Instant pot cod fish cooked from frozen in an electric pressure cooker in 2 minutes. No more waiting around to thaw your fish for dinner, with this recipe, you can have this quick and healthy dinner from the kitchen to your table under 10 minutes.

200 g Frozen fish fillet cod (2 pieces) (haddock, mackerel, tilapia or salmon)
½ teaspoon coarse sea salt
Freshly ground black pepper

Steps:

  • Rinse the fish under cold water to deglaze, this step is optional. If using more than 1 frozen fish, make sure the fish are separated and not clumped together.
  • Place the trivet in the instant pot and add 1 cup of water. I used 6qt IP DUO, If you are using 8qt instant pot, use the minimum water required which is 2 cups.
  • Add the frozen cod fish and season with salt and freshly ground black pepper.
  • Cover the lid of your instant pot securely then turn the valve to the sealing position. Select manual or pressure cook and cook on high pressure for 2 minutes then carefully do a quick release.NOTE: If the thickness of your frozen cod fillet is more than ½ an inch, you can increase the cooking time to 3 or 4 minutes. 2 minutes has always worked for me, Alternatively, let the instant pot come to natural pressure for another 5 minutes after 2 minutes on high pressure
  • Serve with lemon wedge, melted butter and chopped dill or parsley sauce

2 pounds (1001g) chuck steak or blade steak (, 1.5 inch thick)
1 tablespoon (15ml) olive oil
12 (150g) white mushrooms (, thinly sliced)
2 (214g) small onions (, thinly sliced)
3 cloves (15g) garlic (, crushed and minced)
2 bay leaves
¼ teaspoon (0.35g) dried thyme
¼ cup (63ml) sherry wine
3 - 4 (365g) small Yukon gold potatoes (, quartered)
2 (200g) medium carrots (, cut in 1 ½ inch (4cm) chunks)
2 stalks (150g) celery (, cut in 1 ½ inch (4cm) chunks)
3 tablespoons (50g) tomato paste
½ cup (65g) frozen peas
Salt and black pepper to taste
1½ cup (375ml) unsalted chicken stock
1 tablespoon (15ml) Worcestershire sauce
1 tablespoon (15ml) regular soy sauce
1 tablespoon (15ml) fish sauce ((can substitute with regular soy sauce))

Steps:

  • Brown Chuck Roast Steak: Heat up Instant Pot using the "Sauté More" function. Wait until the Instant Pot says HOT. Pat dry the chuck roast, then season one side of the beef with salt and black pepper. Drizzle 1 tbsp (15ml) olive oil in inner pot. Ensure to coat oil over the whole bottom of the pot. Carefully place the seasoned side of chuck steaks in Instant Pot. Season the other side of beef with salt and black pepper. Brown one side for 7 minutes before flipping over, then brown the other side for another 7 minutes. Set aside the browned steaks in a large container.
  • Optional - Saute Mushrooms: Add sliced mushrooms in Instant Pot, then sauté until all moisture from the mushrooms has evaporated and the edges are slightly crisped & browned (~6 minutes). Taste and season with salt and ground black pepper if necessary. Remove and set aside.
  • Saute Onion and Herbs: Add in sliced onions, then saute for 3 minutes. Add in minced garlic, 2 bay leaves, ¼ tsp (0.35g) dried thyme, then saute for another minute.
  • Deglaze Instant Pot: Pour in ¼ cup (63ml) sherry wine, then completely deglaze the bottom of the pot by scrubbing the flavorful brown bits with a wooden spoon. Reduce the sherry wine to let some of the alcohol evaporate.
  • Pressure Cook Beef Stew: Turn off the Instant Pot. Cut the browned chuck steak into 1.5 to 2 inches thick cubes. Add 1½ cup (375ml) unsalted chicken stock, 1 tbsp (15ml) Worcestershire sauce, 1 tbsp (15ml) regular soy sauce, and 1 tbsp (15ml) fish sauce in Instant Pot. Give it a quick mix. *Optional: If you prefer some bites to your vegetables, pressure cook the vegetables at this point at High Pressure for 4 minutes, then Quick Release. Then set aside half of the vegetables, and add them back in later with the frozen peas in Step 6. Add cubed beef in Instant Pot, and ensure they're partially submerged in the liquid. Don't forget to add in the meat juice! Add in quartered potatoes, carrot chunks, and celery. Layer 3 tbsp (50g) tomato paste on the very top.Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 32 minutes, then Natural Release for 10 minutes. Remove the lid carefully.
  • Thicken Beef Stew and Add Vegetables: Bring the gravy to a simmer with the "Saute More" function. Breakdown the mushy potatoes and carrots with a wooden spoon, then stir to thicken the beef stew. *Pro Tip: The beef stew should be thick enough at this point. If necessary, you can thicken the gravy with flour or cornstarch + water mixture. Add in frozen peas, sautéed mushrooms, and the optionally set-aside carrots, celery, and potatoes (See Step 5). Taste and season with salt and ground black pepper if necessary (we added 2 pinches of salt).
  • Serve: Serve this delicious & hearty beef stew with mashed potatoes, pasta, or your favorite side dishes. Enjoy~

This warm, rich, and comforting stew is everything we love about southern food. And the eggs add a decadent nature to the stew that is unmatched.

8 oz. bacon (thick cut, cut into 1-inch pieces)
6 oz. tomato paste
1 Tbsp. garlic (minced)
2 lbs. red potatoes (cut into 1/4-inch slices)
1 lb. yellow onions (cut into 1/4-inch slices)
1 1/2 tsp. sea salt (divided)
2 lbs. fish (your choice)
4 cups seafood stock
6 eggs (the highest quality you find)

Steps:

  • Using sauté setting - add bacon to pot and cook until almost crispy. Add tomato paste to pot, mix well, and cook for about 1 minute. Add garlic and cook for another minute. Then turn off heat.
  • Add a layer of potatoes, followed by a layer of onions. Season with 1/4 teaspoon of salt. Add a layer of fish and season with 1/4 teaspoon of salt. Repeat layers again, ending with a layer of fish on top.
  • Pour in seafood stock. You want the liquid to just barely touch the bottom of the top layer of fish. So, if need be, add a little water to achieve that. Lock lid and cook for 3 minutes at high pressure.
  • Once cook time is complete, quick-release pressure. Remove lid and skim as much fat from the top as you like. I think a little fat is good, but you can skim it all off if you like.
  • Switch back to sauté setting. Crack eggs into empty spaces on top. Once all the eggs are in, switch back to "keep warm" setting and place the lid back on pot.
  • Allow edge to poach in the residual heat. For slightly runny eggs (like I prefer), let them sit for about 7 minutes. But for hard cooked eggs, it'll probably take 15 or so. To serve... Gently scoop out stew, making sure to get all the way to the bottom so that you get some bacon! Top each bowl with an egg or two.

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter and cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.
  • Return all beef chuck to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary. 1 clove garlic (minced)
1/2 cup onion (chopped)
1/2 red bell pepper (cut into 2-inch pieces)
1/2 green bell pepper (cut into 2-inch pieces)
1/2 potato (halved)
1/2 tsp smoked paprika
1 cup chicken broth
4 ounce cod fillet (1 cod fillet (thawed, if frozen))
14.5 ounce diced tomatoes (1 can)
1/4 cup small cooked shrimp ((thawed))
1 lemon wedge
1 tbsp fresh dill (chopped)
1/4 cup fresh parsley (chopped)

Steps:

  • Turn the Instant Pot® on. Choose the Sauté program and the Normal setting. Once it has come up to temperature, add the oil.
  • Add the garlic and onions and cook, stirring frequently for 3 minutes, or until they begin to soften. Add the peppers, potato, smoked paprika, chicken broth, and tomatoes.
  • Closed the lid and vent, set to Stew" and the temperature to Normal. Set the timer to 5 minutes.
  • Once the time is up, quick release the pressure according to the manufacturer's directions to release the steam.
  • Open the lid and add the cod fillet, close the lid and the vent, set to Stew and the temperature to Less. Set the timer for 8 minutes.
  • When the time is up, quick release the pressure according to the manufacturer's directions. Open the lid and stir in the shrimp. Close the lid for 5 minutes to allow the shrimp to heat through.
  • Ladle the stew into a large bowl, garnish with herbs and lemon wedge.

  • Turn the Instant Pot on saute and add the oil. After a couple minutes add the onion and saute for 5 minutes to soften.
  • Chop white part only of the fennel bulb. Add it to the Instant Pot along with the garlic and stir for 2 minutes.
  • Turn the pressure cooker off. Add the cup of water to the Instant Pot and stir it to deglaze. Scrape the bottom of it with a wooden spoon to release any bits of onion or fennel that are stuck to the bottom. This decreases the chances of getting an Instant Pot Burn error.
  • Add the tomatoes, bell pepper, clam juice, wine, salt, pepper and optional red pepper flakes to the Instant Pot and stir. This is everything except the fish.
