CREAMY COFFEE EGGNOG

4 cups cold coffee
32 ounces prepared eggnog
1 (8 ounce) container frozen whipped topping, thawed
1/2 teaspoon ground cinnamon
1 cup rum (optional)
whipped cream (optional)
freshly grated nutmeg (optional)

Steps:

  • Place coffee, eggnog and whipped topping (Cool Whip) in a large bowl and whisk until smooth.
  • Add rum and stir until blended.
  • Chill before serving.
  • To serve, garnish each cup with whipped cream and grated nutmeg, if desired (also can use cinnamon sticks).

2 quarts eggnog
1/3 cup firmly packed brown sugar
3 tablespoons instant coffee powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup Irish whiskey
1 quart coffee ice cream

Steps:

  • Combine first five ingredients in a large mixing bowl.
  • Beat at low speed until smooth; stir in whiskey.
  • Chill 1 to 2 hours.
  • Pour into a punch bowl.
  • Top punch with scoops of ice cream.

- 2 quarts vanilla ice cream
- 1 quart eggnog
- 2 cups hot brewed coffee
- 1/2 cup irish cream liqueur or flavored syrup
- 1/2 cup irish whiskey, optional
- sweetened whipped cream, ground nutmeg, mint candy sticks for garnish

Steps:

  • Scoop ice cream into a punch bowl. Add eggnog, coffee, Irish cream liqueur and, if desired, whiskey, stirring til ice cream melts slightly.
  • Serve in glass mugs. Garnish if desired. Serve at once. Makes 12 cups.

Steps:

  • Whisk 1 egg, 1 ounce Irish cream liqueur and 1/4 ounce Irish whiskey in a bowl until smooth. Bring 2 cups whole milk to a boil in a saucepan (do not use a slow cooker-it will overcook the eggs). Pour over the egg mixture, stirring to mix well. Pour into mugs. Sprinkle with nutmeg and garnish with cinnamon sticks.
  • If you don't have a slow cooker, keep these drinks warm in a saucepan on the stovetop over low heat.
