- FOR THE PASTRY CRUST: Combine flour and salt, mixing well. Cut in lard until mixture resembles coarse meal. Add water a Tablespoon at a time, while stirring with a fork, just until mixture holds together. Form into ball. Cover with plastic wrap; refrigerate.
- FOR THE FILLING: Brown pork in large saucepan over moderate heat, stirring frequently. Add water, onion, sage, and salt; mix well. Cover; simmer over low heat 30 minutes or until meat is tender.
- Combine milk and flour; stir to form smooth mixture. Add to pork mixture in saucepan, stirring constantly to prevent lumps from forming. Cook over low heat until thickened and bubbly. Pour 1/2 of pork mixture into 1 1/2 quart lightly greased casserole. Top with apples; sprinkle with sugar. Add remaining pork mixture.
- Roll pastry crust. Turn out dough onto lightly floured board; roll to fit casserole dish. Place over meat mixture. Turn under small margin of pastry around edge of casserole; crimp edge. Cut several steam vents in pastry.
- Beat egg yolk and milk together; brush crust well with egg wash. Bake at 450°F for 10 minutes. Reduce heat to 350°F and bake 25 minutes more. Serve hot. Makes 4 to 5 servings.

PORK CHOPS WITH APPLES, ONIONS AND CHEESY BAKED POTATOES
A simple, cold-weather dinner for two in about 40-45 minutes from start to table. I often tend to make it up and experiment with my own version of what I cook. (hence my name) That was indeed the case with this yummy pork chop dinner. I think it's best served with fresh dinner bread or rolls. If you want to make this dinner for more than two just figure it this way : 1 apple, 1/2 onion, 1 potato, 1 pork chop per person. Use amounts of spices, cheese, oil and butter as necessary. Note* Using soft apples like McIntosh won't work well since they'll get too soft, too fast. You want to keep some substance to the onions and apples.

Steps:
- Heat large fry pan on med-high.
- Season pork chops on both sides with salt, pepper and thyme.
- Place chops in pan just to brown on each side, about 4 to 5 minutes turning once.
- Cut up onion and peeled apples into evenly sized chunks while meat is browning.
- Pierce potatoes with fork for venting. Heat on high in microwave for 10-12 minutes.
- Remove browned chops from pan and set aside.
- Add about 1 ½ TBSP of butter in pan and mix in with oil.
- Add onions to pan and stir to coat in butter and oil glaze.
- Add apples to pan when onions begin to soften and caramelize. Stir to coat.
- Add pork chops back into pan and cover, turning and stirring contents occasionally for about 15 to 20 minutes. Liquid in pan should become slightly thicker.
- While meat is cooking, slice baked potatoes into approximately ¼ inch slices.
- Remove skin and place slices from one potato in a layer in small baking dish.
- Add thin pats of butter and a generous sprinkling of shredded cheese on top of first layer.
- Repeat second layer the same way and place in oven until cheese just starts to brown.
- Place cooked pork chops on large serving plate. Spoon on saucy apples and onions.
- Bring it all together at the table and enjoy!

PORK CHOPS WITH APPLES AND ONIONS
Sauteed apples and onion combine with pork chops for a tastiness that never disappoints.

- Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
- Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
- Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

Steps:
- 1. Heat oven to 425°. Place bacon on lined sheet pan. Place the bacon in the oven to cook.
- 2. While the bacon is cooking. Wash and diced potatoes into 1 to 2 inch chunks. I left the skins on. Peel and core the apples. Cut and dice them into one to two inch chunks as well. Place potatoes in a large pot with water and boil. Boil until they are halfway cooked through.
- 3. Add the apples to the water with the potatoes. Cook until potatoes are tender. Drain and set aside.
- 4. Remove bacon from oven drain on paper towel. Fry the onion in 1-2 tablespoons of butter until it is caramelized. Remove from pan and set aside.
- 5. Melt 5 tablespoons of butter in pan. Be careful not to brown it. Toss the potatoes and apples with the butter coating well. Salt and pepper the potatoes to your liking. Toss with the parsley and Thyme. Add in the onion and combine all together.
- 6. Pour into the large casserole dish. Top with crumbled bacon. Bake at 400° for about 20 to 30 minutes, or until top is lightly browned. Serve!
