CLASSIC CUBAN-STYLE PICADILLO
Here is a classic Cuban recipe for ground beef that is typically eaten over white rice. It can also be used as a filling for tacos or empanadas. It's delicious with fried ripe plantains.

Steps:
- Heat olive oil in a skillet over medium heat; cook and stir garlic, onion, and green bell pepper in the hot oil until softened, 5 to 7 minutes.
- Crumble ground beef into the skillet; cook and stir until browned completely, 7 to 10 minutes.
- Stir olives, raisins, capers, tomato sauce, sazon seasoning, cumin, sugar, and salt through the ground beef mixture.
- Cover the skillet, reduce heat to low, and cook until the mixture is heated through, 5 to 10 minutes.

- Turn on your pot's sauté setting. Add the ground beef and cook, stirring to break up the meat, until almost done (if using ground turkey, add 2 tsp olive oil to pot before adding turkey).
- Add the onion, bay leaves, cinnamon, cumin, and oregano, and salt. Cook, stirring occasionally, until onion starts to soften.
- Add garlic, jalapeño, and red bell pepper. Cook, stirring frequently, for a minute.
- Add green olives, olive juice, Worcestershire, and red wine vinegar. Stir together.
- Sprinkle raisins over the top, then pour the diced tomatoes evenly over the meat mixture. Do not stir.
- Cancel the Sauté function. Place the lid on the pot and lock it into position. Set the steam release knob to Sealing.
- Press the Pressure Cook/Manual button, or dial, and then the + or - to choose 7 minutes. High pressure.
- When the cook cycle ends, let the pot sit undisturbed for 5 minutes. Then Manually release the remaining steam/pressure until the pin in the lid drops down. Then open the lid and stir the picadillo.
- Taste and adjust salt, if desired.
- Serve over hot rice, or in tacos, burritos, etc.

CUBAN PICADILLO IN THE INSTANT POT

- Turn on the SAUTE function on your Instant Pot. Add 2 tbsp olive oil and allow it to heat. Add the diced potatoes and saute for 5-7 minutes or until the potatoes begin to soften. Remove the potatoes to a separate bowl.
- Add 1 tbsp olive oil to the Instant Pot, making sure it is still on SAUTE. Add the bell pepper and onion and saute for 1 minute. Add 1 tsp garlic and 1/2 tsp oregano and saute for another minute or two until fragrant.
- Turn the SAUTE function off. Add the tomato sauce, raisins, and beef to the pot. Use a wooden spoon to break up the beef, stirring until the beef is broken up completely (it will not be cooked).
- Add potatoes, olives, olive juice, white wine, salt and pepper to taste, an additional tsp garlic, and an additional tsp oregano. Mix to combine.
- Put the lid on the Instant Pot and lock into place. Turn the Instant Pot to MANUAL HIGH for 5 minutes. When the cooking cycle is complete, perform a Quick Release. Open the Instant Pot and stir.

- Set the Instant Pot to "Saute" setting and cook the ground beef until brown all over. Remove ground beef and drain the grease.
- Add the diced onion and green pepper to the Instant Pot and saute for 3-5 minutes until softened. Stir in the minced garlic and allow to cook for 30 seconds until fragrant. Press the "Cancel/Off" button on the Instant Pot.
- Return the cooked ground beef to the Instant Pot with the onions, green pepper, and garlic. Add the wine, crushed tomatoes, Goya seasoning, cumin, oregano, ketchup, olives, capers, raisins, and bay leaves. Stir all ingredients together thoroughly.
- Place the lid on the Instant Pot and make sure the valve is set to the Sealed position. Press the "Manual" button and set the cooking time to 15 minutes. At the end of the cooking time, let the steam naturally release by allowing it to sit for 10-15 minutes. Carefully release any leftover pressure from the Instant Pot. Stir and serve with white rice.
