1 chicken carcass
2 medium onions, roughly chopped
2 medium carrots, roughly chopped
2 stalks celery, leaves included, coarsely chopped
5 cloves garlic, whole
1 tomato, roughly chopped
6 black peppercorns
1 teaspoon apple cider vinegar
½ teaspoon salt, or to taste
water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking pan with aluminum foil.
  • Place chicken carcass, onions, carrots, celery, and garlic on the prepared baking pan.
  • Bake in the preheated oven until carcass is browned, about 1 hour.
  • Remove pan from oven; scrape carcass and roasted vegetables into an electric pressure cooker (such as Instant Pot®). Add tomato, peppercorns, cider vinegar, and salt. Fill pot 2/3 full with water; close and lock the lid. Select the Soup setting according to manufacturer's instructions and set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes.
  • Strain broth through a layer of cheesecloth into another container. Let cool, at least 20 minutes. Cover and refrigerate until a layer of fat solidifies on the surface, 4 hours to overnight. Remove and discard the fat.

2 ½ lb roasted chicken carcass
6 medium carrots, roughly chopped
6 stalks celery, roughly chopped
1 medium yellow onion, roughly chopped
4 cloves garlic, smashed
6 sprigs fresh rosemary
6 sprigs fresh thyme
1 tablespoon whole black peppercorn
2 tablespoons apple cider vinegar
12 cups cold water

Steps:

  • To a 6-quart (5.5 liter) instant pot, add the chicken bones, carrots, celery, onion, garlic, rosemary, thyme, peppercorns, apple cider vinegar, and water, and stir to combine. Set the instant pot to high sauté and bring to a boil. Cook until any impurities foam to the surface, then carefully skim off the top with a large spoon.
  • Place the lid on the pot and turn the venting valve to "sealing." Set to pressure cooking for 60 minutes.
  • Release the pressure from the instant pot by switching the vent to "venting." The hot steam will come out of the top, so make sure your hand is not over the release switch . Wait for the pressure to release and the instant pot to unlock before removing the lid.
  • Strain the broth through a fine-mesh sieve lined with cheesecloth. Let cool completely before storing in an airtight container in the refrigerator for up to 6 days, or in the freezer for up to 6 months.

Once you've made this, you will never go back to canned or boxed again. With the help of your Instant Pot®, you can make this in a fraction of the time it would take to do it in a slow cooker.

1 (2 pound) rotisserie chicken carcass
2 medium carrots, cut into thirds
2 stalks celery, cut into thirds
1 medium onion, cut in half
1 bulb garlic, cut in half
1 tablespoon apple cider vinegar
2 teaspoons salt
1 teaspoon whole black peppercorns
1 large bay leaf
10 cups water

Steps:

  • Set chicken carcass in a multi-functional pressure cooker (such as Instant Pot®). Add carrots, celery, onion, garlic, apple cider vinegar, salt, peppercorns, and bay leaf. Pour in water.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 180 minutes. Allow 30 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 30 minutes. Unlock and remove the lid. Let broth sit for 20 minutes to cool. Pour liquid through a strainer and discard all solids.
  • Refrigerate and use within 3 days or store in freezer-safe containers and use within 6 months.

  • Add your bones to the stainless steel insert of the Instant Pot. On the 6 quart model, they should come up to about 2/3 of the height of the insert. Add the apple cider vinegar and salt, then add enough cold water to just cover the bones. You can add more water if you wish (see notes), but never exceed the “max fill” line on the insert.
  • Place the insert into the body of the Instant Pot and plug it in. Check the rubber ring on the inside of the lid, that the metal cover for the vent and seal is in place and unblocked, then make sure that the weight can move freely in the lid before placing it on top and turning it clockwise to close. Turn the knob on top of the lid to the “sealing” position. Press the “Manual” button on the control panel once and the display will show “30” for a 30 minute cooking time. Press the “-” button to count down to “0”. When the display hits “0”, press it once more so that it shows “120”, which is the max cooking time. In a few seconds, the machine will beep so that you know it has begun to build pressure, which will take about 30 minutes. Once the full 2 hour cooking time has finished, the Instant Pot will alert you with another beep and your broth is done!
  • RELEASE: You can just leave the Instant Pot to slowly release pressure on its own, which will take an hour or so. If you don’t have time for that, you can use the quick release method. I wear a silicone glove on my hand to carefully slide the knob from the sealing position towards the “venting” position, but not all the way. This allows you to release the pressure slowly and makes it less likely that scalding hot liquid will spray out through the vent! Be careful. Gradually open the vent until it is fully open and allow the steam to release, dropping the pressure until it releases and you can open the lid.
  • Carefully (use those mitts again!) transfer the stainless steel insert to a cooling rack or trivet. Use a slotted spoon to remove large pieces of bones to a large bowl or tray, discarding any large pieces of meat you might have. Once all the large pieces have been removed and saved, carefully pour the broth through a fine mesh sieve into a very large bowl with a spout or a gallon sized pitcher to make it easy to pour into quart size mason jars (see notes).
