- Preheat oven to 350°F
- Generously grease an 8-inch square cake pan.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add the egg, apples, nuts, and vanilla and stir well.
- Sift in the dry ingredients and mix well.
- Pour the batter into the prepared pan and bake about 45 minutes, until the cake is lightly browned and a toothpick inserted into the center comes out clean.
- Remove from oven and let the cake set in the pan for 5 minutes, then remove from pan.
- Serve warm or at room temperature with whipped cream or vanilla ice cream.

- Preheat the oven to 360°F, grease and line a 8-inch cake tin with a removable base. With an electric hand mixer, beat the butter and sugar in a large bowl until pale. Add the eggs, one at a time, mixing until they are incorporated. In a separate bowl, mix together flour, baking powder, salt, and cinnamon. Fold the dry ingredients into the wet and mix until you have a thick cake batter. Stir in the apple slices and pour the batter into the cake tin. The batter will be thick, so use a spatula to spread across the base of the tin. Using a hand blender with a food processor attachment, blend the ingredients for the crumble topping until you get left with rough crumbs. You can also do this by hand in a bowl using your fingertips to combine the ingredients together. Sprinkle the crumble topping on top of the batter. Bake in the oven for 40-45 minutes or until a skewer inserted into the center comes out clean. Remove from the oven and leave to cool.

The classic combination of apple and blackberries could also be used here.

- 1. Preheat the oven to 180°C, grease and line a 20cm cake tin with a removable base.
- 2. With an electric hand mixer, beat the butter and sugar in a large bowl until pale. Add the eggs, one at a time, mixing until they are incorporated.
- 3. Fold through the flour, baking powder, salt, and cinnamon until you have a thick cake batter.
- 4. Stir through the apple and pour the batter into the cake tin. The batter will be thick, so use a spatula to spread across the base of the tin.
- 5. Using a hand blender with a food processor attachment, blitz the ingredients for the crumble topping until you get left with rough crumbs.
- 6. You can also do this by hand in a bowl using your fingertips to combine the ingredients together.

This Irish Apple Crumble Cake is reminiscent of a coffee cake, filled with tender apples, and topped with crunchy cinnamon sugar crumbles! Just as good for breakfast as it is for dessert!

- Prepare the apples. Peel, core, and thinly slice apples (~3/8" thick), toss with 3 tablespoons flour, and set aside.
- Prepare the pan. Generously butter an 8-inch cake pan that is 3-inches deep. (My preference, but you could also use a 9-inch pan or a spring-form pan.) Set aside.
- Prepare the crumble topping. Use a fork to toss all of the crumble ingredients together in a small bowl until they form clumps of sugary goodness. Set aside.
- Preheat the oven to 350 degrees Fahrenheit.
- Prepare the cake. In a medium-sized bowl, stir together flour, salt, baking powder, and spices. In a separate, large mixing bowl, beat butter and sugar for 2-3 minutes until fluffy. Beat in eggs until just incorporated. Beat in vanilla. On low, beat in 1/3 of the flour mixture until just incorporated. Mix in half of the milk. Then beat in half of the remaining flour mixture (i.e., another third). Mix in the remaining milk. Beat in the remaining flour mixture until just incorporated. Use a spatula to fold the apples into the cake batter. Pour into the prepared pan and spread evenly into the pan. Sprinkle the crumble topping across the cake and bake for 55-60 minutes until a toothpick comes out with only a couple crumbs attached.
- Cool the cake 30 minutes in the pan if serving warm or cool completely before storing. Store leftovers in an airtight container or tightly wrapped in the pan at room temperature for up to 24 hours or in the refrigerator for up to 3 days.

- Preheat your oven to 350°F. Coat the inside and sides of a 9-inch springform pan with butter and a sprinkle of brown sugar.
- In a large bowl, cream the butter and sugar together using an electric mixer, about 1-2 minutes.
- Add the eggs, one at a time, and continue mixing until fully incorporated.
- Add the flour, baking powder, salt, and cinnamon. Mix gently to combine- the batter will be thick. Fold in the apples.
- Scrape the batter into the pan.
- For the crumble topping, add all of the ingredients into a small bowl. Mix with your fingers until small crumbles start to form. Scatter evenly over the top of the cake.
- Bake for 40-45 minutes or until a toothpick comes out clean.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
- Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
- Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
- Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
- Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
- Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
- Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

- Put the apples into an 8 x 8-inch ovenproof dish. Toss in some lemon juice to stop it from going brown. Sprinkle over the sugar
