VANILLA ICE CREAM
The tastiest homemade ice cream! It's perfectly rich and creamy and brimming with vanilla flavor. Easy to make and sure to satisfy on a hot summer day! Makes about 5 cups.

Steps:
- Pour heavy cream, milk, sugar and salt into a medium saucepan. Heat over medium heat, whisking frequently, until sugar has dissolved, about 5 minutes. Remove from heat.
- In a mixing bowl, whisk egg yolks until well blended. While whisking egg yolks, slowly pour 1 cup of the hot milk mixture into yolk then pour egg yolk mixture into saucepan while whisking mixture in saucepan.
- Cook mixture over medium-low heat, stirring constantly with a heat proof spatula, until mixture reaches 180 degrees F on an instant read thermometer and thickens slightly (mixture should coat the back of a wooden spatula). Remove from heat, stir in vanilla.
- Pour mixture through a fine mesh sieve into a bowl. Let cool to room temperature stirring occasionally, about 30 minutes.
- Cover with plastic wrap pressing directly against the surface of the custard mixture to prevent a skin from forming on top. Transfer to refrigerator and chill through, about 4 hours**.
- Churn mixture in an ice cream maker according to manufacturers directions until thickened (it should take approx. 25 - 30 minutes). Chill a container in the freezer during the last few minutes of processing.
- Transfer ice cream to chilled container from freezer. Spread even. Place in freezer and freeze until firm, about 3 - 4 hours.

INSTANT HOMEMADE ICE CREAM
This is perhaps the easiest ice cream recipe out there! It is a ton of fun to make too! I first made this in Chemistry class a couple of years ago...so it is educational as well! Feel free to mess around with this one- maybe sneak a little malted milk in the mix, or a little chocolate syrup. It's is not exactly gourmet ice cream or anything, but it's tasty!

Steps:
- In a quart-sized (regular) ziploc plastic bag, mix together the milk, sugar, and vanilla.
- Seal the bag tightly, without leaving a lot of air inside.
- (If you are a little paranoid about it leaking out, feel free to tape it up!).
- In a gallon-sized ziploc plastic bag, mix the ice and salt.
- Place the sealed quart-sized bag in the gallon-sized one.
- Securely seal the gallon-sized bag without leaving very much air in the inside.
- Shake, mush, and squish the bag for 6-10 minutes, or until the ice cream has set to a soft serve consistency.
- Remove the inside bag (maybe even rinse off the salt) and you can either eat the ice cream right out of the bag with a spoon, or pour it into a small dish.
- If you want the ice cream to be more firm, feel free to throw the bag into the freezer for a little while!
- Enjoy!

- Place the milk, sugar and vanilla into the doubled-up medium zip-seal bags. Close and secure with sticky tape if the seal isn't strong. Tip the ice and salt into the large bag, then place the smaller bags inside the larger one, and seal well.
- You will need to keep the bags moving for 10-15 mins to freeze the milk. Gently throw the bag from hand to hand or take turns shaking it - it's a good idea to wear gloves to keep your hands warm! Remove the ice-cream bag, open and scoop into bowls. Sprinkle with hundreds & thousands.

This is the best Vanilla Ice Cream you'll ever eat. The pudding makes it so much creamier than plain vanilla ice cream. If you want to add fruit, put the sugar in the chopped fresh fruit ahead of time to sweeten it, and then add to the mixture! Please note: this recipe contains raw eggs. This is an excellent homemade ice cream, with lots of room for variations...limited only by your imagination. I originally got the recipe with an ice cream maker that I purchased some time before I was married in 1986. The recipe and variations are designed for a one-quart yield, and may be doubled if desired. Prep time is for combining the mixture and does not include freezing time (as that will vary by machine/method). Note: Oreo cookie pudding ice cream is EXCELLENT. :D

- Combine all ingredients (including the bean and its pulp) in a large saucepan and place over medium heat. Bring the mixture just barely to a simmer. As soon as you see a bubble hit the surface, remove it from the heat (do not let it boil) and allow to cool slightly. Remove the hull of the vanilla bean, pour mixture into lidded container and refrigerate mixture overnight to mellow flavors and texture.
- Mix ice cream in ice cream maker* according to unit's instructions. The mixture will not freeze hard in the machine. Once the volume has increased by 1/2 to 3/4 times, and reached a soft serve consistency, spoon the mixture back into a lidded container and harden in the freezer at least 1 hour before serving (we did ours overnight and it was perfect).

- Add all ingredient to a high-speed blender. Be sure to only use the solid white coconut cream from the canned coconut milk. See notes below.
- Blend starting on the lowest speed and slowly increase to the highest speed. Stay on the highest speed for 60 seconds until smooth and creamy. If your blender is having trouble blending use the tamper/plunger to safely push the contents into the blades while it is blending.
