IRAQI SHABBAT CHICKEN
My husband's family come from Iraq and when I was first married, my mother-in-law taught me how to make this delicious dish. It takes a long time to cook but it is not labour intensive - believe me the taste is worth the long wait for dinner!

Steps:
- Chop onions and place in a large oven casserole dish adding tomato puree and about 1 litre of water.
- Place chicken on top of onions and put into a pre-heated oven at about 150C for about 3 1/2 hours.
- When cooked, remove chicken and place to one side.
- Take half the juices with the puree and onions and put into a saucepan. Add the okra, salt, pepper and lemon juice and bring to the boil, simmer gently for 30 minutes. If tinned okra is used, drain well before use.
- Wash Basmati rice throughly and add to the rest of the juices in the casserole dish, add some more water to just cover and place back into the oven to cook for a further 1 hour.
- When the rice is cooked, portion up the chicken and add to the top of the rice and cook for a further 1/2 hour.
- The rice is now a wonderful reddy/golden colour with the taste of the chicken infused.
- Serve altogether with the Okra sauce.

- Slice eggplants in half lengthwise then slice into 1/2-inch slices.
- Spread slices on waxed paper or cookie sheet.
- Sprinkle with salt then set aside.
- In a saucepan, cover potato slices with water, bring to a boil and cook for 6 minutes.
- Mix next 5 ingredients (beef, garlic, salt, pepper and allspice).
- Shape into 12 2-inch patties.
- Rinse eggplant.
- In deep 3-4 quart casserole arrange eggplant, potatotes (drained), tomatoes, meat patties, and onions alternately in rows, standing on end.
- Mix together remaining ingredients (tomato puree/sauce, water, salt & pepper).
- Pour sauce over casserole.
- Bake in 350F oven for 1 hour or until potatoes and eggplant are cooked through.
- Serve with warm, freshly baked bread.

- Cook potato and rice: Place potatoes in a medium pot. Fill with 3 cups water; cover and boil for 10-12 minutes or until potatoes are fully cooked. Remove from water and set aside. Cook rice according to manufacturer instructions. set aside as well to cool.
- Cook Meat Filling: While the potatoes and rice are cooking, prepare the meat filling. Heat a large pan on medium/high heat. Add ground beef and cook for 5 minutes or until the water is absorbed. Add onions and garlic and cook for 5-8 minutes or until onions are soft. Next, add the spices (salt, pepper, cumin, coriander, chili powder, cinnamon) and cook for 5 minutes. Turn off heat, add the cilantro and set meat mixture aside to cool.
- Prepare shell mixture: Place cool 2 cups cooked rice, 2 cooked (cut in 4th) potatoes, 1/4 cup cornstarch and salt in a large bowl of a food processor or electric mixture. Processor for about 1 minutes or until the mixture comes together. Do NOT over processor or mixture will turn into a paste. (If you do not have a food processor or mixer this can be also done by hand, vigorously combine and mash all the ingredients with your hand until fully combined).
- To Shape: Have a bowl of cold water nearby. Handling with slightly moistened hands, take a small amount of dough, size of a small lime, and shape it like a football or regular round ball. Hold the ball of dough in one hand and hollow it with the thumb of the other hand until you get an elongated oval shell about ¼ in. thick and 3 in. long, it does not have to be perfect. Fill and close the opening, and roll it gently from left to right between the palms to make it look like an egg with two pointed ends. Moisten your fingers whenever dough feels sticky. Put the finished ones on a big tray in one layer.
