NO BAKE IRISH COFFEE BALLS



No Bake Irish Coffee Balls image

Number Of Ingredients 6

3 tablespoons instant coffee granules
1/3 cup irish whiskey
3 1/2 cups vanilla wafer crumbs
1 cup pecans, finely chopped
1 1/2 cups powdered sugar, sifted
1/3 cup light corn syrup

Steps:

  • 1. Dissolve coffee granules in whiskey in small cup. Mix wager crumbs, pecans and 1 cup of the powdered sugar in large bowl. Add whiskey mixture and corn syrup and mix well. Shape into 1 inch balls. Roll in remaining 1/2 cup powdered sugar to coat. Store in an airtight container. Makes 4 1/2 dozen My Mama Made That Junior League of Hampton Roads, Newport News, Virginia

These will become more flavorful after sitting for 2-3 days, so plan ahead or make sure you put some aside for yourself to enjoy later. Time is a guess because I have not made these yet.

3 1/2 cups vanilla wafer crumbs
1 cup pecans, finely chopped
1 1/2 cups confectioners' sugar, sifted and divided
3 tablespoons instant coffee granules
1/3 cup Irish whiskey
1/3 cup light corn syrup

Steps:

  • In a large bowl, combine the cookie crumbs, pecans and 1 cup of sugar.
  • Dissolve coffee granules in the Irish Whiskey in a small cup.
  • Add the coffee/whiskey mixture and the corn syrup to the dry ingredients, mixing until blended.
  • Shape mixture into 1-inch balls and roll in the remaining 1/2 cup of sugar.
  • Store in an air tight container.

2 cups shortbread cookies, crushed
1 1/4 cups sifted confectioners' sugar
1 cup walnuts, finely chopped
2 tablespoons unsweetened cocoa powder
1 1/2 teaspoons instant coffee crystals or 1 1/2 teaspoons instant espresso powder
1/4 teaspoon ground cinnamon
4 -5 tablespoons strong coffee or 4 -5 tablespoons water
1/2 cup sifted confectioners' sugar
sifted confectioners' sugar (optional)

Steps:

  • Combine crushed cookies, the 1 1/4 cups confectioners' sugar, the nuts, cocoa powder, coffee crystals and cinnamon.
  • Add brewed espresso, coffee or water, using just enough to moisten.
  • Form mixture into 1 1/4-inch balls.
  • Roll balls generously in the 1/2 cup confectioners' sugar.
  • Place balls on a sheet of waxed paper; let stand until dry (about 1 hour).
  • Before serving, roll balls again in confectioners' sugar, if desired.
  • To store: Place in layers separated by waxed paper in an airtight container; cover.
  • Store at room temperature for up to 3 days or freeze for up to 3 months.

1 1/2 c sifted confectioners sugar, divided
3 Tbsp instant coffee granules
1/3 c irish whiskey
1/3 c light corn syrup

Steps:

  • 1. In large bowl, combine cookie crumbs, pecans, & 1 cup of the confectioners sugar. In a small cup, dissolve coffee granules in Irish whiskey. Add to dry mixture along with corn syrup, mixing until well blended.
  • 2. Shape mixture into 1-inch balls. Roll in remaining confectioners sugar. Store in airtight container.
  • 3. COOKIES BECOME MORE FLAVORFUL AFTER SITTING 2 TO 3 DAYS!!!!

Are these ever good!! Bet'cha can't just eat one!! These are so fabulous! Even better if you're a Bailey's lover. I sometimes make these for Easter for the grownups, and I have made these as hostess gifts. They are stunning as a Christmas gift in a pretty decorated box for next door neighbors, landlady, and just in case gifts. Yield will vary, depending on how large you shape the balls. 3 cups vanilla wafers, finely chopped
1 cup pecans, chopped
3/4 cup powdered sugar
1/2 cup bailey's irish cream
3 tablespoons light corn syrup (I use Karo)
1 1/4 teaspoons unsweetened cocoa

Steps:

  • Combine all ingredients in a bowl and mix with a wooden spoon until well blended. Allow to stand for 5 minutes.
  • Shape mixture into 1-inch balls.
  • Roll balls in powdered sugar.
  • Allow to dry on wire rack for one hour.
  • Roll in powdered sugar again, if desired.
  • Store in airtight container between layers of waxed paper.
