With St Patricks Day coming I thought this would be a nice new drink to try for your yearly celebration!

1 ounce irish cream
1 ounce Chambord raspberry liquor
whipped cream
fresh berries

Steps:

  • Put the ice in a fluted champagne glass.
  • Add the Irish Cream and Chambord.
  • Top with whipped cream and berries.

2 ounces Baileys Original Irish Cream
9 -10 fresh raspberries
1/2 cup crushed ice
whipped cream and chocolate syrup (to garnish) (optional)

Steps:

  • In each of two cocktail glasses, place 4-5 raspberries at the bottom and gently muddle the berries.
  • Add 1 ounce of Baileys to each glass and then add the crushed ice.
  • Top with whipped cream and a drizzle of chocolate syrup if desired. Serve.

  • Spread the raspberries in a single layer in a shallow dish or small baking dish, sprinkle with the sugar, and set aside for 1 hour. (If you’re using frozen raspberries, this should be ample time for them to defrost.)
  • Transfer the berries and any liquid and undissolved sugar to a blender and purée. Then dump the mixture in a strainer set over a bowl and press with the back of a spoon to capture and then discard the seeds.
  • Gently fold the whipped cream into the strained raspberry purée, stirring just ever so slightly if you wish to create a “swirly” effect. The fool is now ready to be served or can be stuck in the fridge and served several hours later.
