2 cups flour
1 tsp. baking soda
1 cup butter or margarine, softened
1 cup packed brown sugar
1 pkg. JELL-O Chocolate Flavor Instant Pudding
2 eggs
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), chopped

Steps:

  • Heat oven to 350°F.
  • Combine flour and baking soda. Beat butter and sugar in large bowl with mixer until light and fluffy. Add dry pudding mix; beat until blended. Add eggs; mix well. Gradually add flour mixture, mixing well after each addition. Stir in chocolate.
  • Drop tablespoons of dough, 2 inches apart, onto baking sheets.
  • Bake 10 to 12 min. or until edges of cookies are lightly browned. Cool 1 min. on baking sheets. Remove to wire racks; cool completely.

This is the BEST Pudding Cookies recipe! It's an easy cookie recipe, the only one you'll ever need! The cookies are soft and chewy for days! Use your favorite flavor pudding mix and your favorite mix-ins to create your favorite cookie recipe.

Number Of Ingredients 9

1/2 cup unsalted butter (softened)
3/4 cup brown sugar (packed)
1 teaspoon vanilla extract
1 egg
1 3.4 ounce box Instant Vanilla Pudding Mix (or any flavor)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups all purpose flour
1 1/2 cups chocolate chips (or any candy/chips)

Steps:

  • Note: This dough requires chilling.
  • Cream butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment. (You can also use a hand mixer.) Mix in egg and vanilla until smooth. Add pudding mix, baking soda, and salt. Mix until combined. Mix in flour, then stir chocolate chips or other mix-ins.
  • Scoop 2 tablespoon balls of cookie dough onto a cookie sheet covered with parchment or a silpat baking mat. There's no need to space them out, you're going to chill them. Cover and chill for at least 1 hour.
  • Preheat oven to 350°F. Line cookie sheets with parchment paper or silpat baking mats. Place chilled cookie dough balls 2" apart on cookie sheet. Bake 9-11 minutes or until the edges just start to turn brown. Cool 5 minutes on cookie sheet before transferring to a rack to cool completely. Store in an airtight container for up to 4 days or freeze for up to one month.

These are oaty, crumbly and utterly delicious biscuits from a traditional irish baking book. They can be made into various form, e.g. clovers or fingers (like shortbread fingers) or whatever other shapes you might fancy. ;)

180 g oat bran (6 1/3 oz)
100 g oats (3 5/8 oz)
140 g flour (5 oz)
1/2 teaspoon baking soda
50 g icing sugar (1 7/8 oz)
180 g melted butter (6 1/3 oz)

Steps:

  • Preheat the oven to 200°C/400°F.
  • Combine oat bran, oats, sugar, flour and baking soda in a big bowl. Add butter and mix well. If your dough is too dry, add some water to it until you can work it.
  • Roll out on a lightly floured surface and cut out cookies in desired shape (if making shortbread fingers, dont forget to prick them before baking).
  • Bake for about 15 minutes until cookies are golden and crispy.

This originally came from Helen's British Cooking website. They are lovely lightly spiced, crisp biscuits (cookies), perfect for serving with tea. Mixed spice can be replaced by either pumpkin pie spice or apple pie spice if British mixed spice is unavailable.

110 g unsalted butter, softened
150 g caster sugar or 150 g superfine sugar
2 egg yolks
225 g plain flour (not self-rising!)
1 teaspoon ground british mixed spice
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 180C (170C for fan ovens), 350F, gas mark 4 and grease a baking sheet or cookie sheet.
  • Beat the softened butter with the caster sugar until light and fluffy.
  • Add egg yolks and beat to combine.
  • In a separate bowl, combine the flour, mixed spice and cinnamon and whisk (or sieve).
  • Stir the spiced flour into the egg, butter and sugar mixture and knead lightly on a floured board to bring the dough together.
  • Roll out dough to 0.5cm (quarter of an inch) thickness on a floured board or surface and cut out into 2 inch rounds or whatever shapes you desire; Do not reroll dough too many times or biscuits will be tough.
  • Bake for 15 minutes or until very lightly browned at the edges then use a spatula to transfer biscuits to a wire rack to cool.
  • Store in an airtight container to retain crispness.

Anzac biscuits are a traditional Aussie biscuit that were baked by the wives and mothers during World War I and packed into food parcels to be shipped to the soldiers. They included basic staple items as food was rationed during the war and times were hard. Today they are enjoyed as a good everyday basic biscuit and many Aussies bake these cookies to remember our soldiers and history on Anzac Day 25 April. This recipe uses Australian metric measurements- 1 tablespoon = 4 teaspoons

Number Of Ingredients 9

2 cups rolled oats, dry uncooked oats
1 3/4 cups desiccated coconut
2 cups plain flour
1 3/4 cups sugar
1/4 cup brown sugar (can use more white sugar here if you dont like brown sugar)
250 g butter (1 cup butter)
2 tablespoons golden syrup (8 teaspoon equivelant)
3 teaspoons bicarbonate of soda (bicarb soda)
3 tablespoons boiling water

Steps:

  • Preheat oven to 160C (if using fan-forced oven) or 180°C Line biscuit trays with a quality baking paper or lightly grease with butter.
  • Using a large mixing bowl -- combine the oats, coconut, flour and sugars.
  • Using a small saucepan or microwave -- melt the butter and golden syrup together. Set aside.
  • Using a cup -- mix the boiling water and bicarb soda together. Add this mixture to the melted butter. The mixture will foam up.
  • Add the butter to the dry ingredients and combine thoroughly.
  • Note -- if the mixture is too crumbly the biscuits will not hold together -- add a small amount of water. I've posted a photo of how I like my mixture to look. You should be able to get a tablespoon of the mixture and roll it together/push into shape of a cookie. Add too much water and your biscuits will flatten out totally during cooking.
  • Using your hands. Roll into balls and flatten slightly. These cookies do spread whilst baking -- so I usually place 12 to a cookie sheet/baking tray.
  • Place on baking trays and bake for 15-20 minutes or until golden brown. Cooking longer will give a crunchier biscuit or less time a softer biscuit. I like mine to be crisp. Total cooking time will depend on how many cookies/trays can fit in your oven at a time.
  • Cool on trays for 5 to 10 minutes before moving to a rack to cool.
  • If biscuits are too soft they can be returned to the oven and cooked further.
