Easy Irish Soda Bread image

This is the best Irish soda bread I've ever had. It's lighter and softer than most others I've tried. We like slices spread with whipped butter. -Kerry Barnett-Amundson, Ocean Park, Washington

Number Of Ingredients 9

3-1/2 cups all-purpose flour
1/2 cup sugar
2 tablespoons caraway seeds
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 large eggs
2 cups (16 ounces) sour cream
3/4 cup raisins

Steps:

  • Preheat oven to 350°. In a large bowl, combine the flour, sugar, caraway seeds, baking powder, salt and baking soda. In a small bowl, whisk eggs and sour cream. Stir into dry ingredients just until moistened. Fold in raisins. , Spoon into a greased 9-in. springform pan. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool on a wire rack for 10 minutes before removing sides of pan. Cut into wedges; serve warm.

½ cup white sugar
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
¾ teaspoon salt
3 cups raisins
1 tablespoon caraway seeds
2 eggs, lightly beaten
1 ¼ cups buttermilk
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cast iron skillet or a 9 inch round baking or cake pan.
  • In a mixing bowl, combine flour (reserving 1 tablespoon), sugar, baking powder, baking soda, salt, raisins and caraway seeds. In a small bowl, blend eggs, buttermilk and sour cream. Stir the liquid mixture into flour mixture just until flour is moistened. Knead dough in bowl about 10 to 12 strokes. Dough will be sticky. Place the dough in the prepared skillet or pan and pat down. Cut a 4x3/4 inch deep slit in the top of the bread. Dust with reserved flour
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 65 to 75 minutes. Let cool and turn bread onto a wire rack.

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 8x4 inch loaf pans.

This is a delicious twist on the traditional Irish Soda Bread, that omits the "soda" entirely and substitutes sour cream for the traditional buttermilk. I think it makes the loaf more moist, sweet and delicious. It has become my favorite version. My husband got it from a colleague, whose great-grandmother (Mary Moriarty, born in Killarney, County Kerry, Ireland in 1902) handed it down to her. Bravo Mary Moriarty!

Number Of Ingredients 10

3 cups flour
2 1/2 teaspoons baking powder
1 dash ground cinnamon
1/2-3/4 cup sugar
1/2 cup butter or 1/2 cup margarine
1/2 teaspoon salt
2 large eggs
1 cup sour cream
2 cups raisins (optional)
1 tablespoon caraway seed (optional)

Steps:

  • Sift first 3 ingredients together in Large bowl (#1).
  • Mix next 5 ingredients in Smaller bowl (#2).
  • Slowly mix Bowl #2 ingredients into Bowl #1 until well blended.
  • Mix in 2 cups of Raisins (and 1 tablespoons Caraway Seeds, if desired).
  • Pour into 9" greased and floured round cake pan and shape into round loaf. (Note: Batter will be sticky.).
  • Sprinkle the top with Cinnamon and/or Sugar, if desired.
  • With a sharp knife, make an "X" in the top of loaf.
  • Bake for 50-55 minutes at 350 degrees.
  • When toothpick comes out clean, the bread is done.

Growing up in an Irish household, I have had the pleasure of tasting many a soda bread. It seems like every woman had her own recipe, and I have tasted them all. Some are brown and some are white, some have raisins and caraways, some have only one or neither, some are cakey and some are bready, some are round and some are oblong. This recipe uses sour cream instead of the traditional buttermilk, and is on the "cakey" side. You can bake them in either a 8x4-inch loaf pan or an 8-inch round pan.

1 teaspoon baking soda

1/2 cup (1 stick) unsalted butter, cut into small cubes and frozen, plus more, softened, for skillet
1 (8-ounce) container sour cream
1 large egg
2 cups raisins
1 cup buttermilk

Steps:

  • Preheat oven to 375 degrees with a rack set in lower third of oven. Lightly butter a 10-inch round cast-iron skillet; set aside.
  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add butter, sour cream and egg; mix, using a pastry blender, until mixture resembles coarse crumbs. Stir in raisins, buttermilk, and caraway seeds, if using, and mix until a sticky dough forms.
  • Turn dough out onto a lightly floured work surface. Using a floured bench scraper, form into a round loaf; using a sharp knife score a large "X" in the center.
  • Place in prepared skillet and transfer to oven. Bake until loaf is golden brown and a toothpick inserted into the center comes out clean, about 1 hour. If top begins to brown too quickly, loosely cover with a piece of parchment paper-lined aluminum foil. Transfer to a wire rack to cool.

1 pt sour cream

2 Tbsp caraway seeds (optional but i always use them)

  • 1. Combine dry ingredients together in a large bowl.
  • 2. In a small bowl beat eggs and stir in sour cream. Add the egg and sour cream mixture to the dry ingredients and stir with a wooden spoon. Batter will be very thick. Add the raisins and caraway seeds and stir well with wooden spoon or knead in with your hands. Place batter in a greased 9 inch springform pan.
  • 3. Dust the top with enough flour so that you can pat the batter like a bread dough evenly in the pan without it sticking to your hands. With a knife make a shallow crisscross on the top. Bake for 50 minutes in a preheated 350°F oven.
