ISRAELI MALABI WITH POMEGRANATE SYRUP
Malabi is a very famous, easy sweet milk pudding from Israel. For this recipe I learned from a friend, you can use rose syrup instead of pomegranate syrup. -Kanwaljeet Chhabra, Eden Prairie, Minnesota

Steps:
- In a small heavy saucepan, whisk milk and sugar. Cook and stir over medium heat until bubbly. In a small bowl, mix cornstarch and water until smooth; stir into pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove from heat. Stir in cream and rose water. Cool 15 minutes, stirring occasionally. Transfer to dessert dishes. Press plastic wrap onto surface of pudding. Refrigerate until cold. For syrup, in a small saucepan, combine sugar and pomegranate juice. Cook and stir over medium heat until sugar is dissolved, 3-4 minutes. Remove from heat; cool completely. Spoon syrup over pudding; sprinkle with pomegranate seeds and pistachios.

- Finely chop pistachios and set aside. Add some of the milk, all of the rose water, and starch to a bowl and whisk to combine.
- Add remaining milk, sugar, and heavy cream to a pot over medium heat and stir to combine. Stir in milk and starch mixture and heat until the mixture thickens. Stir constantly to prevent any lumps from forming.
- Before serving, remove milk puddings from the fridge. Pour pomegranate syrup on top and sprinkle with ground cardamom, chopped pistachios, and edible rose petals. Enjoy!

- Whisk together the sugar, cornflour and 50ml (approx 3 tbsp) of the almond milk in a large jug. Mix in the rose water and set aside.
- Place the remaining 150ml almond milk and the coconut milk in a saucepan and heat, stirring, until almost boiling.
- Slowly pour the hot liquid into the cornflour mixture, whisking constantly. Transfer the mixture back into the saucepan and return to the heat.
- Bring to a simmer, whisking constantly, and cook for 30 seconds to 1 minute until the liquid thickens slightly.

- In a medium saucepan, combine coconut milk/ cream with water. Set to heat on medium heat; when the liquid is hot to the touch, add cardamom, coconut Flavorall stevia drops and vanilla extract and stir.
- When liquid is boiling, lower heat gradually add in water-cornstarch mixture, constantly stirring. Stir for two minutes, taking care to avoid any lumps from forming.
- Immediately pour vegan malabi into small glasses or ice cream bowls. Let cool in refrigerator for at least one hour, and preferably several hours.
- Sugar-free strawberry rose syrup: in a blender, combine strawberries with stevia drops and rose water. Process until fully combined.

- In a medium, heavy-bottomed sauce pot, combine the water and sugar. Whisk to combine and dissolve the sugar. Bring to a boil over medium-high heat, boiling for 1 minute total. Remove from heat and cool for 5 minutes.
- Before serving, spoon around 1 teaspoon of rose water syrup over each serving of of chilled malabi. Garnish with pistachios and coconut. Serve immediately.

- Put the milk, agave nectar, cornstarch, and rose water (or flavoring of choice) in a pot and stir to combine (a whisk works best but a wooden spoon will do).
