This is my favorite Cornbread Dressing I use for special holidays. I make my own white bread using my bread machine and my own Skillet Cornbread to use in this recipe. If you prepare the bread ahead of time, you can freeze them until ready to use. I really like this dressing. It is easy to do and has a great flavor. I like to add fresh mushrooms to the mix. 2 cups chopped onions
2 cups chopped celery
1/2 cup butter
4 cups finely crumbled toasted bread (I use homemade)
4 cups finely crumbled cornbread (see recipe I posted for Skillet Cornbread)
1 tablespoon salt
2 teaspoons freshly ground black black pepper
1 tablespoon dried sage
2 teaspoons poultry seasoning
turkey broth (from simmering turkey giblets with 3 1/2 cups water for 45 minutes. You can use unused portion to ma)
4 large eggs, beaten

Steps:

  • Melt butter in a skillet; add the onions and celery and saute until tender.
  • Combine toasted bread and cornbread in a large bowl and mix.
  • Add onions and celery plus their cooking liquid, the salt, pepper, sage, and poultry seasoning and mix throughly.
  • Using a bulb baster, add just enough turkey giblet broth to make a very moist mixture, then stir in the eggs and scrape the dressing into a large greased baking pan or dish.
  • Bake in 400 degree F oven until dressing is nicely browned, about 30-40 minutes.

1 (16 ounce) package dry corn bread mix
2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock
2 tablespoons dried sage
salt and pepper to taste

Steps:

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
  • In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
  • Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

¼ cup butter
2 cups chopped onion
2 cups chopped celery
1 tablespoon minced garlic
2½ cups chicken broth
1 (10.-ounce) can cream of chicken soup
2 large eggs, lightly beaten
1 tablespoon poultry seasoning
½ teaspoon salt
½ teaspoon ground black pepper
2 (6-ounce) packages buttermilk cornbread mix, baked according to package directions

Steps:

  • Preheat oven to 350°. Spray a 3½-quart baking dish with cooking spray.
  • In a large skillet, melt butter over medium heat. Add onion, celery, and garlic; cook, stirring occasionally, for 8 to 10 minutes or until tender.
  • In a large bowl, stir together broth, next 5 ingredients, and cooked vegetables. Crumble cornbread into broth mixture, and stir until well combined. Pour mixture into prepared pan.
  • Bake for 45 to 55 minutes or until center is set. Let stand for 10 minutes before serving.

MOM'S TRADITIONAL SOUTHERN CORNBREAD DRESSING

Moist cornbread dressing with celery and onions is an absolute must on every Southern Thanksgiving table. My mom's recipe for Southern Cornbread Dressing is simple and classic with all the nostalgic flavors that I need from my Thanksgiving plate!

2 C cornmeal
½ C all purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp sugar (optional)
2 eggs
2 C buttermilk
2 T bacon drippings (or melted butter)
½ C butter
1 bunch green onions
1 large onion
4 celery ribs
1 6 oz package of herb-seasoned stuffing mix
4 eggs
7-8 C chicken stock

Steps:

  • Preheat oven to 425. In a 10-inch cast iron (or a 9-inch cake pan if you don't have a cast iron, melt 2 Tb of bacon drippings, or butter if you're substituting, in the preheated oven for 5 minutes until completely melted. Remove from the oven and set aside.
  • Combine the first five ingredients in a large mixing bowl and whisk to combine well. Ditch the whisk and switch to a spatula to combine with the liquid to avoid overmixing. Overmixing will give you a tough cornbread. Mix 2 C of buttermilk and 2 eggs, breaking up the eggs in a separate small bowl before adding to the mix. Stir until combined without overmixing.
  • Last, add the melted bacon drippings or butter. Pour back into the prepared cast iron and back for 25 minutes or until golden brown.
  • Once cooled, break up the cornbread into rough chunks and spread out onto a baking sheet to dry out for a minimum of 8 hours or preferably overnight. The more dry the cornbread, the more flavors it will soak up.
  • Preheat the oven to 350 degrees.
  • Melt 1/2 C butter in a large skillet over medium-high heat. Add the green onions, onion, and celery. Cook until tender or about 5 minutes. Crack the eggs into a small mixing bowl and beat slightly.
  • Add the cornbread and sautéed veggies to a large mixing bowl. Mix to combine. Add the eggs, stuffing mix, and chicken broth and mix until combined. The amount of chicken broth will depend on your personal preference. Check out the post content above for more on this topic.
  • Pour into a 9" x 13" baking pan. Bake for 50 minutes or until lightly browned.

2-1/2 cups of day-old cornbread, crumbled
1 slice of day-old bread, crumbled (regular or gluten-free)
1-1/2 cup of chicken or turkey broth
1/2 cup of chopped onion
1/2 cup of chopped celery
1 egg
1/4 cup of milk
1 tablespoon of butter
1 teaspoon of sage
1/2 teaspoon of salt
Dash of pepper

Steps:

  • Preheat the oven to 400 degrees F. Spray a 7" x 11" or 8" x 8" baking dish with nonstick cooking spray.
  • Melt the butter in a medium saucepan. Add the chopped onion and celery. Sauté until the onion is translucent.
  • Add the salt and pepper. Give it a quick stir.
  • Remove from the heat, add the sage, and stir again. Set it aside.
  • Pour the crumbled cornbread and bread into a large mixing bowl.
  • In a small bowl, whisk the egg and milk until it is well mixed. Pour the mixture into the large bowl with the cornbread and mix.
  • Slowly add the broth and stir.
  • Now add the sautéed onion and celery.
  • Pour the entire mixture into the baking dish and bake for approximately 25 minutes, until the top has turned a medium golden brown.

This recipe makes one large and one small pan of dressing, so it's ideal for extremely large families. Of course, you can always serve one dish and put one in the freezer to save for later. This cornbread dressing recipe has so much flavor because it's seasoned with sage and parsley, and the texture is always perfectly moist. Even though buying boxed or premade cornbread can make dressing recipes a lot easier, this recipe uses homemade cornbread, and your family will taste the difference. 1 cup butter or margarine, divided
3 cups cups self-rising white cornmeal mix
1 cup all-purpose flour
7 large eggs, divided
3 cups buttermilk

Steps:

  • Place 1/2 cup butter in a 13- x 9-inch pan; heat in oven at 425° for 4 minutes.
  • Stir together cornmeal and flour; whisk in 3 eggs and buttermilk.
  • Pour hot butter into batter, and stir until blended. Pour batter into pan.
  • Bake at 425° for 30 minutes or until golden brown. Cool. Crumble cornbread into a large bowl; stir in breadcrumbs, and set aside.
  • Melt remaining 1/2 cup butter in a skillet over medium heat; add onions and celery, and sauté 5 minutes. Stir in sage, parsley, and seasoned pepper; sauté 1 minute. Remove from heat, and stir into cornbread mixture.
  • Whisk together chicken broth and remaining 4 eggs; stir into cornbread mixture. Pour evenly into 1 lightly greased 13- x 9-inch pan and 1 lightly greased 8-inch square pan.
  • Bake at 400° for 35 to 40 minutes or until golden brown.

5 ribs celery - strings removed and chopped
1 medium onion - chopped
1 pan cornbread
2 cups stale bread or biscuits

Steps:

  • Heat oven to 350 degrees. Prepare a 10x15 (large 4.8 quart) baking pan with cooking spray. Set aside.
  • Add butter to a pan and saute celery and onions until tender.
  • Crumble cornbread and biscuits or bread into a large bowl. Add stuffing mix. Add cooked vegetables. Add in eggs and 4 cups of stock. Mix well. Add in salt, pepper and celery salt. Mix again. 4 cups cubed stale bread
1 cup butter, melted
2 large onions, chopped
1 ½ cups chopped celery
2 cups turkey broth, or as needed

¼ cup chopped, cooked turkey giblets
4 large hard-cooked eggs, chopped

1 Medium Apple (Diced in 1/4" squares)
6 Irish Sausages (Galtee Traditional Gold Pork Bangers)
1 stick softened butter
2-3 stalks chopped celery
6 leaves fresh sage (chopped)
4 large corn muffins or 2/3 lb corn bread (preferably a few days old and getting stale)
1 handful of macadamia nuts or half a jar or canned chesnuts
4 large eggs
1 cup chicken stock

Steps:

  • Heat the oven to 350 degrees F. Heat two pats of butter in a skillet over medium-high heat and add the sausages and chopped celery. Cook for about 10-15 minutes turning every 2-3 minutes until sausages are a nice dark brown all over. Set sausages and celery aside on a plate or bowl to cool for a few minutes so that you can handle them. Coarsely chop macadamia nuts (or break up chesnuts with your fingers). Grease a 9x5 bread loaf pan with a little butter. Crumble the corn muffins (or corn bread) into a large mixing bowl. Chop the sausages into nibble size pieces about the same size as the chopped apple-leave the crispy brown casing on the sausage. Add the chopped sausages and celery to the mixing bowl that contains your crumbled corn muffins. Add chopped sage, chopped nuts, eggs, remaining butter and about 1/4 cup chicken stock to the mixing bowl. Using your hands thoroughly mix all the ingredients in the mixing bowl adding more chicken stock if the dressing is too dry. (You want the mixture to be about the same consistency as oatmeal - but not actually liquidy.) Put the dressing into your pan and bake at 350 degress F for one hour, or until the top is brown and crispy.
