Instant Pot Steamed Clams in Wine Garlic Butter is Low Carb, Keto and Gluten free, it is seriously delicious and so easy to make.

5 pounds Live Clams
1 cup Dry White Wine
1 stick Butter
10 cloves Fresh Garlic (minced)
2 teaspoons Sea Salt ((if using Radish or Potato))
pinch Homemade Old Bay Seasoning Recipe ((Optional))
1 pound Fresh Radishes (trimmed (or baby potatoes))
Fresh Lemon
1/2 cup Fresh Flat Leaf Parsley (chopped)

Steps:

  • Wash Sand off Clams and toss out any that are opened. If using Radishes, scrub well, remove stem and trim top. Slice in half.
  • Heat Pressure Cooker until fully heated. Add half the Butter and Radishes. Saute for two minutes then add Minced Garlic and Saute for another minute.
  • Pour in White Wine and heat to reduce, about three minutes. Mix in Salt.
  • Add Clams and Homemade Old Bay if using.
  • Lock on Lid and close Pressure Valve. Cook on the Steam Setting for 1 minute. When Beep sounds, open the vent and wait for all pressure to release.
  • With a Bamboo Strainer or Slotted Spoon, remove Clams/Radish to Bowls. Turn off Pressure Cooker and select the Saute or Browning Button.
  • Simmer for five minutes and then add in the rest of the butter and the Parsley. Mix and then pour over Clams. Squeeze lemon over Clams.

1 cup water
20 fresh oysters in shells, rinsed and scrubbed clean
2 teaspoons Mexican-style hot sauce (such as Valentina®)
½ teaspoon dried parsley flakes
4 tablespoons unsalted butter, melted

Steps:

  • Pour water into a multi-functional pressure cooker (such as Instant Pot®) and set trivet inside. Place oysters on the trivet. Close and lock the lid. Select Steam function according to manufacturer's instructions; set timer for 2 minutes. Allow 15 minutes for pressure to build.
  • Meanwhile, stir hot sauce and parsley into the melted butter until well combined.
  • Release pressure using quick release according to manufacture's directions, 3 to 5 minutes.
  • Carefully open the oysters using a spoon; set on a serving plate. Spoon butter over the top.

1 tablespoon corn or sunflower oil
1 small onion (diced)
2 cloves garlic (minced)
1 pound (450 grams) raw shrimp
2 tablespoons cajun seasoning
¼ teaspoon chili flakes (optional)
¾ teaspoon salt
3 small bell peppers (diced (yellow, green, and red))
¼ cup vegetable stock (or chicken stock)
parsley or cilantro leaves (chopped)

Steps:

  • On the Instant Pot, press on SAUTE and let it heat up for a minute. Add oil to the pot, and saute the onion until it's soft and translucent. Add the garlic and cook until it's fragrant. Switch off the saute setting and deglaze the pot with a little bit of water.
  • Add the diced bell peppers, followed by the shrimp, cajun seasoning, chili flakes, stock, and salt. Give everything a good mix.
  • Secure the lid and set the vent to SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 0 minutes at LOW pressure. The Instant Pot will come to pressure and stop cooking. When the cooking program ends, quickly release the steam.
  • Carefully open the lid, and serve warm over rice.

1/2 cup boiling water
Butter or margarine, melted, if desired

Steps:

  • Discard any broken-shell or open (dead) oysters. Scrub remaining oysters in cold water, removing any barnacles with a dull paring knife.
  • Place half of the oysters in a steamer with boiling water. Cover and steam 5 to 8 minutes, removing oysters as they open. Discard any unopened oysters. Repeat with remaining oysters.
  • Serve hot oysters in shells with butter.
