POTATO BREAD (USING INSTANT POTATO AND DRY MILK)
This is a measured variation of a Nanny Stackhouse recipe. She made 9-12 loaves of this delicious bread every Saturday to give away to family and friends. The Monticello Grange sure misses her cooking!

Steps:
- Mix potato flakes and water to make 2/3 c.
- mashed potato Place in a large bowl.
- Stir in next four ingredients (hot water, shortening, salt and sugar) Set aside to cool.
- Stir yeast into ½ c.lukewarm water.
- When potato mixture is cooled to lukewarm, add yeast mixture.
- Add dry milk/flour mixture to potato mixture and beat well.
- Add 2 cups of flour beat until smooth.
- Add 2 more c. flour.
- Beat until smooth.
- Place about 1 c. of flour on your bread board.
- Turn out dough on floured board and knead for 5 minutes.
- Add more flour as needed.
- Oil a bowl and place kneaded dough in it.
- Brush top of dough with a bit more oil.
- Cover with a towel and let rise until doubled.
- Punch down and halve dough.
- Knead each half on floured board and form into two (three) loaf shapes.
- Grease two 5x9 loaf pans (or 3- 4x9 pans) Place dough in pans.
- Brush tops with oil.
- Let rise until doubled.
- Preheat oven to 400F Bake for 30-40 minutes.

POTATO BREAD (BREAD MACHINE)
This is a light and delicious loaf of bread made with instant mashed potato flakes. It was my first truly successful attempt at using my new bread machine, and I plan on making it again and again! If I didn't screw it up it must be foolproof! I found this online somewhere, but I'm ashamed to say I forgot where. This makes one 1 1/2 pound loaf.

EASY POTATO BREAD
This basic potato bread has a great flavor and a moist crumb. The recipe calls for fresh or instant mashed potatoes and yields two loaves.

- Gather the ingredients.
- In a large bowl, mix together the mashed potatoes, beaten eggs, and softened butter.
- Stir in the sugar, salt, yeast, and warm filtered or bottled water.
- Mix in the flour 1 cup at a time, sifting before each addition, until the dough can be easily kneaded by hand.
- Turn the dough out onto a floured board or surface and knead it until it is smooth and elastic. ( Kneading helps develop the gluten and create long strands, which make the end product more springy.)
- Grease a bowl with olive oil. Add the dough and flip it over inside the bowl so all sides are lightly greased. Cover the bowl and let the dough rise for 1 to 2 hours, until doubled in bulk. (Putting it in the warmest place in your kitchen helps it to rise.)
- Punch down the dough by making a fist and pressing firmly in the center of the dough.
- Fold the edges of the dough into the center of the bowl to form a ball. Turn it out onto a lightly floured board and briefly knead out the bubbles.
- Divide the dough in half and make 2 loaves.
- Place each loaf in a greased 8 x 4 x 2-inch bread pan. Cover and let the dough rise a second time for 40 minutes or until doubled.
- Bake at 375 F for 40 minutes or until the bread sounds hollow when the top is tapped.
- Remove the loaves from the pans and let them cool on a rack. Enjoy toasted, as a sandwich, alongside a meal, or simply as is.

- Pour the warm water and milk (about 110-115 degrees F) into the bowl of a stand mixer.
- Sprinkle the yeast over the liquids.
- Add the sugar, egg, salt, potatoes, butter and flour.
- Use the paddle attachment to mix the ingredients just until combined.
- Then switch to the dough hook and beat on medium-high speed for 5-7 minutes. The dough should be slightly sticky.
- Spray a large bowl with cooking spray. Place the kneaded dough ball into the greased bowl and cover with plastic wrap or a kitchen towel.
- Set the bowl in a warm place until the dough has doubled in size (about 30 minutes).
- Divide the dough in two and shape into two loaves.
- Place the dough into two greased 9x5 loaf pans.
- Cover the pans and put them in a warm place, allowing the dough to rise again until almost double (about 25 minutes).
- Preheat the oven to 350 degrees.
- Bake the bread (uncovered) for 30-35 minutes or until the tops are dry and firm, with a golden brown color.
- Remove the bread from the pans and allow them to cool on a wire rack.
- Store in an airtight container.

- Attach the kneading blade in the Bread Maker pan.
- Place ingredients into the bread pan following the recipe order (or following the order and method specified in the manual of your Bread Maker - mine is: FIRST, liquid ingredients; SECOND, dry ingredients; LAST, yeast). Note: With finger or a knife, make a small indentation in the middle of the flour. Add yeast to indentation, making sure it does not come into contact with the liquid ingredients.
- Carefully insert bread pan into the bread maker and gently close the lid.
- Select "Basic" bread setting. If available, choose crust colour (I usually set Medium, but if you prefer set Light or Dark) and loaf size (2LB) and Press the Start button.
- It will mix and bake the bread. When the baking cycle is complete, press the stop button and unplug the breadmaker.
- Open the lid and while using Oven Mitt, firmly grasp the bread pan handle and gently pull the pan straight up and out of the machine. CAUTION: The Bread Maker and pan may be very hot! Always handle with care.
- Use non-stick Spatula to gently loosen the sides of the bread from the pan.
- Turn the bread pan upside down onto a Wire Cooling Rack or clean cooking surface and gently shake until bread falls out onto the rack.
- Cool for about 10-15 minutes before slicing.
- To make perfect slices every time use a Bread Slicer with an Electric Knife.

BREAD MACHINE POTATO BUNS
This is our family favorite bun recipe. It can be used to make hamburger buns or dinner rolls. Try using different flavor instant potatoes to flavor the buns. I usually use the roasted garlic flavor but buttery or three cheese flavor is also good!

- 1. Put water, sugar and yeast in bread machine pan. Let stand no less than 10 and no longer than 15 minutes to proof the yeast. Do not omit this step as it will insure that your yeast is working!
- 2. Once your yeast has proofed,add the flour, instant potato flakes, oil and salt to the bread machine pan.
- 3. Set bread machine to the dough cycle, close the lid and let the machine do the work. Check the dough when it is about half way through mixing. You may need to add a tablespoon of warm water if the dough seems dry.
- 4. Once the dough has risen, shut off bread machine and dump the dough into a bowl sprayed with non-stick spray. Spray your hands with the non-stick spray and divide dough in half. Divide each of the two balls of into two or three pieces. You will now have 4 or 6 balls of dough. Divide each ball of dough into three pieces and form into a bun. You will have 12 or 18 balls of dough to form into buns.
- 5. Place formed buns on a greased cookie sheet. Cover with a clean tea towel and let rise until doubled in size--it may take up to 30 minutes depending on how warm your kitchen is.
- 6. While the buns are raising on the pan, preheat oven to 350. When buns have doubled in size, remove the towel and put the pan in the oven and bake for 10-12 minutes or light golden brown.
- 7. Once they have baked, remove from oven and turn out onto waxed paper lined rack or counter top to cool. Brush the top of each bun with butter and let cool. I use about a 2 tablespoon size piece of butter and hold it with waxed paper and just lightly rub the butter over each bun.
- 8. Let cool if you can wait that long and enjoy! I find that if my kids are around when they are baked, I have to stand guard over the buns so there are some left!
BREAD MACHINE POTATO BREAD
Soft, chewy and full of flavor, potato bread is one of my favorites. But I'd never been able to successfully pull it off in my bread machine . . . until now. This loaf is soft, but substantial, chewy and not the least bit crumbly. Cutting into that first piece was a delight! You'll love it.

- Remove bread pan from machine. Check to make sure mixing/kneading paddle is in place
- In a large bowl, add flour, potato flour or flakes, milk powder, sugar, salt, and white pepper. Blend thoroughly with a whisk.
- Add water and melted butter to bread pan. Carefully add all premixed dry ingredients on top of liquid.
- Make a small well on top of the dry ingredients and add yeast.
- Set bread machine to 1 lb loaf, and select your choice of crust. ENGAGE!
