sumac or za'atar, and serve.
  • •Sumac powder, the ground berry of a Turkish evergreen tree, is available at www.ethnicgrocer.com. This Arabic ingredient, which was adopted into Israeli cooking, has a sour, fruity flavor. •Za'atar, a spice mix made from wild oregano, sesame seeds, salt, and ground sumac, is ubiquitous in Middle Eastern cooking, often sprinkled on pita bread that's been drizzled with olive oil. Za'atar is available at www.penzeys.com.

Provided by Ina Garten

Categories     side-dish

Time 20m

Yield 6 to 8 servings

Number Of Ingredients 14

1 (1 pound 13-ounce) can chickpeas, rinsed and drained
1 cup tahini (ground sesame paste)
1 cup freshly squeezed lemon juice (4 to 6 lemons), divided
3 tablespoons chopped garlic (9 cloves)
1 1/2 teaspoons ground cumin
1/2 teaspoon Sriracha
Good olive oil
Kosher salt and freshly ground black pepper
1 large hothouse cucumber, unpeeled, halved, seeded, and 1/2-inch diced
2 cups heirloom cherry tomatoes, halved or quartered
1 cup (1/2-inch-diced) Holland red bell pepper (1 large)
3/4 cup (1/4-inch-diced) red onion
1/2 cup julienned fresh mint leaves, for garnish
Toasted pita bread, for serving

Steps:

  • For the hummus, place the chickpeas, tahini, 3/4 cup of the lemon juice, the garlic, cumin, Sriracha, 2 tablespoons olive oil, 1 tablespoon salt, and 1 teaspoon black pepper in the bowl of a food processor fitted with the steel blade and process until the mixture is completely smooth. If the hummus is too thick, add a few tablespoons of warm water until it is creamy but still thick and spreadable.
  • In a large bowl, combine the cucumber, tomatoes, bell pepper, and red onion. Add 1/3 cup olive oil, the remaining 1/4 cup lemon juice, 2 teaspoons salt, and 1 teaspoon black pepper and combine.
  • Spoon the hummus onto a large (12-by-16-inch) serving platter, spreading it out with a raised edge. With a slotted spoon, mound the vegetable salad on the hummus, leaving the edges of the hummus visible. Sprinkle the vegetables and hummus with the mint and extra salt. Drizzle with olive oil and serve at room temperature with pita bread.

  • Set aside the avocado oil, salt, and pepper before preparing the vegetables to make it easier when it is time to incorporate it into the chopped veggies.
  • Chop the vegetables: This includes the cucumber, tomatoes, onion, and bell pepper. Chop the herb: Finely chop the parsley to incorporate to the salad. Cut the lemon: Best to cut the lemon (or lime) in wedges as it makes it easier to squeeze the juice out.
  • Once the ingredients are prepared, place the ingredients into a bowl suitable for tossing. Start by adding the vegetables, then the herb, lemon juice, avocado oil, then salt and pepper.

  • Heat a sauce pan over medium heat and add one tsp of olive oil. Once the oil is warm – about 30 seconds – add Israeli couscous and stir for a minute or two until Israeli couscous is slightly toasted.
  • When couscous is toasted – add 1 cup of water and chopped up bouillon cube. Be careful, the pan is hot and the water will probably instantly come to a boil, pour carefully so it doesn’t splash up.
  • While couscous is cooking, dice red pepper and cucumber – you want the dice to be roughly the same size for both. Add to a large bowl.

  • Here is the way I like to dice the Persian cucumbers-- it produces small, even, triangular pieces. Slice the Persian cucumber in half lengthwise.
  • Hold the long, thin pieces together with one hand, and slice the bunch into very small pieces with the other hand. Note: Persian cucumbers have lots of little seeds, which add to their flavor. If you have trouble digesting seeds, you can seed the cucumber easily by slicing it in half lengthwise and scooping out the seed-filled center.
