ISLAND-STYLE FRIED RICE
Everyone in Hawaii has their own version of fried rice. This is my own version of fried rice that the locals ate in Hawaii.

Steps:
- Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Let the rice cool completely.
- Heat 2 teaspoons of oil in a skillet over medium heat, and brown the luncheon meat and sausage. Set aside, and pour the beaten eggs into the hot skillet. Scramble the eggs, and set aside.
- Heat 2 tablespoons of oil in a large nonstick skillet over medium heat, and stir in the rice. Toss the rice with the hot oil until heated through and beginning to brown, about 2 minutes. Add the garlic powder, toss the rice for 1 more minute to develop the garlic taste, and stir in the luncheon meat, sausage, scrambled eggs, pineapple, and oyster sauce. Cook and stir until the oyster sauce coats the rice and other ingredients, 2 to 3 minutes, stir in the green onions, and serve.

SPAM MUSUBI
Steps:
- Slice the SPAM into about 8-10 slices (depending on how thick you like it) and put in a Ziplock bag. Mix oyster sauce, soy sauce and sugar until sugar is dissolved and add to the bag with the SPAM. Marinate for about 15 minutes.
- Drain off marinade and fry SPAM on each side over medium heat until slightly crispy or until desired doneness. Some people like to glaze the SPAM with the marinade/sauce AFTER frying, either way tastes great!
- Place a strip of nori on a cutting board or clean surface (shiny side down). Place your Musubi mold across the middle of the nori. Add Sushi Rice to the mold, pressing down firmly and evenly, so there is about 1-1 1/2 inches of rice. (dip the mold and your fingers in water as you go to prevent sticking)
- Next, remove the mold from the rice. Now you will have a nice little block of rice right on the nori. Add some of the cooked spam to the top. Wrap up one side of the nori and stick it to the top of the SPAM, then wrap up the other side. Just like you are wrapping a nice little package. Use a little water on your finger to seal if needed. Serve warm.
- Some like it dipped in soy sauce, some like it with ketchup, and some like it as is.

KIMCHI, SPAM, AND EGG SCRAMBLE RECIPE BY TASTY
This was a breakfast staple in my house growing up. My dad fries up Spam until crispy, adds some kimchi for flavor, and scrambles in a few eggs. We serve it over rice with seaweed seasoning, but salt and pepper work great too.

Steps:
- Dice the Spam into small cubes.
- Crack the eggs into a small bowl and beat to combine.
- Heat the olive oil in a medium nonstick skillet over medium-high heat. Add the Spam and cook until golden brown and crispy, stirring often, 3-4 minutes.
- Reduce the heat to medium-low, add the kimchi, and cook until fragrant, 2-3 minutes. Push mixture to one side of the pan and melt the butter in the empty side. Reduce the heat to low, add the eggs, and cook, stirring frequently, until scrambled to your desired doneness. Stir in the kimchi and spam until well combined.
- Add the rice to 2 serving bowls and divide the scrambled egg mixture between the bowls. Top with furikake, if desired.

- Cook the Spam. In a skillet over medium heat, lay the Spam slices in a single layer. Pan fry each side for a minute. Pour the soy sauce-sugar mixture over all the Spam. Let the Spam soak up the sauce. The sauce will get thicker and caramelize a bit. Pan fry an additional 2 minutes. Turn off heat and remove the Spam to a plate. You want the Spam to be both a bit crispy and saucy.
- Assemble the musubi. There are two popular methods. Method #1 is Spam on top. Method #2 is Spam in the middle. You can stick with one method try both and see which you prefer.

- Spam Musubi. One does not mention Spam recipes without mentioning the king of them all: the Spam musubi! Spam musubis make a great snack and can be found at almost all convenience stores in Hawaii.

- The Hot Hawaiian Breakfast: Spam, eggs, and rice. Spam, eggs, and rice is what I like to call “The Hot Hawaiian Breakfast.” This recipe is just a local interpretation of the sausage, egg, and hash brown breakfast that is popular on the mainland.
- Budae Jjigae, or “Army Base Stew” I worked in South Korea for 2 years and ate many great dishes there (most of which are waaaay too spicy for a guy raised in Hawaii).
- The Spamwich. Because of it’s rectangular-size and because it’s so easy to slice, SPAM can easily be used for a sandwich. You can make whatever type of sandwich you want with SPAM, but I highly recommend that you cook your SPAM first.
