This yummy easy to make tuna salad recipe comes from one of our readers. It makes fantastic tuna salad sandwiches, or you can serve it alone with other salads for a light lunch.

4 cans tuna (preferably flaked light tuna in water or broth)
1/2 onion (large, finely chopped)
2 pickles (medium size, sweet or dill, finely chopped)
1/2 cup mayonnaise
pepper to taste

Steps:

  • Drain the tuna of water and break it apart in a mixing bowl. Add the chopped onion and pickles.
  • Start adding the mayonnaise until you reach your desired consistency. Pepper to taste and add salt if you think you need it.

Less fat and more flavor! My favorite way to serve this sandwich is with a slice of tomato, a slice of avocado, and some lettuce, on toasted rye bread. The pickles and dill are key to the fabulous taste - The more sour the pickles the better (cornichons are great for this). You can try substituting a smaller amount of dried dill if you don't have access to fresh herbs.

1 (6 ounce) can solid albacore tuna in water
1 stalk celery
2 tablespoons finely diced sour dill pickles
1 1/2 tablespoons mayonnaise (real mayo, preferably Hellman's)
1 tablespoon lemon juice
1 teaspoon Dijon mustard
2 teaspoons fresh dill, minced
fresh ground black pepper (generous amount)

Steps:

  • Drain tuna. With a fork, break it up in a bowl into the size and texture you prefer (I like to leave some chunks - others prefer it totally mashed).
  • Add all the other ingredients and stir until fully combined.
  • Serve cold, in a sandwich or over a green salad.

2 (12 ounce) cans albacore tuna in water, drained well
1/4 cup chopped onion
2 tablespoons sweet pickle relish
1/2 cup finely chopped apple
1/2 teaspoon tarragon
2 teaspoons Dijon mustard
1/4 teaspoon black pepper
1/4-3/4 cup mayonnaise, use whatever amount to taste

Steps:

  • Place tuna in a large bowl and flake well with a fork.
  • Add all remaining ingredients (start low with the mayo and work up to desired amount.
  • Mix well.
  • Chill for at least 2 hours for best flavor.

I wanted a tuna sandwich but wanted it crunchy and easy. It is an easy no fail recipe that you can add on to or take away. It was perfect to me. I used Recipe #363253 for the eggs to try something new which worked perfectly.Food for thought... Refrigeration time is not included since it is optional prior to serving.

3 (7 ounce) cans solid white tuna packed in water, drained
1/2 cup mayonnaise
1/2 cup celery, diced
1/2 cup valdalia onion, finely chopped
3 hard-boiled eggs, cooled peeled, and chopped
salt
pepper

Steps:

  • Drain the tuna as well as you can and place it in a mixing bowl.
  • Add the mayonnaise and stir it into the tuna.
  • Add the chopped onions, diced celery, and chopped up hard boiled eggs.
  • Season with a pinch of salt and black pepper and mix well.
  • Serve immediately or chilled.
  • Serve on toast, either open faced, or in a regular sandwich with lettuce and tomatoes. This is also very yummy with crackers. For a low carb option, serve on sliced lettuce.

1 cup green beans, trimmed
2 cups baby potato, halved
1 lemon, sliced
1 tablespoon olive oil, divided
½ teaspoon salt, plus more to taste
½ teaspoon pepper, plus more to tate
½ teaspoon paprika
1 tablespoon fresh rosemary, minced
1 tablespoon fresh thyme, minced
3 cloves garlic, minced
1 red bell pepper, halved and seeded
mixed greens salad
hard-boiled egg, optional
2 tablespoons balsamic vinaigrette, optional
10 oz tuna, canned, drained
1 stalk celery, diced
¼ cup greek yogurt
salt, to taste
pepper, to taste
1 teaspoon fresh parsley

Steps:

  • Preheat the oven to 375˚F (190˚C).
  • On a baking sheet lined with parchment paper, add the green beans, potatoes, and lemon.
  • Drizzle the vegetables with 2 teaspoons of olive oil and season with salt, pepper, paprika, rosemary, thyme, and garlic. Mix until evenly coated.
  • Add the bell pepper halves to the center of the baking sheet and drizzle with the remaining teaspoon of olive oil, ½ teaspoon of salt, and ½ teaspoon of pepper.
  • Roast for 20 minutes until vegetables are golden brown. Let cool.
  • Make the tuna salad: combine the tuna, celery, Greek yogurt, salt, pepper, and parsley in a medium bowl.
  • Add a large handful of greens to 2 bowls. Divide the roasted vegetables and bell pepper halves between the bowls. Add a hard-boiled egg, if desired. Scoop the tuna salad into the bell peppers.
  • Serve with a balsamic vinaigrette, if desired.
