IRISH CHEDDAR SODA BREAD



Irish Cheddar Soda Bread image

This easy soda bread is made with extra sharp cheddar, which gives it a crisp, golden crust and tender, cheesy interior.

Yield 1 loaf, about 12 servings

Number Of Ingredients 8

2½ cups all purpose flour, spooned into measuring cup and leveled-off with a knife
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 tablespoons cold unsalted butter, cut into ½-inch chunks, plus more for greasing the pan
8 ounces extra sharp Cheddar cheese, shredded (about 2 cups)
1¼ cups low fat buttermilk (see note)
1 large egg

Steps:

  • Preheat the oven to 375°F. Grease an 8-inch round cake pan with butter or nonstick cooking spray.
  • In a large bowl, whisk together the flour, baking powder, baking soda and salt.
  • Toss in the cold butter. Using a pastry cutter or two butter knives, "cut" the butter into the flour mixture until the mixture is crumbly, with some pea-size clumps of butter within. Mix in the cheese.
  • In a separate bowl, whisk together the buttermilk and the egg. Add to the dry ingredients and stir until everything is just moistened. Do not overmix.
  • Transfer the sticky dough to the prepared pan. Dust your hands with flour and press the dough to the edges of the pan. Bake the bread for 40-45 minutes, until golden brown and a cake tester comes out clean. Let the bread cool in the pan for about 5 minutes, then turn out onto a rack to cool. Cut into wedges and serve warm with softened butter.

  • Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. Once it's completely cooled, wrap it securely in plastic wrap and place in the freezer. To reheat, wrap the bread in aluminum foil and warm it in a 350°F oven until hot.

This tasty Irish Soda Bread recipe uses sharp cheddar cheese and fresh rosemary. This is perfect as a side to your corned beef dinner or for making corned beef sandwiches.

4 cups all purpose flour
1 teaspoon baking soda
1 ½ teaspoons cream of tartar
½ teaspoon kosher salt
¼ teaspoon cracked black pepper
2 tbsp butter, softened
1 tablespoons fresh chopped rosemary
4 ounces grated sharp cheddar
1 ½ cups buttermilk
1 whole large egg

Steps:

  • Heat the oven to 425 degrees F. Liine a baking pan with parchment paper.
  • In a large bowl or stand mixer, mix together the flour, baking soda, cream of tartar, salt, pepper, rosemary, cheese and butter.
  • Add the egg to the buttermilk and beat until mixed.
  • Add the buttermilk mixture to the flour and lightly mix through until it becomes sticky and a ball forms.
  • Dump the dough out onto a flour dusted work surface and roughly knead the dough into an ball shape. It may be on the wet side so have some extra flour on hand for dusting.
  • Place the dough onto your prepared baking tray. Take a sharp serrated knife and cut a small X on top of the soda bread.
  • Season the top with some more salt and pepper and bake in the oven for 45-50 minutes and the top is golden brown.
  • Let cool for 20 minutes before slicing and serving with butter.

Basic Irish Soda Bread With Cheese image

This is the most simple Irish Soda Bread recipe I've ever used. I learned it from an old Irish gentleman years ago, and it's been my favorite ever since. You can make it simply, and without the cheese, or add the cheese. With or without it, this recipe is great served with soups!

2 eggs, beaten
⅓ cup grated Parmesan cheese
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1 cup milk, or as needed

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. Beat eggs in a bowl and set aside. Place the Parmesan cheese into a shallow bowl.
  • In a bowl, mix the flour, salt, and baking soda until well combined. Add in milk, several tablespoons at a time, until the mixture forms a soft dough. Turn the dough out onto a well-floured work surface, and knead several times until the dough comes together.
  • Roll the dough out into a rectangle about 1/2 inch thick, and cut into 2x3-inch squares. Brush each square with beaten egg, and dip the top of the square into the Parmesan cheese. Place the squares onto the prepared baking sheet.
  • Bake in the preheated oven until the squares are lightly browned, about 10 minutes.

Irish soda bread flavored with cheese and herbs is the perfect, easy bread to serve with hearty stews or soups. It's also perfect served simply with butter.

4 cups flour
1½ tsp baking soda/bicarbonate of soda
1 t salt
2 cups (500ml) buttermilk
1 egg
1 cup grated cheddar cheese
½ cup fresh herbs, chopped ((I used parsley, sage and chives) )

Steps:

  • Pre-heat the oven to 180ºC/360ºF and line a Dutch oven/cast iron pot with baking/parchment paper.
  • In a large mixing bowl, whisk together the dry ingredients.
  • Whisk an egg into the buttermilk and pour into the dry ingredients.
  • Mix the dough until it just starts to come together (there will be large lumps) then add the cheese and herbs.
  • Continue mixing until the dough just comes together. The dough will be sticky and shaggy looking (not too smooth or else it will be over-mixed).
  • Transfer to the prepared pot then score a cross onto the top with a sharp knife. Cover with the lid and place in the pre-heated oven.
  • Bake for 30-45 minutes or until the bread is cooked through. It will sound hollow when knocked on the bottom and a skewers inserted will come out clean.
  • Remove from the oven and allow to cool for 10-15 minutes before slicing and serving with butter.

Irish Rarebit on Soda Bread With Cheddar Cheese and Ale image

An easy and very tasty rarebit dish made with Irish cheddar cheese and the ubiquitous Irish ale, Guinness. The Emerald Isle produces some great dairy products and none is better than their butter and Cheddar style cheese. This recipe has Ireland written right the way through it, using soda bread as the base for this cheesy snack, as well as the aforementioned cheese and ale. I have also made these to eat with a bowl of hearty soup or Irish stew, perfect for a cold or damp winter's day. Amazing high tea time food as well; served with salad, chutneys and pickles for a cheap and easy fire-side supper.

2 tablespoons butter
2 tablespoons plain flour
1 teaspoon Dijon mustard or 1 teaspoon English mustard
1 teaspoon honey
1/2 cup milk or 1/2 cup buttermilk
1/2 cup irish stout beer, such as Guinness
2 finely chopped spring onions (green onions)
1 cup irish cheddar cheese, grated (or similar Cheddar cheese)
salt and pepper
4 slices soda bread

Steps:

  • Melt the butter in a heavy pan and stir in flour to make a roux. Cook on a low heat for a further minute without allowing it to brown.
  • Remove pan from heat and gradually beat the milk or buttermilk into the roux. Return to heat and stir until the mixture thickens. Stir in mustard and honey, spring onions and finally the stout/Guinness. Cook this mixture fairly rapidly for 2-3 minutes then add the grated cheese and stir over very low heat only until all the cheese has melted.
  • Spread thickly on four slices of soda bread and place under the grill until golden brown and bubbling. Serve hot with soups, stews, salad, chutneys or pickles.
  • (Serves 2 as a light meal or snack with salad and 4 as an accompaniment to soup or stew.).

  • Pour the Irish ale in a medium saucepan and then add the spoonful of butter and the worcester sauce.
  • Place this over medium-low heat and let the butter melt in the beer for 3 minutes. Stir well. Pour in the grated cheddar cheese.
  • Stir well and let the cheese slowly melt into the buttery beer. This will take about 6 to 8 minutes. Stir regularly. Make sure not to burn it! In the meantime toast or grill the slices of soda bread. Lightly rub the bread with the garlic (don’t exaggerate). Then slice the pickled gherkins into stick slices and place those on top of the toasted bread.
  • Once the cheddar cheese has fully melted and the mixture is homogenous, thickened and creamy, stir in the egg yolk.
