1 cup flour
1/2 teaspoon salt
3 tablespoons lard
2 -3 tablespoons cold water
1 1/2 lbs lean pork, cut into 1-inch cubes
1 cup water
1/2 cup chopped onion
1 teaspoon crumbled dried sage
3/4 teaspoon salt
1/2 cup milk
1/4 cup all-purpose flour
2 large tart apples, peeled, cored, sliced
1 tablespoon sugar
1 egg yolk
1 tablespoon milk

Steps:

  • FOR THE PASTRY CRUST: Combine flour and salt, mixing well. Cut in lard until mixture resembles coarse meal. Add water a Tablespoon at a time, while stirring with a fork, just until mixture holds together. Form into ball. Cover with plastic wrap; refrigerate.
  • FOR THE FILLING: Brown pork in large saucepan over moderate heat, stirring frequently. Add water, onion, sage, and salt; mix well. Cover; simmer over low heat 30 minutes or until meat is tender.
  • Combine milk and flour; stir to form smooth mixture. Add to pork mixture in saucepan, stirring constantly to prevent lumps from forming. Cook over low heat until thickened and bubbly. Pour 1/2 of pork mixture into 1 1/2 quart lightly greased casserole. Top with apples; sprinkle with sugar. Add remaining pork mixture.
  • Roll pastry crust. Turn out dough onto lightly floured board; roll to fit casserole dish. Place over meat mixture. Turn under small margin of pastry around edge of casserole; crimp edge. Cut several steam vents in pastry.
  • Beat egg yolk and milk together; brush crust well with egg wash. Bake at 450°F for 10 minutes. Reduce heat to 350°F and bake 25 minutes more. Serve hot. Makes 4 to 5 servings.

This is a remarkably tasty dish. Love to cook it in the fall. The combination of apples and pork can't be beat. It may take a little effort, but believe me it is worth it. This is a Taste of Home Recipe. Don't let the length of ingredients fool you, it's really not that bad, just assemble everthing you need first and it will go quickly. Also don't fret if you don't have an ovenproof 12 inch skillet, that just makes it more convient, just tranfer to baking dish.

1 lb bacon, cut into 2 inch pieces
3 medium onions, chopped
3 lbs boneless pork, cubed
3/4 cup flour
cooking oil (optional)
3 tart cooking apples, peeled and chopped
1 teaspoon rubbed sage
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/4 teaspoon pepper
1 cup apple cider
1/2 cup water
4 medium potatoes, peeled and cubed
1/2 cup milk
5 tablespoons butter or 5 tablespoons margarine, divided
salt and pepper
snipped fresh parsley (optional)

Steps:

  • Cook bacon in an ovenproof 12 inch skillet until crisp. Remove with a slotted spoon to paper towels to drain.
  • In drippings, saute onions until tender; remove with a slotted spooon and set aside.
  • Dust pork lightly with flour. Brown a third at a time in drippings, adding oil if needed.
  • To pork, add bacon, onions, apples, sage,nutmeg, salt and pepper. Stir in cider and water.
  • Cover and bake at 325 for 2 hours or until pork is tender.
  • In a saucepan, cook potatoes in boiling water until tender.
  • Drain, and mash with milk and 3 tablespoons butter.
  • Add salt and pepper to taste.
  • Remove skillet from oven and spread potatoes over pork mixture.
  • Melt remaining butter; brush over potatoes.
  • Broil 6 inches from the heat for 5 minutes or until topping is browned.
  • Sprinkle with parsley if desired.

So I tweaked it and simplified it a bit, and added different ingredients along with the brown sugar. I then had a taste test with my neighbors...and they thought it was...

6 pork chops
3 onions, sliced
4 cooking apples, peeled, cored, and sliced
4 tsp brown sugar, divided
salt & pepper to taste
2-3 slices of bacon, cut up.

Steps:

  • 1. In a large casserole layer half the onions and apples. Sprinkle with 2 teaspoons of the brown sugar. Add pork chops in a single layer.
  • 2. Then layer with remaining onions and the apples. Sprinkle with the remaining 2 teaspoons of sugar. Season generously with salt & pepper. Top with the cut up bacon.
  • 3. Cover and bake in a 350 degree oven 1-1/2 hours or until meat is tender. Served with peas or green beans and mashed potatoes Enjoy. This makes a very nice dinner.
  • 4. The pictures are what I made..for myself. I cut the recipe in half for my dinner.

1 pound sliced bacon, cut into 2-inch pieces
3 medium onions, chopped
3 pounds boneless pork, cut into 1-inch cubes
3/4 cup all-purpose flour
Canola oil, optional
3 medium tart apples, peeled and chopped
1 teaspoon rubbed sage
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon pepper
1 cup apple cider
1/2 cup water
4 medium potatoes, peeled and cubed
5 tablespoons butter, divided
1/2 cup 2% milk
Additional salt and pepper to taste
Minced fresh parsley, optional

Steps:

  • In a large cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard all but 2 tablespoons drippings. Increase heat to medium-high. Add onions to drippings; cook until tender, 5-7 minutes. Remove with a slotted spoon; drain. Reduce heat to medium., Preheat oven to 350°. Toss pork with flour. Working in batches, brown pork in drippings, adding oil if needed. Remove with a slotted spoon; drain. Remove skillet from heat; discard drippings. Return pork to skillet. Add bacon, onions, apples, sage, salt, nutmeg, and pepper. Stir in cider and water., Bake, covered, until pork is tender, about 2 hours. Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes., Preheat broiler. Drain potatoes. Mash, gradually adding 3 tablespoons butter, enough milk to reach desired consistency and salt and pepper. Spread potatoes over pork mixture. Melt remaining butter; brush over potatoes. Broil 6 in. from heat until topping is browned, about 5 minutes. If desired, sprinkle with parsley.

Steps:

1 cup reduced-sodium chicken broth
3/4 cup whipping cream
1 tablespoon grainy mustard or 1 tablespoon Dijon mustard

Steps:

  • In small bowl, mix oil, garlic, sage, thyme, or 1/2 tsp crumbled dried sage and thyme) salt and pepper; rub all over roast. Cover and refrigerate for 2 hours. (Make-ahead: Refrigerate for up to 24 hours.).
  • Place roast on rack in roasting pan. Roast in 375°F (190°C) oven (or 350°F/180°C in convection oven) until meat thermometer inserted into centre registers 160°F (71°C), about 1 hour and 30 minutes. Transfer to cutting board; tent with foil and let stand for 15 minutes before slicing.
  • Cider Cream: Meanwhile, skim fat from pan juices. Add butter and melt over medium heat; fry apples and onion, stirring often, for 5 minutes. Add cider and bring to boil, scraping up any brown bits. Stir in stock, cream and mustard; boil until reduced by half, about 8 minutes.
  • In small bowl, combine cornstarch with 1 tbsp (25 mL) cold water; whisk into sauce and cook, stirring, until thickened, about 1 minute. Serve with pork. Serves 8.

1 kg pork belly
1 large onion
1 large cooking apple
2 teaspoons marjoram
2 teaspoons dried sage
2 teaspoons dried herbs
grated nutmeg (about an eigth of a nut)
ground black pepper
ground sea salt
100 g white breadcrumbs
sausage, skin (my friendly butcher lets me buy some from them)

Steps:

  • First make the breadcrumbs in a food processor, so they are fine.
  • Mince (or grind) the pork, then add the onion to the grinder, and finally the apple (peeled and cored). Add all the herbs and nutmeg and salt and pepper to taste.
  • Fill your sausage filler (either machine or hand operated one) and put the skins over the end of the nozzle.
  • Fill slowly so that the skins do not burst, and twist the finished sausages into the required size.
  • Since nothing has been pre-frozen, these will freeze well.
  • Various adaptations can be made, by adding either sun-dried tomato puree, or garlic puree for instance.
  • Prior to cooking, pierce the skins to prevent bursting.
