Instant Pot Chicken Cacciatore image

Chicken Cacciatore made in an Instant! The sauce is hearty and chunky, loaded with chicken, tomatoes, peppers and onions ( sometimes I add mushrooms too!) Great over pasta, squashta, rice or polenta.

4 chicken thighs (with the bone, skin removed)
kosher salt and fresh pepper to taste
olive oil spray
1/2 can (14 oz crushed tomatoes (Tuttorosso my favorite!))
1/2 cup diced onion
1/4 cup diced red bell pepper
1/2 cup diced green bell pepper
1/2 teaspoon dried oregano
1 bay leaf
2 tablespoons chopped basil or parsley for topping

Steps:

  • Season chicken with salt and pepper on both side.
  • Press saute on the Instant Pot, lightly spray with oil and brown chicken on both sides a few minutes. Set aside.
  • Spray with a little more oil and add onions and peppers. Sauté until soften and golden, 5 minutes.
  • Pour tomatoes over the chicken and vegetables, add oregano, bay leaf, salt and pepper, give it a quick stir and cover.
  • Cook high pressure 25 minutes; natural release.
  • Remove bay leaf, garnish with parsley and serve over pasta, squasta or whatever you wish!

Super easy Instant Pot® Italian chicken recipe. Serve over rice or mashed potatoes.

1 tablespoon salted butter
1 tablespoon minced garlic
2 (5 ounce) frozen skinless, boneless chicken breasts
1 (4.5 ounce) can sliced mushrooms, drained
2 (.7 ounce) packages dry Italian-style salad dressing mix
1 cup chicken broth
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) package cream cheese

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter to melt; then add garlic and saute for about 1 minutes. Add chicken, mushrooms, and 1 package of salad dressing mix. Pour broth over top.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 5 minutes. Take chicken out and shred with 2 forks.
  • Select Saute function. Add cream of chicken soup, remaining Italian dressing mix packet, and cream cheese; stir to mix. Add shredded chicken back in. Heat through, stirring occasionally, for 5 minutes. Serve.

  • Add in the pasta in a single layer covering with broth as much as possible. Lay the chicken on top of the pasta in an even layer. Sprinkle salt, pepper and Italian seasoning on top of the chicken. Dump the pasta sauce over the chicken. Add the cream cheese brick on top of the pasta sauce.
  • Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes for rigatoni or rotini or 4 minutes for penne, cavatappi or macaroni. When the time is up let the pot sit for 5 minutes and then move the valve to venting. Remove the lid.
  • Stir the contents of the pot and stir in the spinach. Thicken with cornstarch if desired. Turn your Instant Pot to the saute setting. In a small bowl stir together 2-3 Tbsp of cornstarch with 3 Tbsp of water, until smooth.Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly. Turn off the pot.
