This Irish Lamb Stew recipe is made by slow cooking the lamb in a deep rich velvety broth. Mixed with rustic cuts of carrots and whole potatoes that make this one pot meal a complete comfort food!

Number Of Ingredients 10

2.5 pounds leg of lamb , ok to sub lamb shoulder, or any lamb roast
1 teaspoon salt
1 teaspoon pepper
2 tablespoons olive oil
1 pound potatoes, peeled, cut to large chunks
2 large onions, cut to large chunks
4 extra large carrots, peeled,cut to large chunks
1/4 cup flour
11 ounces Guinness Beer, (1/2 bottle)
8 cups chicken broth

Steps:

  • Cut lamb into large chunks of equal size. Season all sides generously with salt and pepper.
  • In a large stockpot, add the olive oil and heat to high. Once oil is hot, cook the lamb chunks in batches about 2 minutes per side until each side is browned. (see photo in post) Once all sides are browned remove to a side plate.
  • Once all lamb is browned, and removed from the pan, add the onions and carrots and cook until the onions are caramelized about 7minutes. Then sprinkle the flour over the top and cook for 1-2 minutes more.
  • Add the beer and deglaze the pan. Scrape up all of the lamb bits from the bottom of the pan.
  • Add the lamb and the potatoes over the top of the vegetables. Then pour the chicken broth over the top, stir to mix then make sure the lamb is fully submerged in liquid.
  • Reduce the heat to medium and cover. Avoid the temptation to cook the stew on high. The lamb needs to cook on medium or low so it can break down slowly. Heating too high will result in tough lamb.
  • Continue to cook checking and stirring often to make sure the liquid is slightly bubbling but not on a full on boil. Continue to simmer for 75 to 90 minutes.
  • The stew is done when the lamb is fork tender and the vegetables are fully cooked.

I got this recipe from a friend who recently vacationed in Ireland. This is one of my favorite easy dinners! The stout beer really adds a great flavor.

2 tablespoons olive oil
3 tablespoons all-purpose flour
2 pounds beef chuck, cut into 1 1/2-inch cubes
1 pound carrots, peeled and cut into 1-inch chunks
6 large potatoes, peeled and cut into large chunks
1 white onion, cut into large chunks
2 cloves garlic, minced
2 cups beef broth
1 (6 ounce) can tomato paste
1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness(r))
1 tablespoon cold water
1 tablespoon cornstarch

Steps:

  • Heat the oil in a large skillet over medium heat. Toss beef cubes with flour to coat, then fry in the hot oil until browned. Place the carrots, potatoes, onion and garlic in a large slow cooker. Place the meat on top of the vegetables. Mix together the beef broth and tomato paste and pour into the slow cooker along with the beer.
  • Cover and cook on High for 6 hours or Low for 8 hours. During the last hour before serving, dissolve the cornstarch in cold water and then stir into the broth. Simmer on the High setting for a few minutes to thicken.

1 ½ pounds thickly sliced bacon, diced
6 pounds boneless lamb shoulder, cut into 2 inch pieces
½ teaspoon salt
½ teaspoon ground black pepper
½ cup all-purpose flour
3 cloves garlic, minced
1 large onion, chopped
½ cup water
4 cups beef stock
2 teaspoons white sugar
4 cups diced carrots
2 large onions, cut into bite-size pieces
3 potatoes
1 teaspoon dried thyme
2 bay leaves
1 cup white wine

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
  • Put lamb, salt, pepper, and flour in large mixing bowl. Toss to coat meat evenly. Brown meat in frying pan with bacon fat.
  • Place meat into stock pot (leave 1/4 cup of fat in frying pan). Add the garlic and yellow onion and saute till onion begins to become golden. Deglaze frying pan with 1/2 cup water and add the garlic-onion mixture to the stock pot with bacon pieces, beef stock, and sugar. Cover and simmer for 1 1/2 hours.
  • Add carrots, onions, potatoes, thyme, bay leaves, and wine to pot. Reduce heat, and simmer covered for 20 minutes until vegetables are tender.

1 c burgundy or dry red wine (*can sub ocean spray cran-grape if desired)
1 tsp minced garlic
1 tsp salt, or to taste
1/2 tsp pepper, or to taste
2 bay leaves
1/4 c dried thyme, crush with fingers when adding
3 lb lamb (can sub stewing beef) cut chunky bite-sized
1/4 c olive oil
2 can(s) beef broth or consommé
18-20 peeled sweet baby carrots (or 6 regular), sliced thickly
1 extra large onion, diced
4-6 medium yukon gold or red potatoes, cut large bite-sized
2 Tbsp cornstarch
2 Tbsp cold water

Steps:

  • 1. Combine first 6 ingredients.Pour over meat in a shallow dish or into a ziploc baggie. Cover and refrigerate for at least 6-8 hours. Drain meat, reserving marinade. Discard bay leaves. Heat oil in a Dutch oven over medium heat; brown meat in oil. Add beef broth or consommé and reserved marinade; bring to a boil. Cover, reduce heat, and simmer 1 1/2 hours. Add carrots, onions, and potatoes; cover and cook another 30 minutes until tender. Remove bay leaves. Mix together cornstarch and cold water in a small glass and slowly pour in while stirring. Cook and stir 1-2 minutes longer until thickened. Add more salt and pepper to taste. Serve piping hot with toast points or warm Irish Soda Bread and butter, and a pint of green beer! Slainte!

2 tablespoons vegetable oil, divided
1 pound mutton or lamb cutlets, bones removed, cut into 2-inch/5-centimeter chunks
2 pounds potatoes, peeled and cut into quarters
1 cup onion, roughly chopped
1 cup leeks, cleaned and finely sliced
1 cup carrots, roughly chopped
2 tablespoons plain flour
1 1/2 pints dark beef stock
Optional: 2 or 3 cabbage leaves, thinly sliced
Salt, to taste
Pepper, to taste

Steps:

  • Add the cabbage (if using), replace the lid, and cook for another hour. Check from time to time to make sure the stock hasn't reduced too much. If it has, add a little boiling water. The meat and vegetables should always be covered in liquid. If the sauce is too runny at the end, you can always cook the stew a little longer with the lid removed.

2 bay leaves
1 teaspoon salt

3 lbs lamb (can substitute lean beef for stewing)
1/4 cup olive oil
2 (10 ounce) cans beef broth, undiluted
6 carrots, cut into 2-inch, slices
12 small boiling onions
6 medium potatoes, peeled and halved

  • Combine first 6 ingredients.

This stew is nothing fancy, and that's why we love it! It is so easy to make, you can even skip the searing steps and simply combine the ingredients together and throw it in the oven.

1.5 lb. boneless lamb stew meat (cut into 1" pieces)
1.5 lb. boneless beef stew meat (cut into 1" pieces)
alternatively, use all lamb or all beef
3 large russet potatoes (peeled and cut crosswise into 4ths or 5ths)
2 Tbsp. roughly chopped parsley
5-6 carrots (peeled and halved crosswise)
1 medium yellow onion (thinly sliced into half moons)
4 cloves garlic (peeled)
4 sprigs thyme (divided)
4 Tbsp. live oil
Kosher salt and freshly ground black pepper (to taste)
Parmesan to serve

Steps:

  • Heat oven to 250°.
  • In a large, 8 qt. Dutch oven, heat 4 Tbsp. olive oil, then add lamb and beef meat. Sear, stirring only occasionally, over medium-high heat until almost all of the meat has browned-10-12 minutes.
  • When meat has browned, add potatoes, parsley, carrots, onions, garlic cloves, salt, pepper, and 2 1/2 cups water to the pot and bring to a simmer. Taste liquid and adjust seasoning.
  • Transfer to oven and bake, covered, until stew meat is just tender, 2-3 hours. Check midway through for seasoning, then return to oven until meat is tender.
  • Let the stew sit for 20 minutes or so before serving with fresh herbs and Parmesan cheese.

2 lbs boned lamb (Lamb is traditional) or 2 lbs boned beef, sliced, 1/4 inch slices (Lamb is traditional)
2 lbs peeled potatoes, thinly sliced (a mandolin slicer works best)
3 large onions, thinly sliced
salt and pepper, each layer to taste
2 tablespoons fresh parsley
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme
13 ounces water

Steps:

  • Trim the meat, leaving a little of the fat and slice.
  • Season the meat and veggies with salt, pepper, 2 teaspoons of parsley and the thyme.
  • Layer the potatoes, meat and onions in a large casserole, starting and finishing with a layer of potatoes.
  • Add the water and cover tightly.
  • Cook in a preheated oven at 275 degrees for 2 1/2 hours, shake occasionally to prevent sticking, and check liquid now and then.
  • Do not add unless absolutly necessary.
  • The potatoes will thicken the finished stew so it should not be too runny.
  • Just before serving, remove lid and brown the top under a hot broiler and sprinkle with remaining parsley.
  • The potatoes on top should be nice and brown and crisp.
