This is a basic and simple recipe I like to make on the weekends to use for salads, casseroles, or soups on the weekdays when I am pressed for time. This recipe can easily be doubled.

- Pour chicken broth into a multi-functional pressure cooker (such as Instant Pot®). Add chicken breast and season with salt and pepper.
- Mix together paprika, parsley, thyme, and garlic powder in a small bowl; sprinkle over chicken. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Transfer chicken to a cutting board to cool. Chop or shred for later use.

Cooking frozen chicken in an Instant Pot® is a weeknight cook's secret weapon. Make sure you follow the directions for a 10-minute natural release; a quick release left us with dry and stringy meat. Allowing for the natural release let all the juices redistribute and we had a plump and juicy breast afterwards - perfect for chicken salad or anywhere you would use poached chicken.

- Put the frozen chicken breasts into an Instant Pot®. Sprinkle the chicken generously with salt and pepper. It is not necessary to add any water. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 10 minutes.
- After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 10 minutes, being careful of any remaining steam, unlock and remove the lid.
- Allow for natural release for 10 minutes. This will ensure the juices are re-absorbed into the chicken.

Give it a few minutes rest as the temperature rises to 165°F. *Note: The USDA recommends 165°F (74°C) as the safe internal temperature for cooked chicken. *Pro Tip: If the temperature is off by more than 10°F, quickly place the chicken breasts back in Instant Pot. Close the lid, then let the residual heat in Instant Pot cook the chicken breasts for 1 - 2 more minutes.
- Serve Instant Pot Chicken Breast: Once the chicken breasts have reached 165°F (74°C), slice and serve immediately. You can serve this chicken breasts as is or with your own seasonings & dressings in a salad, tacos, sandwiches, enchiladas, wraps...Enjoy!~

- Place chicken breasts in the bottom of the Instant Pot (no need to use the trivet!) -- it's okay if they're stacked, just make sure none are stuck together.
- Pour in the water or chicken broth (or use another liquid like pineapple juice, apple juice, etc.) and season with salt and pepper.
