Categories     main-dish

Time 50m

Yield 6 servings

Number Of Ingredients 17

4 garlic cloves, chopped
4 tablespoons cooked spinach, squeezed dry
12 artichoke hearts, quartered
12 eggs
4 tablespoons olive oil
1 red bell pepper, chopped
1 red jalapeno, minced
4 ounces prosciutto, diced
8 asparagus spears, sliced
2 tablespoons minced chives
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 cup shredded Gruyere
Salt and pepper
Pinch cayenne pepper
2 tablespoons grated Parmesan

Steps:

  • To make omelets, using 2 eggs each, make variations using the above ingredients.
  • For the first omelet, combine 1 clove of garlic, spinach, artichokes, eggs, and mix well. Fry in a small omelet pan with olive oil. Flip and cook other side, then transfer to a plate.
  • For the second omelet, saute the red bell pepper, and jalapeno with 1 garlic clove. Cook until pepper is softened. Add the prosciutto, 2 eggs, and cook flat, then flip and cook the other side. Transfer to a plate.
  • For the third omelet, saute the asparagus with the remaining garlic, and cook until asparagus is tender. Pour 2 beaten eggs and chives over asparagus, and cook until done on first side. Flip, cook other side, and transfer to a plate.
  • Repeat each step for each omelet depending on how many omelets you wish to serve.
  • Preheat the broiler.
  • To make the sauce, melt the butter in a saucepan, sprinkle with the flour and cook for 1 to 2 minutes over medium low heat until flour begins to turn golden. Remove from heat; add milk, and stir, mixing well. Return to heat and stir as it cooks, thickening the sauce. Stir in the cheese, and season with salt, pepper, and cayenne pepper.
  • To serve, plate the omelets, pour cheese sauce over, sprinkle with grated Parmesan, and broil until lightly browned. Serve immediately.

HOW TO MAKE A VEGETABLE OMELETTE

How to Make a Vegetable Omelette image

Learn how to make an omelette with this delicious, easy recipe. It's filled with the best fixings: onion, pepper, and cheddar cheese!

Provided by Sarah Bond

Categories     Breakfasts

Time 15m

Number Of Ingredients 9

3 large eggs
2 tsp milk, cream, or sour cream (10 mL)
1 Tbsp butter (divided, 14 g)
¼ cup chopped mushrooms (15 g)
2 Tbsp finely chopped white onion
2 Tbsp finely chopped red bell pepper
2 Tbsp finely chopped green bell pepper
¼ cup shredded cheddar (28 G)
Salt and pepper (to taste)

Steps:

  • Beat: Whisk together the eggs and dairy until smooth (the egg yolks and whites should be completely mixed together).
  • Veggies: Melt half of the butter in a large saute pan over medium heat. Add mushrooms, onion, and peppers. Cook until soft, about 5 to 7 minutes.
  • Egg: Add remaining butter to the pan and allow to melt. Reduce heat to medium/low, then pour eggs over the veggies. Allow bottom of eggs to slightly set, 2 to 3 minutes. With a spatula, gently push an edge of the egg up while tilting the pan to allow the liquidy egg on top to flow underneath. Repeat this around the edge of the pan until no liquid is left.
  • Cheese: When the egg is almost done cooking, sprinkle on the cheese and allow it to melt.
  • Fold: Fold the omelette in half or into thirds (Pro-tip: Slide half of the omelette out of the pan and halfway onto a plate, then fold the remaining half over itself). Season with salt and pepper. Serve immediately.

OPEN-FACED SMOKED SALMON OMELET

Open-Faced Smoked Salmon Omelet image

Provided by Food Network

Time 25m

Yield 2 servings

Number Of Ingredients 11

6 large eggs
2 tablespoons half-and-half or water
1/4 teaspoon fine salt
1/4 teaspoon freshly ground black pepper
2 tablespoons unsalted butter
2 ounces cream cheese, cut into small bits
2 ounces thinly sliced smoked nova salmon or lox, cut into 1-inch long thin strips
2 tablespoons finely diced red onion
2 teaspoons drained small capers
4 lemon slices
Snippets of fresh dill, for garnish

Steps:

  • Preheat the broiler and arrange the oven rack in the highest position.
  • Put the eggs, half-and-half, salt and pepper in a bowl and whisk until frothy.
  • Melt the butter in the skillet over medium-high heat. Pour in the egg mixture and let sit until the bottom starts to cook. Using a rubber spatula, slowly push the cooked egg from 1 side of the skillet to the other, allowing the raw egg to reach the bottom and cook--this creates fluffiness and keeps the bottom from burning.
  • When the omelet is cooked on the bottom and the top is still runny, place the skillet just under the broiler with the oven door open and the handle sticking out, and broil until the omelet rises and browns lightly, about 1 minute. (Alternatively, flip the omelet in the skillet and cook briefly, to finish.)
  • Scatter the cream cheese and smoked salmon over the omelet; then sprinkle with the onion and capers. Broil again to warm the topping, about 30 seconds
  • Transfer the omelet to a cutting board, and cut into 4 triangles. Divide the omelets among plates and garnish with the lemon slices and dill.

PERFECT OMELETS

Perfect Omelets image

An omelet, especially one with lots of veggies and lean meat, is a satisfying solution for time-strapped nights -- particularly when you're only cooking for one or two. Complete the meal with a green salad and buttered whole-grain toast.

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 5m

Number Of Ingredients 5

3 large eggs, preferably room temperature
Coarse salt and ground pepper
1 tablespoon chopped scallions, and/or fresh herbs, such as parsley, tarragon, chives, dill, or cilantro (optional)
1 tablespoon butter, plus more for serving
1/4 to 1/3 cup desired filling

Steps:

  • Have a serving plate ready. In a medium bowl, whisk eggs until frothy. Season with salt and pepper; whisk in scallions and/or herbs, if using.
  • Heat butter in an 8-inch nonstick skillet over medium-high, tilting to coat pan; after foaming subsides, whisk eggs again, and add to skillet.
  • Cook, stirring quickly with a heatproof rubber spatula, until eggs begin to thicken, about 30 seconds. With spatula, pull edges of omelet in toward center, tilting pan so uncooked eggs flow to edges of pan and underneath omelet. Cook until just set but still loose, 15 to 30 seconds (omelet will continue to cook once removed from heat).
  • Sprinkle with filling. Using spatula, loosen omelet from skillet on all sides; shake pan to ensure it is completely released. Tilt pan toward serving plate; with spatula, working from side of skillet that's tilted up, fold 1/3 of omelet over the center.
  • Simultaneously slide and roll omelet onto plate so that it folds over on itself again and lands seam side down. Brush or dab lightly with butter; serve immediately.
