CHEF JOHN'S HOT SLOPPY JOE DIP
For me this checks all the boxes for a hot party dip. It's relatively cheap and easy to make, but maybe more importantly, it's great hot, warm, or room temp. And it's also incredibly versatile.

Steps:
- Place ground beef, bell pepper, onion, garlic, flour, brown sugar, salt, pepper, and cayenne pepper in a heavy pot.
- Place pot over medium-high heat. Break up and stir mixture as it heats. Cook and stir until most of the moisture has evaporated and mixture is crumbly and begins to brown, about 15 minutes. Stir in chicken broth, ketchup, mustard, and Worcestershire sauce. Mix well and bring mixture to a simmer. Reduce heat to medium. Cook, stirring occasionally, until mixture is thick, about 45 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Transfer mixture to oven-proof sauce pan. Top with 1/2 of the shredded cheese. Poke cheese down into the dip with a fork, stirring lightly. Top with remaining cheese.
- Place pan under broiler; broil until cheese is browned, and mixture is hot and bubbly, about 5 minutes.

Legend has it that the Sloppy Joe was first created in Sioux City, Iowa in 1930 by a cook named Joe. We think Joe would love this creamy, cheesy, game day dip! Season ground beef with McCormick® Sloppy Joes Seasoning Mix for authentic flavor. Add cream cheese, tomato sauce, onions, and Cheddar Jack cheese to beef. - Preheat oven to 350 degrees F.
- Brown ground beef and onion in large skillet on medium-high heat, about 5 minutes. Drain fat. Stir in broth, seasoning mix, vinegar, and Worcestershire sauce. Bring to boil. Reduce heat and simmer 10 minutes or until stock is absorbed, stirring occasionally. Remove from heat.
- Stir 1 cup of the shredded cheese and cream cheese into the beef mixture. Spoon into a 2-quart baking dish. Sprinkle with remaining 1 cup shredded cheese.
- Bake 10 to 15 minutes or until cheese is melted. Serve with wavy potato chips or mini toasts.

- In a large skillet melt butter and olive oil on medium high, then add onion garlic and red pepper and saute until softened for about 5 minutes.
- Add the ground beef, salt pepper, cayenne, chili powder, brown sugar, mustard, 2 tablespoons of the ketchup and the tomato paste cook until meat is browned about 15 minutes. Use a spatula to break up the meat while its browning so the meat pieces are very small.
- If the meat releases a bunch of oil, carefully use a crumbled up paper towel in the bottom of the pan and using the utensil you are breaking up the meat with to blot away any excess grease. I'll repeat this if the towel becomes saturated.
