RICH CLAM CHOWDER

Steps:
- In a stockpot, combine the potatoes, onions, celery and water. Drain clams, reserving juice; set clams aside. Add juice to potato mixture. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until potatoes are tender. , Meanwhile, in a large saucepan, melt butter over medium heat. Whisk in flour. Cook and stir for 5 minutes or until lightly browned. Gradually stir in cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Gradually stir into potato mixture., Add the vinegar, parsley, salt, pepper and clams. Cook 5-10 minutes longer or until heated through.

CLAM CHOWDER
Steps:
- First, shuck the clams and remove the bellies. Clean the clams and then chop them into small pieces. Put to the side until ready to add to the pot.
- Heat the butter in a stockpot over medium-high heat. Add the celery and sweet onion and cook, mixing often, until they begin to soften. Next, sprinkle in the salt, black pepper and seafood boil seasoning. Add the self-rising flour to make a roux. Reduce the heat to medium-low. Stir in the clams and clam juice.
- Meanwhile, cook the bacon and finely chop. Add to the pot. Add the potatoes along with the scallions. Stir to combine. Lastly, add the milk and half-and-half. Stir to warm. Serve in a bowl with parsley as a garnish.
DURTY NELLY'S SEAFOOD CHOWDER
This is one of my favorite recipes to serve on a cold, rainy day in Ireland. It is the most requested recipe that I have. It is flexible and you can use various seafood ingredients depending on availability and preference. Very nice with Irish brown bread.

- Melt butter in a skillet over medium-high heat. Saute onion and celery until tender, 3 to 5 minutes. Add milk, canned soup, potatoes, dill, red pepper flakes, black pepper, caraway seeds, hot pepper sauce, and salt. Bring to a boil. Simmer until potatoes are slightly tender, about 15 minutes. Add salmon and shrimp. Cook until opaque, about 3 minutes.

Steps:
- Chop leek and place in a bowl of cold water; agitate leeks with fingers to loosen dirt.
- Dice potatoes.
- In a large, heavy bottomed pot, saute leeks in 2 T. butter over medium heat until bright green and fragrant.
- Add clam juice and chicken broth.
- Add potatoes and simmer until potatoes are tender.
- While potatoes are simmering, in a saucepan, over medium-low heat, melt remaining butter.
- Add flour and whisk into butter, cooking for a couple of minutes.
- Add milk and whisk until smooth.
- Whisk constantly until mixture becomes very thick and bubbly.
- Add white sauce to potato/leek mixture and stir with a wooden spoon until combined well.
- Add clams, and salt & pepper to taste.

- Prep all ingredients as mentioned in the list. The recipe editor can be a pain, so when it comes to the shellfish, you can use a pound of clam and/or mussel meat. I used a combination of already cooked, shelled, and frozen meat. You can obviously cook and shell your own. I used smoked salmon and hake for my fish choices; but any combination listed would work just great. The spirit of Irish Seafood Chowder is in using what's locally caught and available, so try to do the same.
- Add butter and onions to a pot and sweat until onions are translucent.
- Add the carrots and celery and continue to sweat for a few more minutes.
- Add the flour to the mix and allow it to "cook out" the raw flour flavor.
- Add the potatoes, smoked fish, clam juice, and seafood stock to the pot.
- At this point, you can let the chowder simmer for a while, but at least 15 minutes or so. I had done everything up to now before my guests arrived and then finished the following steps in the last 10 minutes prior to eating.
- Add all of the remaining ingredient to the pot (shellfish meat, cubed fish, and heavy cream). Cook for 5-10 minutes until fish is done.
- Add salt and pepper to taste. Serve with Irish Brown Bread & butter.

- Finely dice the onion, thinly slice the bacon and peel and dice the potatoes into around 1/2in/1cm dice.
- Melt the butter in a medium pot over a medium heat and add the onion. Soften for a minute or two then add the bacon. Cook around 5 minutes until bacon is cooked but not browning and onion is translucent.
- Add the potatoes, cook a minute then add the thyme, bay leaf and stock. Season with a little salt and pepper. Bring to a simmer and simmer for around 10-15 minutes until the potatoes are cooked but not falling apart (they'll be just tender to a knifepoint).

- Add the olive oil, leek, celery, carrots and garlic to the pan and saute until the celery is tender. While the veggies are cooking, chop the bacon.
- Add the potatoes, broth and bay leaf to the pot and cook for about 20 minutes or until the potatoes are tender.
