CREAMY POLENTA WITH PARMESAN AND SAUSAGE
Polenta is such a natural base for so many savory foods - more flavorful than either pasta or mashed potatoes, but somehow just as forgiving - that it's hard to pick a favorite topping. Having said that, I know what mine is: sausage. The fatty succulence of a banger combined with the lean graininess of the cornmeal is somehow perfect.

- Put oil in a large skillet over medium-high heat. When oil is hot, add sausages and cook, turning occasionally, until well browned on all sides and cooked through, about 20 minutes. Set aside.
- Meanwhile, put cornmeal in a medium saucepan along with 1 cup water and whisk well to make a slurry; continue whisking mixture to eliminate any lumps. Put pan over medium-high heat, sprinkle with salt and bring to a boil. Reduce heat to medium and continue to cook, whisking frequently and adding water as needed to keep mixture loose and free of lumps, between 3 and 4 more cups. If mixture becomes too thick, simply add a bit more water; consistency should be similar to sour cream's.
- Polenta will be done in 15 to 30 minutes, depending on grind. Add cheese and butter. Taste and add salt, if necessary, and lots of pepper; serve topped with sausages.

- Combine chicken broth, polenta, and half-and-half in a medium-sized heat-resistant glass bowl, such as Pyrex®. Set aside.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Pour in grapeseed oil and allow to get hot. Add sausages and cook until brown, about 2 minutes per side. Pour in marinara sauce, onion, and bell pepper; mix to combine. Place a trivet into the pot and set the bowl of polenta on top of the trivet. Close and lock the lid.
- Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Whisk butter, garlic salt, red pepper, and Parmesan cheese into the polenta. Serve immediately.

- Place instant pot setting to "sauté". Then add in 1 tablespoon olive oil. Next, place the Italian sausage in the Instant Pot and cook for 5 minutes. Make sure to turn 1 to 2 times until brown on both sides. Then added the whole garlic cloves and white onion and sauté for an additional 5 minutes into onions begin to become translucent and color.
- De-glaze the pot with a half cup of water. Use a wooden spoon to break up the brown bits on the bottom of the pot.
- Turn the Instant Pot off. Place the lid on the Instant Pot making sure the valve is set to "sealing". Select the "meat" setting for 10 minutes. It will take the Instant Pot roughly 10 minutes to come to pressure before the timer begins.
- Once the sausage is done carefully, force the pressure by releasing the pressure valve using a pot holder and a dish cloth.
- Remove the lid from the Instant Pot. Mix well and divide evenly among plates.

- Bring 6 cups of water to a simmer and add the polenta. Cook over low heat, stirring often, 45 minutes. Stir in the butter, Parmesan and olive oil and keep warm.
- Add the tomatoes, sausage, garlic, peppers, onion and crushed red pepper to a large cast-iron pot and simmer, 30 minutes. Serve sauce over polenta, topped with some ricotta and basil.

- Cut the peppers and onions as directed and shown in the image above for a sample. Also, dice/mince 2 garlic cloves.
- Select the SAUTE option on your Instant Pot. After about a minute when it is hot, add olive oil and then, add sausages in a single layer on the bottom.
- Brown for about 3 minutes each before turning. Turn each twice so it browns on 3 sides minimum for a total of 9 minutes for each link. Remove sausages to a plate and set them aside.
- Add the onions and let them cook in the hot oil for about 2 minutes, stir to ensure they do not stick or burn. Once brown add the garlic and stir. Add water and deglaze the bottom of the pan using a wooden spoon to scrape up all the bits.
- Turn the pot off by selecting CANCEL. This will stop the saute step. To the onions and garlic, add the bell pepper slices. On top of that line the sausage in a single layer over the vegetables.
- Next, add the full can of diced tomatoes including the liquid. For the last step, add the basil, salt, and pepper. Add the optional red pepper flakes.
- Once everything is in the Instant Pot, lock the lid in place and be sure the vent valve is closed and sealed. Select MANUAL and press the up/down buttons to set it for 3 minutes.
- Once it is done cooking let the electric pressure cooker naturally release for 5 minutes. Once the 5 minutes is reached on the digital readout, CAREFULLY open the valve on the Instant Pot to release the remaining pressure. CAUTION - STEAM WILL BE HOT!
- Serve immediately using a slotted spoon if spooning onto rolls for sandwiches. Enjoy as a sandwich or with pasta, polenta, and more.
- Instant Pot sausage and peppers can be stored in an air-tighter container in either the refrigerator for up to 5 days or 30 days in the freezer.
