This is actually listed as a variation on Kafta in "Extending the Table". It is different enough that it warrants a separate listing. Submitted for 'Zaar WT3 NOTE: The cooking time includes 2 hours for meat to marinate.

1 lb lamb or 1 lb beef, cubed
1 1/2 tablespoons vinegar
1 1/2 tablespoons olive oil
1 onion, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Make a marinade by mixing the vinegar, olive oil, onion, salt and pepper.
  • Marinate the cubed meat in the marinade for at least 2 hours.
  • Put the meat on skewers and grill or broil for 7-10 minutes or until the meat is browned and cooked to your preference.
  • SUGGESTION: While meat is marinating also marinate large chunks of vegetables (tomatoes, onions, green peppers or eggplant) in sauce made of equal parts of olive oil and lemon juice with a dash of salt and pepper. Thread these vegetables onto skewers and grill alongside the meat.

These speedy spiced kebabs are traditionally served with a pickled mango sauce, but we think they're ace with straight-up mango chutney

400g beef mince (20% fat)
1⁄2 red onion, coarsely grated
2 cloves garlic, crushed
1 tsp aleppo pepper flakes, (see cook's notes below)
ground to make 1 tsp black peppercorns
2 tsp sumac, plus extra to serve (see cook's notes below)
4 tsp spicy mango chutney, plus extra to serve
2 tbsp tahini
leaves only flat-leaf parsley
leaves only coriander
sliced red onion
chopped tomatoes
round pittas or flatbreads

Steps:

  • Heat a griddle or grill to high. Mix together the beef, onion, garlic, aleppo pepper flakes, black pepper, sumac, mango chutney and a good pinch of salt in a mixing bowl. Divide into 8, roll into long kebabs and put a skewer through each.
  • Put the kebabs onto the griddle or under the grill for 3-4 minutes on each side or until cooked through and tender. Divide between plates and add a drizzle of tahini and a pinch more of sumac. Serve with extra mango chutney, parsley, coriander, sliced onion, chopped tomatoes and pittas or flatbreads.
