INSTANT POT SALSA CHICKEN

Steps:
- Place chicken breasts in the Instant Pot with salsa and water.
- For frozen chicken breasts, set to high pressure for 15 minutes.
- For fresh chicken breasts, set to high pressure for 10 minutes.
- When the Instant Pot is done, carefully do a quick pressure release.
- Remove the chicken and either shred by hand with forks or quickly shred the chicken using a stand mixer. Add the chicken back to the salsa liquid in the Instant Pot and stir to combine.
- Serve immediately or store in airtight containers in the fridge or freezer. Enjoy!

You can use the meat for tacos, burrito bowls, or as a topping for baked potatoes. So many possibilities! I used this the first night for chicken quesadillas. The second night I used it as a topping for baked potatoes with shredded cheese, pickled jalapenos, and sour cream.

- Place chicken breasts in an electric pressure cooker (such as Instant Pot®). Sprinkle all sides with taco seasoning. Pour salsa and chicken broth on top.
- Place lid on the pot and lock in place. Select the Poultry setting and set the timer for 15 minutes. Allow pressure to release naturally after the cooking time has ended, about 20 minutes. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C). Shred the cooked chicken.

Steps:
- Put chicken and water in the Instant Pot. Close the lid and turn the valve to Sealing position.
- Select the "Pressure Cook" or "Manual" setting and set the time for 10 minutes if using fresh chicken breasts (or 22 minutes for frozen).
- Quick release (QR) the steam and open the Instant Pot. Take the cooked chicken out of the Instant Pot and shred with two forks or the food processor. Pour the water out of the pot.
- Put the Instant Pot on a Saute setting. Put the shredded chicken and salsa in a pot, and cook, stirring, for 2 minute, or until the salsa is heated through. Add chili powder to taste.
