GARLIC ALFREDO TILAPIA
My version of Ruby Tuesday's New Orleans Seafood, minus the shrimp. I merged a few different recipes and came up with this. It comes pretty close! Three fillets are usually enough for my husband, my toddler, and myself. I serve this with rice and steamed broccoli, to really feel like Ruby Tuesday's recipe!

Steps:
- Preheat an oven to 425 degrees F (220 degrees C).
- Brush the tilapia fillets with oil on both sides, season with Creole seasoning to taste, then place into a 9x13-inch baking dish.
- Bake in the preheated oven until the flesh is no longer translucent, and the fish flakes easily with a fork, about 10 minutes.
- Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the garlic, and cook until the garlic has softened and the aroma has mellowed, about 2 minutes. Stir in the Alfredo sauce and bring to a simmer. Reduce the heat to low, and keep warm until the fish is ready. Pour the sauce over the fish to serve. Sprinkle with additional Creole seasoning if desired.

Steps:
- This recipe requires the "pot in pot" method of pressure cooking. If you do not have a oven-proof container that will fit inside the inner liner of your pressure cooker, create a sling using the trivet and aluminum foil.
- Pour water into the pressure cooker and place the trivet inside. Rest the "pot in pot" or sling on top of the trivet.
- Coat tilapia fillets with cajun seasoning on all sides. Place the fish in the inner pot or sling, stacking the fish if needed.
- Close and set the valve to sealing. Set the pressure cooker to manual or pressure cook on high for 2 minutes. Quick release the pressure. Check the inner temperature of the fish, verifying it has reached a minimum of 145 degrees.
- Carefully remove the tilapia from the pressure cooker and keep it warm. Turn off the pressure cooker and pour out the water. Place the pot back inside the pressure cooker and turn on the saute function.
- When the temperature reaches "hot," melt the butter. Stir in the cream, garlic powder, black pepper, and Parmesan cheese. Whisk until the cheese has melted, about 1 minute. Turn off the pressure cooker. The Alfredo sauce will thicken as it cools. Serve over tilapia.

- Place all herbs and spices in a bowl and mix well. Lightly coat the fish in the spice mixture.
- Add butter to frying pan and heat until sizzling. Add the fish fillets, and saute over moderate heat for 4 minutes on each side, or until browned and cooked.

BAKED CAJUN TILAPIA

- Preheat the oven to 400 degrees F (200 degrees C).
- Combine mayonnaise, cumin, onion powder, Cajun seasoning, garlic powder, and pepper in a small bowl.
- Place tilapia in an ungreased glass baking dish. Spread mayonnaise mixture on top and sprinkle with crushed crackers.
- Bake in the preheated oven until fillets flake easily when tested with a fork, 15 to 20 minutes.

CAJUN TILAPIA WITH SOUTHWESTERN SALSA
Steps:
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Place corn on the preheated grill and cook, turning often, until charred all over, about 10 minutes. Transfer to a plate and remove kernels when cool enough to handle.
- Combine corn kernels, avocado, tomato, black beans, red onion, cilantro, and jalapeno in a large bowl. Squeeze 1 lime wedge over top and season with salt and pepper. Store in the refrigerator until cold, about 30 minutes.
- Meanwhile, season tilapia on both sides with Cajun seasoning.
- Melt butter in a medium stainless steel skillet over medium-high heat; cook until just before butter begins to brown. Add tilapia and cook for 1 to 2 minutes. Flip and cook for 1 more minute. Tilt the skillet and baste with the butter until fish is cooked through and flakes easily with a fork, about 5 more minutes. Remove fish from the skillet.
- Pour chicken broth into the pan and scrape the browned bits of food off the bottom of the pan with a wooden spoon. Whisk in cream. Squeeze in another lime wedge, then taste and adjust for your desired level of tanginess. Bring to a simmer, then remove from the heat.
- Serve fish with cold salsa, adding cream sauce to both, if desired.

- Saute shrimp in a skillet with butter and minced garlic.
- Add Alfredo sauce to the shrimp and reduce heat to simmer.
- Heat up grill to 375 degrees.
- Season fillets on both sides.
- After grill is hot cook fish for 5-7 minutes,turn over once.
- Pour sauce over fish and garnish with parsley.
