IRISH APPLE CRUMBLE CAKE
This Irish Apple Crumble Cake is reminiscent of a coffee cake, filled with tender apples, and topped with crunchy cinnamon sugar crumbles! Just as good for breakfast as it is for dessert!

- Prepare the apples. Peel, core, and thinly slice apples (~3/8" thick), toss with 3 tablespoons flour, and set aside.
- Prepare the pan. Generously butter an 8-inch cake pan that is 3-inches deep. (My preference, but you could also use a 9-inch pan or a spring-form pan.) Set aside.
- Prepare the crumble topping. Use a fork to toss all of the crumble ingredients together in a small bowl until they form clumps of sugary goodness. Set aside.
- Preheat the oven to 350 degrees Fahrenheit.
- Prepare the cake. In a medium-sized bowl, stir together flour, salt, baking powder, and spices. In a separate, large mixing bowl, beat butter and sugar for 2-3 minutes until fluffy. Beat in eggs until just incorporated. Beat in vanilla. On low, beat in 1/3 of the flour mixture until just incorporated. Mix in half of the milk. Then beat in half of the remaining flour mixture (i.e., another third). Mix in the remaining milk. Beat in the remaining flour mixture until just incorporated. Use a spatula to fold the apples into the cake batter. Pour into the prepared pan and spread evenly into the pan. Sprinkle the crumble topping across the cake and bake for 55-60 minutes until a toothpick comes out with only a couple crumbs attached.
- Cool the cake 30 minutes in the pan if serving warm or cool completely before storing. Store leftovers in an airtight container or tightly wrapped in the pan at room temperature for up to 24 hours or in the refrigerator for up to 3 days.

- Preheat the oven to 360°F, grease and line a 8-inch cake tin with a removable base. With an electric hand mixer, beat the butter and sugar in a large bowl until pale. Add the eggs, one at a time, mixing until they are incorporated. In a separate bowl, mix together flour, baking powder, salt, and cinnamon. Fold the dry ingredients into the wet and mix until you have a thick cake batter. Stir in the apple slices and pour the batter into the cake tin. The batter will be thick, so use a spatula to spread across the base of the tin. Using a hand blender with a food processor attachment, blend the ingredients for the crumble topping until you get left with rough crumbs. You can also do this by hand in a bowl using your fingertips to combine the ingredients together. Sprinkle the crumble topping on top of the batter. Bake in the oven for 40-45 minutes or until a skewer inserted into the center comes out clean. Remove from the oven and leave to cool.

Steps:
- Preheat the oven to 350°F.
- Line an 8-inch pie pan or heatproof baking dish with the pie dough; prick the dough with the tines of a fork.
- In a bowl, mix together the apples, ¼ cup of the sugar, and ¼ teaspoon of the cinnamon.
- In a second bowl, mix together the flour, ½ cup of the sugar, and the unsalted butter; work these ingredients together with a fork until you have a crumbly mixture.
- Fill the pie crust with the apple mixture and smooth over the surface.
- Spoon the crumble over the apple mixture so that the apples are completely covered.
- Sprinkle the remaining tablespoon of sugar and ¼ teaspoon of cinnamon over the crumble.
- Bake for 25 minutes.
