- Start by washing, peeling, and slicing your potatoes to 1/4 inch thick. I recommend using a mandoline.
- Once potatoes are thinly sliced toss them into the Instant Pot. Add in your diced ham, parsley, garlic, onion, salt, chicken stock, and place lid on the Instant Pot.
- Make sure the valve is set to sealing and do high pressure/manual for 1 minute. Once the timer goes off do a quick release.
- Remove all your potatoes and ham and place them in your baking dish. Make sure to leave all the liquid in the Instant Pot. This will be the base of your creamy cheesy sauce.
- Now you will turn your Instant Pot to saute and add in your heavy cream and shredded Monterey jack cheese. You need to stir constantly so it doesn't burn.
- Once the cheese is fully mixed and melted, go ahead and mix up your cornstarch and tablespoon of cold water. Then pour that in and again continuously stir. This will thicken the sauce.
- When the sauce is thick, pour over the potatoes and ham. Then gently stir the mixture to cover the potatoes and ham.
- Top with 1/2 cup Monterey jack cheese and then place your mixture in a preheated oven and broil on high. Cook anywhere 3-5 minutes until it becomes golden brown on the top.
- Remove from the oven, top with fresh parsley, and serve.

CHEESY HAM AND POTATO SOUP

- Add butter to the Instant Pot. Using the display panel select the SAUTE function.
- When butter melts, add onion to the pot and saute until soft, 3-4 minutes.
- Add broth to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
- Add potatoes, ham, garlic powder and pepper and stir to combine.
- Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
- Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for >8 minutes.
- When the time is up, quick-release the pressure.
- Stir the pot ingredients, then add the sour cream and stir until combined.
- Gradually add cheese, stirring between each addition, until the mixture becomes thick and creamy.

- Bring to a boil, lower heat to medium, and let cook until potatoes are soft (about 15-20 minutes).
- Add salt and pepper to taste.

- Lightly grease 7" - 7.5" cake pan or springform pan with non-stick cooking spray.
- In a medium bowl, stir together hash browns, soup, sour cream, onion, 1 cup of cheese, garlic powder, and ham (if using). Add to prepared pan. Cover with remaining grated cheese.
- Tear off a long piece of aluminum foil, about 18" long. Spray the underside of the foil with cooking spray to prevent sticking. Wrap the hash brown casserole pan in foil across the top and under the bottom of the pan. This is to keep the water from getting into the pan during the pressure cooking cycle.
- Add trivet to Instant Pot pan and pour 1 cup of water into the bottom. Place foil-wrapped pan with cheesy potatoes into a silicon sling or foil sling (see notes below for making a foil sling). Lower the sling with the pan of hash browns into the Instant Pot on the trivet. Secure lid and twist the pressure valve to seal (if needed). Select high pressure for 35 minutes.
- When pressure cycle is over, allow a 5 minute natural release. Then perform a quick release to release the remaining pressure. Using pot holders, lift sling from the Instant Pot and carefully remove the foil from the springform pan.
- If serving without browning (see below), let cheesy hash brown casserole cool for at least 10 minutes if using springform pan to ensure that the casserole stays together and doesn't spread out.
- Using pot holders, carefully drain water from Instant Pot liner. Place the casserole back on the sling. Lower the sling back into the Instant Pot or place in your air fryer.
- Set air fryer to 350º for 5-10 minutes, until golden and bubbly on top. If you don't have an air fryer or air fryer lid, you can broil the hash browns casserole in your oven.
- If using a springform pan, let cheesy hash brown casserole cool for at least 10 minutes to ensure that the casserole stays together and doesn't spread out.
