HAM BALLS
Ham Balls are a classic midwestern meatball recipe. Ground ham and ground beef are mixed together with graham crackers and topped with a tomato brown sugar sauce.

- Preheat the oven to 350°
- Combine the meatball ingredients. In a large bowl lightly combine the 1 lb ground ham, 1 lb ground beef, 1 cup graham cracker crumbs, 3/4 cup milk, and 1 egg. Make large meatballs. Form the mixture into large meatballs, about 1/3 cup in size each. Place into a 9x13 baking dish. You will have about 12-15 meatballs.
- Whisk together the sauce ingredients & pour over meatballs. In another bowl whisk together the can of condensed tomato soup, 1 cup brown sugar, 1/2 cup white vinegar, and 1 tsp dry mustard. Pour the sauce over the meatballs.
- Bake 1 hour. Bake in the oven, uncovered, for 1 hour, basting the tops of the ham balls with the sauce once or twice during cooking.
- Cool & eat! Let the meatballs cool for about 5-10 minutes and then serve with mashed or baked potatoes and veggies.
IOWA HAM BALLS
This is a special recipe my whole family likes. Every time they visit and I make Ham Balls, they're all smiles. When I take this to potluck meals, I'm always asked to share the recipe. It's very appropriate for my region, too, since Iowa farmers raise prize-winning pigs and cattle.

- 1. In a large bowl mix all the meatloaf ingredients. Take off the jewelry and get your hands into it
- 2. Spray an oblong shallow pan with non stick cooking spray, shape the mixture into a loaf and center in pan leaving plenty of room all around. Do not use a loaf pan
- 3. Mix sauce in a cup or small bowl and pour over meatloaf
- 4. Bake at 350 degrees for 35 minutes. When you smell it... check it. Meatloaf is done when you can see the hot sizzle of the sauce creating a dark circle. Don't let it turn black.
- 5. To make meatballs instead of meatloaf, substitute plain bread crumbs for rolled oats. Do not make any topping. Roll mixture into small balls and place on a baking sheet Bake at 350 for 15 minutes Remove from oven and drain off grease. Place meatballs a large pan of your favorite sauce
OLD FASHIONED HAM BALLS

- Preheat the oven to 350 degrees. Lightly grease (2) 9x13 baking dishes with oil and set aside. Use the coarse setting on your meat grinder to grind the leftover ham. If you don't have a meat grinder, you can use a food processor to pulse until it is chopped like hamburger meat.
- Combine all the meatball ingredients in a large bowl and mix with your hands until combined. Roll into 1 1/2" - 2" meatballs. I use a medium size cookie scoop to scoop them all the same size before smoothing them with my hands. Arrange the meatballs in the baking pans and set aside.
- Whisk together all the glaze ingredients in a medium size saucepan over medium high heat. Bring to a boil, whisking until the sugar has dissolved. Reduce the heat to medium and simmer for 4-5 minutes, until the sauce has thickened.
- Pour the glaze over the ham balls, dividing it between the two pans. Bake the ham balls, uncovered, for 75-85 minutes, until the ham balls have browned and the sauce has reduced to a syrupy consistency. Enjoy!
- FREEZER MEAL: Let the meatballs cool and then transfer to a freezer safe Ziploc or an airtight container. Pour all remaining glaze over them and press out any air. Let thaw in the refrigerator before reheating covered in the oven, on the stove-top or in the microwave.

IOWA HAM BALLS (THE CADILLAC OF MEATLOAF IN MEATBALL FORM)
Steps:
- Preheat Oven to 325. Combine first 4 ingredients in a large mixing bowl. Fold in cracker crumbs. Form balls and place in glass baking dish, don't overcrowd dish. Set aside.
- Creat Syrup: in sauce pan over medium heat add vinegar and water. As it comes to heat add brown sugar and mustard. Bring to boil and be sure that sugar is dissolved. Pull from heat.
- Pour sauce over ham balls.
- Bake at 325 for approximately 1-1.5 hours. Reglaze every 15-20 minutes. Cook until meat thermometer reads 160 on inside of meatball. Careful not to overcook.
- Center will remain slightly pink from the pork.
OLD FASHIONED MEATLOAF MEATBALLS
Sometimes it is necessary for the mouse to outsmart the cat. My husband will not get near meatloaf due to childhood culinary trauma. I adore meatloaf and with a bit of tweaking to my favorite recipe and shaping them into meatballs, we both are happy. But, he still does not know it is meatloaf. I use leftovers to make meatball subs.

- Heat olive oil in a medium nonstick skillet over medium heat; add celery, carrot and onion, and sauté 7 minutes or just until tender.
- Stir together celery mixture, ground beef, 1 tablespoon Worcestershire sauce, breadcrumbs, and next 5 ingredients in a large bowl. Shape into 2" meatballs using an ice cream scoop. Place the meatballs in a foil lined baking dish and bake for 30 minutes at 350 degrees.
- Stir together 1 tablespoon Worcestershire sauce, tomato sauce, brown sugar, chili sauce, 1 tablespoon ketchup and red pepper flakes until blended; pour evenly over meatballs, and bake 10 to 15 more minutes or until no longer pink in center. Let stand 10 minutes before serving.
