IRISH COFFEE PIE

- Combine the cracker crumbs, sugar and butter; press onto the bottom and up the sides of a greased 7-in. pie plate. Bake at 375° for 8-10 minutes or until lightly browned. Cool on a wire rack., In a small bowl, beat the cream cheese and sugar until smooth. Combine the water, whiskey if desired and coffee granules; beat into cream cheese mixture until smooth. Fold in whipped topping. , Spoon into crust. Cover and refrigerate for at least 2 hours before serving. Refrigerate leftovers.

Steps:
- Heat oven to 350°F.
- Combine all crust ingredients in bowl. Press onto bottom and up sides of 9-inch pie pan. Bake 7-10 minutes or until lightly browned. Cool completely.
- Combine marshmallows, milk, sugar and coffee granules in 2-quart saucepan. Cook over low heat, stirring constantly, 10-12 minutes or until marshmallows are melted. Pour into large bowl; cool completely.
- Stir bourbon into cooled marshmallow mixture; gently fold in whipped cream. Pour into cooled crust. Refrigerate 4 hours or overnight until set. Garnish with sweetened whipped cream and espresso beans, if desired.

- 1. Preheat oven to 375 degree F. Combine the cracker crumbs, sugar and butter; press onto the bottom and up the sides of a greased 7 in. pie plate. Bake for 8-10 minutes or until lightly browned. Cool on a wire rack.
- 2. While crust cools, make Ganache. In a microwave safe bowl, add Ganache ingredients, microwave for about 30 second, stir. If needs more melting, place back in microwave for a few more seconds.
- 3. Spread Ganache evenly onto the crust. Set aside.
- 4. Make filling: In a small bowl, beat the cream cheese and sugar until smooth. Combine the water, whiskey or vanilla if desired and coffee granules; beat into cream cheese mixture until smooth.
- 5. Fold in whipped topping.
- 6. Spoon into crust. I then grated some chocolate on top. Totally optional...I have also in the past grated a few Andes mints on the top. Enjoy!

This recipe came to The Times from Marti Buckley Kilpatrick, who adapted it from Dol Miles, the pastry chef at Frank Stitt's Bottega restaurant in Birmingham, Ala. Ms. Kilpatrick describes the cake as an ugly frog of a confection, but promises that anyone willing to bet a kiss on its excellence would be amply rewarded. - Heat oven to 325 degrees. Butter a 10-inch springform pan. Dust with 2 tablespoons cocoa powder.
- In a medium saucepan over low heat, warm coffee, Irish whiskey, 12 tablespoons butter and remaining cocoa powder, whisking occasionally, until butter is melted. Whisk in sugars until dissolved. Remove from heat and cool completely.
- In a bowl, whisk together flour, baking soda, salt, pepper and cloves. In another bowl, whisk together eggs and vanilla. Slowly whisk egg mixture into chocolate mixture. Add dry ingredients and whisk to combine. Fold in chocolate chips.
- Pour batter into prepared pan. Transfer to oven and bake until a toothpick inserted in the center emerges clean, 55 to 65 minutes. Let cool on a wire rack, then remove sides of pan. Dust with powdered sugar before serving, if you like.
