1 pound (454g) baby carrots
2 tablespoons (28g) unsalted butter
2 tablespoons (25g) brown sugar
½ teaspoon (2.8g) table salt
Ground black pepper to taste

Steps:

  • Pressure Cook Carrots: Pour 1 cup (250ml) cold water, then place a stainless steel steamer basket in Instant Pot. Add 1 lb (454g) carrots in steamer basket. Pressure Cook at High Pressure for 2 minutes, then Quick Release.
  • Make Buttery Sweet Carrots: Set aside the pressure cooked carrots. Discard the water in inner pot. Towel dry inner pot, then heat up the Instant Pot using the "Saute" button. Once the indicator says HOT, add in 2 tbsp (28g) unsalted butter. Add in the cooked carrots, 2 tbsp (25g) brown sugar, and ½ tsp (2.8g) table salt. Saute for roughly 2 minutes until the sugar melts and coat the carrots.

Number Of Ingredients 6

2 pounds carrots (peeled and sliced)
1 cup water
3 Tablespoons olive oil
3 Tablespoon honey
Salt and pepper, to taste
fresh parsley, for garnish

Steps:

  • Add cut carrots and water to the Instant Pot.
  • Close the lid, set valve to SEALING and cook on MANUAL OR HIGH PRESSURE for 3 minutes.
  • After cooking is done, do a quick release and remove the lid.
  • Drain excess water.
  • Add olive oil, honey, salt and pepper to the Instant Pot and toss to coat carrots.
  • Garnish with parsley, if desired.
  • Serve immediately.

3 tablespoons honey, divided
2 tablespoons sriracha sauce
2 cloves garlic, minced
1 teaspoon salt
½ cup water
1 (16 ounce) package baby carrots

Steps:

  • Whisk 2 tablespoons honey, sriracha, garlic, salt, and water together in a large bowl. Add carrots and stir to combine.
  • Transfer coated carrots to a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Using a slotted spoon, transfer carrots to a serving dish.
  • Turn on Instant Pot® again and select Saute function. Add remaining 2 tablespoons honey to the pot. Cook and whisk until slightly thickened, about 5 minutes. Pour glaze over carrots and serve immediately.

Simply turn the steam valve on the lid to Venting and let the steam out (be careful when you do this). Remove the carrots and discard of the water.
  • Place the inner pot back inside the Instant Pot and press the Sauté function key. Add the honey soy glaze ingredients (except for the scallions) to the pot and stir for a minute until it starts to get sticky. Add the carrots back in and stir through the sauce until well coated.
