IRISH BEER BREAD



Irish Beer Bread image

This Irish Beer Bread recipe is so easy to make and the bread is delicious. Be sure to celebrate St. Patrick's Day with a loaf of this bread to share with your family and friends. You may have to make two!

3 cups all-purpose flour
1/4 cup white granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 egg
1 11.2 ounce bottle of Guiness Draught beer

Steps:

  • In a large mixing bowl use a wire whisk to mix together the flour, sugar, baking powder, baking soda and salt. Add the egg and beer mixing with a spoon. (I don't use a mixer with this bread)
  • Generously spray a 9 x 5 loaf pan with cooking spray and add dough for bread. Bake in a preheated 350 degree oven for 45 to 50 minutes until brown on top
  • This bread will not be white because the beer is a dark beer. It smells great while baking and is wonderful with butter while still hot. Makes one loaf of bread

Irish Beer Cheese Puffs image

While this is by no means an authentic Irish recipe, I do use Irish beer, Irish butter, and sharp Irish Cheddar (along with a French technique!) to make these easy, cheesy puffs that are perfect for entertaining. Delicious to eat alone or with this spring onion and mascarpone spread.

4 tablespoons Irish-style butter
½ cup Irish stout beer (such as Guinness® Extra Stout)
½ teaspoon kosher salt
½ teaspoon white sugar
½ cup all-purpose flour
2 large eggs
¾ cup grated sharp Irish Cheddar cheese, plus more to taste
1 pinch cayenne pepper, or to taste
1 tablespoon olive oil
2 cups chopped leeks, washed thoroughly and drained
½ teaspoon kosher salt, or more to taste
2 tablespoons water, or as needed
½ cup sliced green onions
1 tablespoon fresh lemon juice
½ cup mascarpone cheese
freshly ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
  • Combine butter, beer, salt, and sugar in a saucepan over medium-high heat. Let butter melt and bring to a simmer. Add flour all at once and stir with a wooden spoon until it all comes together, about 30 seconds. Continue to cook and stir until the dough dries out a bit and starts sticking to the bottom of the pan, another minute or so. Turn off the heat and continue stirring for another 1 to 2 minutes, scraping as much off the bottom of the pan as you can.
  • Transfer dough into a bowl. Add one egg and whisk it into a bit of the hot dough. Keep whisking in more dough until incorporated. Repeat with remaining egg, cleaning out the whisk as needed, until well combined and dough is sticky.
  • Add ¾ cup Cheddar cheese and cayenne and stir until incorporated.
  • Scoop 12 rounded tablespoons of dough onto the prepared baking sheet. Press a little Cheddar on the tops and sides of each puff.
  • Bake in the center of the preheated oven until nicely puffed and beautifully browned, about 25 minutes. Turn off the oven and crack the door; let cheese puffs cool, undisturbed, for 30 minutes.
  • Meanwhile, make the spread: Heat olive oil in a pan over medium heat. Add leek and ½ teaspoon salt; cook and stir until just barely tender, 7 to 10 minutes, adding a splash of water every few minutes to prevent browning.
  • Stir in green onions and sauté briefly for 1 to 2 minutes. Transfer leek-onion mixture to a bowl and let cool for 5 to 10 minutes.
  • Add lemon juice and mascarpone cheese and mix until well combined. Season with salt and pepper to taste. Refrigerate until cheese puffs have finished cooling.
  • Serve cheese puffs with spread.

2 1/2 cups self rising flour
12 ounces room temperature beer (the better the beer, the better the bread. I use Harps beer made by Guiness in Dublin)
2 tablespoons sugar

Steps:

  • Hand mix all ingredients only until well mixed (do not beat or use a mixer).
  • Put mixture into a greased loaf pan.
  • Preheat your oven to 375º F degrees.
  • Bake for 45 minutes.

Irish Rarebit on Soda Bread With Cheddar Cheese and Ale image

An easy and very tasty rarebit dish made with Irish cheddar cheese and the ubiquitous Irish ale, Guinness. The Emerald Isle produces some great dairy products and none is better than their butter and Cheddar style cheese. This recipe has Ireland written right the way through it, using soda bread as the base for this cheesy snack, as well as the aforementioned cheese and ale. I have also made these to eat with a bowl of hearty soup or Irish stew, perfect for a cold or damp winter's day. Amazing high tea time food as well; served with salad, chutneys and pickles for a cheap and easy fire-side supper.

Number Of Ingredients 10

2 tablespoons butter
2 tablespoons plain flour
1 teaspoon Dijon mustard or 1 teaspoon English mustard
1 teaspoon honey
1/2 cup milk or 1/2 cup buttermilk
1/2 cup irish stout beer, such as Guinness
2 finely chopped spring onions (green onions)
1 cup irish cheddar cheese, grated (or similar Cheddar cheese)
salt and pepper
4 slices soda bread

Steps:

  • Melt the butter in a heavy pan and stir in flour to make a roux. Cook on a low heat for a further minute without allowing it to brown.
  • Remove pan from heat and gradually beat the milk or buttermilk into the roux. Return to heat and stir until the mixture thickens. Stir in mustard and honey, spring onions and finally the stout/Guinness. Cook this mixture fairly rapidly for 2-3 minutes then add the grated cheese and stir over very low heat only until all the cheese has melted.
  • Spread thickly on four slices of soda bread and place under the grill until golden brown and bubbling. Serve hot with soups, stews, salad, chutneys or pickles.
  • (Serves 2 as a light meal or snack with salad and 4 as an accompaniment to soup or stew.).
