Restaurant-Style Pizza Crust Using a Bread Machine image

I have searched long and hard for a really good, chewy, thick, pizza crust that I could put together in the bread machine. I feel that this is the closest one that I have come across that compares closely to Caesar's Pizza or Pizza Hut. You can bake this 3 different ways, which I have listed to get a unique texture each time. I have listed the ingredients in the order of my own bread machine.

Number Of Ingredients 11

1 1/4 cups warm water (120 degrees)
2 tablespoons olive oil
2 teaspoons honey
1/2 teaspoon kosher salt
1/4 teaspoon msg (Accent) (optional)
2 cups bread flour
1/4 cup parmesan cheese
1 teaspoon baking powder
2 tablespoons cornmeal
1 cup all-purpose flour
2 1/4 teaspoons yeast (or 1 package)

Steps:

  • Mix all ingredients in the order I have indicated or according to your own bread machine. Be sure NOT to let the baking powder hit any of the liquid ingredients.
  • Select the dough cycle with a 1.5 pound loaf size. Hit Start.
  • Once dough is finished, it will be a bit sticky so use a bit of olive oil on your hands to remove and place in an oiled bowl for raising. Cover with plastic wrap and let raise in a non-drafty place for an hour.
  • You can also let it raise overnight in your fridge if you wish to develop the dough's flavor and elasticity.
  • Once raised, place dough on floured surface. You may need to add a bit more flour to get the texture to thicken a bit. Knead just a few minutes, less is best. Shape dough to 3/4 the size of the pan.
  • Oil and sprinkle with cornmeal a pizza pan and then finish shaping dough into it. If using a pizza stone, place dough on pizza peel sprinkled with a bit of cornmeal. Once shaped andplaced, brush a little olive oil around edges. Top with your favorite ingredients. Pizza should be baked on lowest rack in oven.
  • Here are your choices for baking, preheat oven completely first:.
  • Cast Iron Pan: 9-10 minutes on 400ºF. Then raise to broiler and broil additional 4-5 minutes.
  • Aluminum Pan: 11-12 minutes 425ºF. Then raise to broiler and broil additional 3-4 minutes.
  • Pizza Stone: 10-12 minutes 425ºF. Then raise to broiler and broil additional 3-4 minutes.
  • If you are high elevation, decrease your temperate on all choices by 25ºF.
  • DO NOT OPEN OVEN AND CHECK ON PIZZA UNTIL YOUR MINIMUM BAKING TIME HAS COMPLETE. Once minimum time is complete, check and if near golden brown, do step two with the broiler. Cool 5-10 minutes and cut.
  • Makes 1 14"-16" Pizza.

Easy recipe for beer pizza dough using a bread machine. I always use IPA but that's just because my husband drinks IPA. I haven't tried it with any other beer but I think it would work out okay.

1 cup ipa beer, flat
2 tablespoons olive oil
1 teaspoon salt
2 tablespoons evaporated cane juice, crystals
2 1/2 cups cups unbleached white flour
2 1/4 teaspoons bread machine yeast

Steps:

  • Add all ingredients to bread maker in the order listed.
  • Press button for "dough cycle" and let the bread machine do its magic.
  • Preheat oven to 400°F.
  • When the dough is done in the machine, take it out, roll or press into pan, brush with olive oil cover, and let it rest.
  • Spread with sauce, add toppings and bake for about 20 minutes or until crust is brown and cheese is melted.

I know that there are lots of recipes out there for pizza dough, but this is the one that I've been using for quite some time now and I am always happy with the results!! It comes from my REGAL bread machine cookbook that came with the unit. I have since gotten a new machine but this is the recipe that I still use. My kids LOVE this crust!!

1 1/3 cups lukewarm water
1/4 cup olive oil
4 1/4 cups all-purpose flour
1 1/4 teaspoons salt

  • Measure ingredients into bread pan in order listed OR according to your bread machine manufacturer's recommendations.
  • Select "dough" and "large" settings.
  • Press start.

2 teaspoons sugar
1 1/4 teaspoons salt
2 tablespoons olive oil
2 tablespoons cornmeal
3 cups unbleached all-purpose flour
1 teaspoon baking powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon msg (Accent*)
1 1/2 teaspoons bread machine yeast

Steps:

  • Add ingredients (except for cornmeal) to machine bread pan in order as per manufacturer's instructions.
  • Set to "Dough" cycle.
  • Lightly grease one 9 x 13-inch pan and sprinkle with cornmeal.
  • When the dough cycle is complete, roll out dough and place in pan.
  • Let rest in pans for 10-15 minutes.
  • Add toppings of your choice.
  • Bake at 350°F until done (approximately 20 minutes, depending on the thickness of toppings).
  • I make the pizza in 9x13 rectangular pans rather than the round pizza pans, because the squares pieces are easier to reheat and pack in school lunches.

I used sparkling water just because I ran out of bottled water and I'm not a fan of tap. Give this a try. The optional ingredients can be skipped or changed to which spices you enjoy for a little something extra. Of course you would use the garlic for savory pies and cinnamon for dessert or curry type pies. But if using real garlic and not powdered do add after rising. Because garlic does kill yeast. I have made the dough with powdered garlic with no problems. Pizza is a great way to get your children into cooking.

1 1/4 cups sparkling water (tap can be used)
2 tablespoons extra virgin olive oil
4 cups bread flour
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon garlic powder (optional)
1 teaspoon rosemary (your choice of Fresh herbs) (optional)
1/2 teaspoon cinnamon (optional)
1 teaspoon fast-rising active dry yeast

Steps:

  • Place ingredients into your bread machine according to your manufactures directions.
  • Mine is wet first then placing salt sugar and yeast in separate corners.
  • Set machine on basic dough cycle.
  • When dough cycle has finished remove from machine and place on a floured surface. I use a sil pad or a dough board.
  • Divide in two.
  • Roll out to 12 in rounds.
  • Top with what ever your heart desires.
  • Bake in a preheated oven at 425 degrees for 15-20 minutes.
  • Try making a grilled pizza.

1/4 cup extra virgin olive oil
3 1/2 cups unbleached all-purpose flour
1 tablespoon sugar

Steps:

  • Place all the ingredients in the pan according to the manufacturer's instructions. Program for the "Dough" or "Pizza Dough" cycle and press "Start". The dough ball will be soft.
  • When the machine beeps at the end of the cycle, press "Stop" and unplug the machine. Immediately remove the bread pan from the machine and turn the dough out onto a lightly floured work surface. Divide into the desired number of portions. Flatten each portion into a disc by kneading a few times then folding the edges into the center. Cover with a damp towel on the work surface to res for 30 minutes until the dough has increased about 20 percent in size.
  • Rool out and shape the dough as directed in your pizza recipe. Or place the dough in plastic food storage bags and refrigerate for up to 24 hours. To use, let rest for 20 minutes at room temperature before rolling out. The dough balls may also be stored in the freezer for up to 3 months; let the dough defrost in the refrigerator overnight before using.

This pizza dough is so easy because your bread machine does all of the hard work. Preparation time is approximate as dough cycle times vary with different bread machines.

1 1/4 cups warm water (90 degrees)
1 tablespoon butter or 1 tablespoon margarine, softened and cut into pieces
3 cups bread flour
1 tablespoon granulated sugar
1 teaspoon salt
2 tablespoons nonfat dry milk powder
1 (1/4 ounce) package active dry yeast

Steps:

  • Place all ingredients into the bread machine in the order listed or as suggested by manufacturer. Set the bread machine to the "dough" setting.
  • After dough cycle is complete, remove dough from the bread machine and place it on a lightly floured cutting board (dough will be very sticky). Cover with a piece of saran wrap that has been sprayed with cooking spray. Allow to rise for 30 minutes.
  • Punch down dough and form crust on baking sheets, pizza pans, or pizza stone. Top with your favorite sauce, cheese and toppings. For thick crust pizza, allow dough to rise for 10 minutes before adding sauce and toppings.
  • Bake at 425 degrees for approximately 20-25 minutes.
